Pressure Cooking : Pork Shoulder / Pork Butt

Pork shoulder is one of the nicest pork cuts: whereas the more familiar pork chops and pork loin can easily end up overcooked, dry, tasteless or tough, not so with pork butt. It has a both a higher fat content and a lot of collagen in it, both of which add flavor and moistness, and become meltingly tender when cooked properly. Its also incredibly versatile: I will buy a whole pork shoulder, grind part of it up into ground pork I cook the rest in my pressure cooker, hand shred it, and use it for a number of different dishes: posole, hash, enchiladas, pea soup, pork tacos, and bean soup. You can also barbecue pork shoulder, or for a quicker weekday BBQ fix, heat some shredded pork in barbecue sauce and serve it on sandwich buns. Pork shoulder really is a versatile, inexpensive cut of meat, one which can be even more economical, if you know what youre doing.

SHOPPING TIP One of the big secrets Ive come to learn in the past couple of years is that meat prices take advantage of consumer ignorance. The same cut of meat is often cut up into different pieces and configurations, called a number of different names, and the prices charged can vary quite substantially. As you can see from this Chart of Pork Cuts and my own chart below, there are a lot of pork cuts that all come from the pork shoulder, but what you pay for them can vary considerably. Knowledge can help you save a lot of money on your weekly meat bill.

Can I Make The Roast Ahead Of Time

Instant Pot Pork Roast

YES! My parents’ restaurants used to do a lot of catering when I was a teenager, and so I did a lot of catering alongside them. What we used to do for turkeys is exactly what you should do for this roast pork if you have a crowd coming over. A day ahead, roast the pork. Follow the instructions above and roast it slowly at 300°F, then let it rest, then do the reverse sear, but then let it rest again. Let it rest until it’s cooled down quite a bit. Then refrigerate it whole until chilled. This makes it really easy to get nice even slices because slicing it cold there are less juices flowing and everything holds together better.

Use an inexpensive electric knife, if you have one, to get nice thin slices. A carving knife works too just not as well and it gets tiring if you’re doing a lot of slicing.

Arrange the slices in a single slightly overlapping layer on a large sheet pan. 40 minutes before you’re serving dinner, dribble water or chicken stock over the pork slices. You want about 1 drop of water for every 3-4 slices. Very little water, really. But the water is going to heat and steam and keep the roast juicy. Next, cover the sheet pan with foil and then put it into the oven at 300°F until just heated through, about 25-30 minutes. Serve.

Why Use Dr Pepper For Pulled Pork

I know it may seem weird but trust me on this one. The meat doesnt taste like pop or soda at all, I promise. The reason I like to use it is it contains great caramelized sugar flavors, and it has acidity which is great for flavor balance and keeps the meat nice and tender. The chipotles I think add a nice kick, and the smokiness is fabulous with anything pulled, like pulled pork, pulled beef, or pulled chicken.

Tender Frozen Pork Shoulder Instant Pot Recipe Is Here How To Cook Frozen Meat In A Pressure Cooker So Its Perfect Every Single Time

Ive been cooking a lot of frozen meat in Instant Pot lately. Why? Because Im forgetful. This frozen pork shoulder Instant Pot came out perfect so I thought Id share that with you too. Just one more easy Instant Pot recipe to add to the list.

I mean I cannot be the only one who realizes at 4 pm that you havent taken anything out to defrost for dinner.

Its happened more than Id like to admit but after making this Instant Pot frozen roast I knew it wouldnt be a worry again.

Lets start with a few basic tips:

For reference, this is the pressure cooker I have and use for all recipe creations.

If youre like us and buy meat in bulk each year you probably have a full freezer too. Ground beef doesnt take long at all but larger pieces of protein take a few days in the fridge to thaw.

I do try to plan meals every Sunday on a white board on my fridge. That does really help when it comes to planning, and what to buy at the store.

BUT with homeschooling teens, working full time, renovating our home and an investment property I do get forgetful. I mean, can you blame me? NO longer is this an issue. I kid you not, nobody even realizes it when its done.

