How to Cook Instant Pot Beef Stew | Also known as No Peek Stew

First, season the beef stew meat with salt and pepper. Sauté in the Instant Pot with some sesame oil until browned on all sides.NOTE: Dont add the sesame oil until the pot is already hot or it will burn and have a bitter flavor.

Add the remaining ingredients and cook on High for 35 minutes.

Do a natural pressure release, then remove the lid and stir everything well.

Serve with green onion and sesame seeds sprinkled on top.

What if I dont have an Instant Pot?

Since Instant Pot Korean beef is basically meat and sauce ingredients, it can be adapted to be cooked on a stovetop instead.

In this instance, youll want to replace the stew meat cubes with thinner slices of beef. Cut these yourself from a rib-eye, sirloin, or flank steak. You can also purchase beef that has been pre-sliced for stir fry.

To make the meal on a stovetop:

  • Heat a neutral cooking oil in a large pan over medium-high heat.
  • Mix together the sauce ingredients, with a few adjustments. Replace the broth with 2 tablespoons of rice vinegar. Also, add 2 tablespoons each of water and cornstarch to thicken the sauce.
  • Season the beef strips with salt and pepper, then brown in the pan on both sides.
  • Pour the sauce over the beef and let simmer for an additional minute, stirring to coat the meat.
  • Serve with your side of choice. Make sure to spoon extra sauce over the meat!
  • Should I Use Flour Or Cornstarch To Thicken Beef Stew

    You can use either flour or cornstarch in this recipe! Whichever way you choose to go, be sure to mix it with cold water first to avoid clumps. And ALWAYS add the thickener after pressure cooking.

    Since I grew up eating stew thickened with flour, thats how I wrote this recipe. Stir together the flour and cold water into a slurry. Stir the flour mixture until smooth, add a little of the warm broth from the stew to the flour slurry, and stir some more until smooth. Then pour this whole mixture back into the pressure cooking, again stirring constantly.

    However, if you prefer cornstarch thickeners, go for it! Start with 2 tablespoons cornstarch mixed with 2 tablespoons cold water and add to the cooking pot. Select Saute and simmer until the stew thickens.

    Remember, the stew will thicken as it cools, so you dont want to overdo it.

    How To Cook Stew With Frozen Beef

    To make Pressure Cooker Beef Stew with frozen beef, youll need to add at least 5 minutes to the High Pressure cook time.

    Ideally, youll want your cubed beef to be frozen flat and evenly. If its frozen in a big clump, its much, much harder to ensure the outside and insides are cooked evenly, and youll need to add more minutes to the cook time.

    Since frozen beef doesnt brown as evenly, I just skip that part.

    After pressure cooking, you can use an instant-read thermometer and test a few pieces to ensure theyre above 160°F. If not, return the lid and cook at High Pressure a few minutes more.

    Do not add the veggies until AFTER the meat is cooked through.

    The meat and stew setting is best for cooking large or tough cuts of meat at high pressure. This button can be used for cooking meat pieces in a little broth or stews that contain meat in them. Below is how to use the Meat/Stew setting on Instant Pot.

    • Turn the Instant Pot on, it will say OFF to indicate the Stand-By mode. Add meat, seasonings and liquids to the pot. Secure and lock the lid. Select the Meat/Stew button. The default Instant Pot meat setting is pre-programmed to set the pot to cook at High pressure for 35 minutes, which is suitable for most dishes like beef stew or pulled pork. If you press the Meat/Stew button again, you can adjust the mode from Normal to Less or More .
    • Less mode 20 minutes at High pressure for soft texture meat great for diced steak, pork or lamb, pork or beef ribs, ground meat like when making taco meat or Bolognese sauce, and most stews that use diced or ground meat.
    • Normal mode 35 minutes at High pressure for very tender meat texture great for slightly larger pieces of meat and for stews that use tougher cuts of meat like Beef Bourguignon.
    • More mode 45 minutes at High pressure for fall-off-the-bone texture great for pork shoulder, beef pot roast or lamb roast.

