Frozen Pork Loin Instant Pot Recipe Tips:

  • You can use a 6 quart or 8 quarts Instant Pot or pressure cooker. Both work great. The main difference is that in the larger sized version you can cook/add more meat.
  • Also, it is important for pressure to release naturally. DO NOT do a quick release of the meat when the cooking time is up. It is best for it to do the release naturally, and wait for it for about 10 minutes.
  • You can skip the Honey Garlic Sauce and simply cook without it. However, the sauce is really complimenting this dish nicely, and we love using it.

How To Make Pulled Pork In The Instant Pot

We are going to start by trimming the pork butt. Since we are not cooking low and slow, like in smoking, the fat will not render all the way down. The last thing you want in your pulled pork is a big chunk of jiggly fat. Gross.

Trim as much of the white fat that you can from the outside of the butt. Then cut the meat down into 3 inch chunks. If you come across more fat or connective tissue within the meat, cut that out as well.

In a small bowl mix together your dry rub seasoning. Coat the pork butt pieces completely with all of the seasoning.

Pour 1 cup water, 1 tbsp Worcestershire sauce, and 1 tbsp apple cider vinegar into the Instant Pot. Place the metal trivet over the liquid. Put the seasoned pork pieces on the trivet.

Close the pot and set to cook for 15 minutes per pound. I had a 4.5 lb pork butt, minus about ½ lb in fat, so I set my Instant Pot to cook for 60 minutes.

Do a natural release for 10 minutes, then quick release the remaining pressure.

Which Cut Of Pork Is Best For Making Pulled Pork

Instant Pot Pork Shoulder Recipe

While you can, in theory, slow roast or braise any cut of pork to make pulled pork, there are some cuts that will result in a more tender and flavorful end product than others.

Ideally, you want to choose a cut of pork that has a lot of fat and connective tissue. These are usually referred to as tough cuts of meat, such as the pork shoulder and pork butt. Both cuts of meat come from the shoulder area of the pig and are quite fatty and full of connective tissue.

Many recipes call for a pork loin, but a pork loin is very lean, with very little marbling, and will dry out and become tough before it is soft enough to shred for pulled pork.

Cooking Pork Shoulder From Frozen In The Instant Pot

If the pork shoulder was quartered before freezing*, the frozen version will cook in the same amount of time as the fresh version. Because it takes longer to come to pressure, it doesnt need additional cooking time even though its frozen.

So, you will cook a frozen, quartered 3-4 pound pork shoulder in the Instant Pot for 45 minutes with at least a 10 minute natural release of the pressure.

*Its impossible to saw a frozen pork shoulder into four pieces, so do this before freezing!

I have done this with all different types of protein. That is why I put together this list of how to cook frozen meat in Instant Pot post. If youve ever freaked out because literally all you have in the house is rock hard proteins in the freezer, this might save the day .

We first shared this Instant Pot frozen pork shoulder recipe because it was such a hit. I do realize that different cuts have slightly different liquids and cook times so I decided to add the butt as well.

How Long Does It Take To Cook A Pork Butt

Perfect Instant Pot Pulled Pork

Traditionally it took 40 minutes per pound in the oven, but not now! If yours is defrosted it will take 65 minutes pressure cooked which is a fraction of the time. Frozen using this same method is closer to 1 hour 45 minutes. So yes it does add some time since it isnt fresh or defrosted but mistakes happen..

The same goes when cooking Instant Pot frozen roast. It does take about 50% longer than if it were not hard but at the end of the day it isnt that much more time.

Normally I might sear the outside with some olive oil on the saute function, it isnt possible when it is in this state though. NO worries though, you wont miss out on any flavor skipping that step. You can still add a dry rub on the outside, it just wont adhere and stick as well.

I confess, this recipe is an all-day project. First, you roast and puree tomato candy. Then pipe elegant Parisian gnocchi from a pastry bag. While youre braising your pork shoulder in the Instant Pot, youll also assemble a bacon-y sweet potato hash and mix up a corn pudding. But when its all on the plate together, youll be glad you spent the time.

Preparing The Pork Roast

Pork roasts generally come tied up or covered with a string netting. This is to keep the meat together in one piece while it cooks. I usually remove all of that, so I can remove the skin and fat cap. Then if the meat isnt in one solid piece, Ill tie it a couple of times with string to keep it together.

I find that pork shoulder is the one that needs to be tied up. Pork leg generally stays in one piece.

In most cases, the roast will come with a large fat cap and the skin left on. I like to remove those when cooking in the Instant Pot. If you were to cook this roast in the oven, it would have time for the fat to render and the skin to crisp up, but that doesnt happen in the Instant Pot.

So grab a large knife and carefully cut the skin and fat away from the meat, trying not to cut into the meat. Its better to leave on a little extra fat, which will help with moistness and flavor.

What Type Of Pork Roast To Use

Pork roast comes in many different forms. You can purchase a pork leg, shoulder, butt, or even a pork tenderloin. However, each of these will cook slightly differently. You might also notice that your pork roast comes with or without skin and fat cap.

I prefer to leave the fat cap on for cooking, and I remove it before eating. This allows for the maximum flavor and keeps the meat moist. Its not a requirement, though so remove it if you wish. If you buy a pork roast without it, no worries. Itll still be good without.

The 2-lb pork roast in my photos is a pork leg. It has less fat marbling than a pork shoulder or butt. It takes 60 minutes to cook in the Instant Pot on high pressure.

A thinner piece pork tenderloin, which is usually long and thin, without any fat or marbling, will cook in 40 minutes.

How Long Should You Cook Pork Shoulder In The Instant Pot

While many online recipes will have you put the entire pork shoulder into the Instant Pot whole, we found that this results in pork that is unevenly cooked. It also takes a really long time to cook it!

Our solution to cooking the perfect pork shoulder in the Instant Pot is this: Cut it into 4 equal pieces first! If its a bone-in pork, do your best to evenly cut the meat around the bone.

Our pulled pork will be getting its flavor start by applying a rub. We use simple ingredients that include brown sugar, onion powder, garlic powder, paprika, ground mustard, salt, pepper and a dash of cayenne. Whisk the dry ingredients together in a large bowl and add the pieces of pork. Use your hands and toss it all together for a couple of minutes. The cut referred to as a butt roast or Boston Butt is actually from the front of a pig. The shoulder area to be exact. The shoulder is divided into two cuts the top rectangular part and the lower triangular part.

Historically, the top rectangular portion was a less popular cut. Butchers in colonial New England took these less popular cuts and packed them in wooden barrels for storage and transportation. The barrels used were called butts. So now you know. Interesting, right?

Now on to an easy and relatively quick recipe for pork roast. I know, this sounds a bit like an oxymoron. Pork shoulder roasts generally benefit from long cooking times. With the introduction of the Instant Pot, an updated electric pressure cooker, that has all changed. In about an hour you can have a fork-tender pork roast on the table.

Instant Pot Frozen Meat

  • Youll need to add a bit more pressure cooking time.
  • Remember to allow pot to do a natural pressure release when done, at least for 15 minutes natural if not the entire time.
  • Make sure your pieces are broken apart. For example if you have a bunch of frozen chicken legs, dont put them in with 4 stuck together. Break them apart so they cook evenly.
  • Then lets move on to an Instant Pot frozen whole chicken! Of course youll want to choose one that doesnt have a bag of inners inside the cavity, but my organic brand doesnt.