Let The Pork Roast Rest

7) When the roast gets to 180°F, take the roast out of the oven and let it rest for 30-40 minutes. It will be fine for up to an hour. There is no need to cover it during resting time. This is important because this is the only time the roast will rest. Don’t skip this step.

You’re probably wondering if the roast is going to get cold during this long rest. It actually stays warm inside for a long time though. Also, you’re going to be putting the roast back into the oven for a bit and that will reheat it. Finally, it’s my general opinion that once you carve a roast, those slices tend to cool down pretty quickly no matter what you’ve done. The key is to have a lot of really hot gravy to pour over it all. That makes it all warm and delicious!

How To Make Pulled Pork In The Instant Pot

Boston Butt Roast in the instant pot

We are going to start by trimming the pork butt. Since we are not cooking low and slow, like in smoking, the fat will not render all the way down. The last thing you want in your pulled pork is a big chunk of jiggly fat. Gross.

Trim as much of the white fat that you can from the outside of the butt. Then cut the meat down into 3 inch chunks. If you come across more fat or connective tissue within the meat, cut that out as well.

In a small bowl mix together your dry rub seasoning. Coat the pork butt pieces completely with all of the seasoning.

Pour 1 cup water, 1 tbsp Worcestershire sauce, and 1 tbsp apple cider vinegar into the Instant Pot. Place the metal trivet over the liquid. Put the seasoned pork pieces on the trivet.

Close the pot and set to cook for 15 minutes per pound. I had a 4.5 lb pork butt, minus about ½ lb in fat, so I set my Instant Pot to cook for 60 minutes.

Do a natural release for 10 minutes, then quick release the remaining pressure.

There will be some browned bits on the bottom of the pot from searing the pork. You need to get that up by adding liquid to the pot. Dont do this while saute mode is still on. Its very hot and the liquid will steam up immediately. It can be dangerous to stand over the IP when its that hot.

Add the broth and use a whisk to scrape the bits up. This adds great flavor to the broth, which will be used later to make the gravy.

Then put the trivet in the pot. Place the roast on top of the trivet. This is to keep the roast whole and to steam it rather than boil it. If you want, you can leave out the trivet. I just think the roast looks nicer when cooked on the trivet.

Close the Instant Pot and set it to pressure cook . The length of time you need to cook the pork for will vary depending on the size of your roast.

It is recommended that you cook a boneless pork roast for 15 minutes per pound in the Instant Pot. For a 3 lb roast, that would be 45 minutes. Cooking it this long will lead to a sliceable roast, not a fork tender roast.

    PRO TIPS

If you want to slice the roast, dont cook for longer than 45 minutes or it can become dry. If youd rather have a fork tender roast that falls apart like shredded pork, you need to cook it for much longer, like 60 to 70 minutes. If shredded pork is what youre after, Id also recommend placing the roast directly into the pot, not on top of the trivet.

If its under, you can turn it back on for 5 or 10 minutes.

    Start With A Good Rub

Our pulled pork will be getting its flavor start by applying a rub. We use simple ingredients that include brown sugar, onion powder, garlic powder, paprika, ground mustard, salt, pepper and a dash of cayenne. Whisk the dry ingredients together in a large bowl and add the pieces of pork. Use your hands and toss it all together for a couple of minutes. Make sure that seasoning mixture is well incorporated into the meat.

Pressure cook the pork for 60 minutes on high pressure. If you are using pork tenderloin, cook it for 45 minutes on high pressure. When the cook time ends, let the Instant Pot sit for 15 minutes to naturally release most of the pressure. A natural release makes the meat more tender, and the pork will continue to cook during this time.

After 15 minutes, carefully turn the steam valve to venting and allow the rest of the steam and pressure to escape. Carefully open the lid of your Instant Pot and shred the pork. If desired, you can thicken the sauce with a cornstarch slurry. See the full recipe with ingredients and instructions in the recipe card at the end of this post.