    If desired, use the / + buttons to further customize the time. The cooking time may be adjusted at any time during pressure cooking.

    How Do You Thicken Beef Stew

    There are a few ways to thicken a stew. I chose to use a slurry made from some of the broth in the stew, and corn starch. You whisk it together, then add it back into the stew bowl, and let it cook for a few more minutes to cook down and thicken. You have to give it some time to thicken.

    Another option is to add additional potatoes, and then scoop some of them out, and blend them up into a paste, then add them back in and let them act as a natural thickener. This is a great option if you dont or cant use corn starch as a thickener.

    How To Cook Frozen Stew Meat

    THIS is seriously the only way you should do it. Using high pressure for about an hour you too can get the tenderest pieces of beef. This may be a really cheap Instant Pot recipe but nobody would guess it. We have made several Instant Pot stew meat recipes in the past but this turned out surprisingly well.

    Yogurt cups are a convenient way to portion out your yogurt into individual or smaller servings. After adding the starter culture to the pasteurized or warm milk, carefully pour the milk into your yogurt cups and seal them tightly.     • Cut your carrots and potatoes into large pieces so that they dont get mushy in the stew after cooking.
    • I like to use halved baby yellow potatoes. You can also use larger Russet or Yukon Gold potatoes that have been cut into 1 1/2 inch cubes.
    • This recipe can be stored in the refrigerator for up to 3 days, or in the freezer for up to 2 months.
    • Want to amp up your beef stew to a new level? Sprinkle some cooked, crumbled bacon over the top before serving.
    • You can add other vegetables to your stew such as a can of tomatoes or halved fresh mushrooms.

    Can I Make Beef Stew In Advance

    Yes! Instant Pot Beef Stew is a great dish to make in advance. Just make from start to finish . Cool completely and store in an airtight container. When youre ready to serve, pour the beef stew in a pot and bring to a boil. Add in peas. Cook until thawed.

    You can also heat the soup individually in microwave-safe bowls. Add the peas before you microwave.

    How To Make Instant Pot Beef Stew

    Start by seasoning the meat with salt and pepper. Then add the butter to your Instant Pot, press the saute button, let the butter melt, and add the meat. Brown the meat all the way around. When its done browning, plate it.

    Then add the carrots, onions, and seasonings to the Instant Pot. Saute until the onion is softened, about 3-4 minutes remember to keep on mixing, so it doesnt stick.

    Then mix in the flour, and coat the vegetables.

    Then add the beef broth and potatoes and add back the meat. NOTE: This is important

    Set the manual high pressure for 35 minutes. When the timer beeps, do a natural release.

    Then when all of the pressure is released, take your lid off and then mix and ladle and serve.

    Ingredient Notes And Substitutions

    • Broth beef works best, but chicken or vegetable will work too
    • Coconut aminos this is what makes the recipe gluten-free. If you dont have gluten allergies or sensitivities, you can use low sodium soy sauce instead. Tamari is also a soy sauce alternative that is made by fermenting soybeans and is usually gluten-free.
    • Honey brown sugar can be substituted in equal amounts
    • Crushed red pepper flakes use Sriracha or Gochujang instead to make this extra spicy

    What can I use instead of beef stew meat?

    Beef stew meat is simply a combination of leftover cuts of beef that is already trimmed and sliced into bite-size pieces.

    Using stew meat in this Instant Pot beef recipe gives you a tender bite thats full of flavor. Thinner slices, like what you would use for stir fry, may come out tough and dry.

    If you cant find it pre-packaged at the store, you can ask the butcher to prepare some for you or you can make your own at home. Alternatively, if you dont have any beef stew meat, you can use trimmed chuck roast or top sirloin cut instead.

    How to cut your own beef stew meat:

  • Choose a beef chuck roast and use a long, sharp knife to trim off any hard fat.
  • Cut the roast into 1-inch slices, like you would a loaf of bread.
  • Next, cut each slice into 1-inch strips.
  • Then cut each strip into 1-inch cubes.

    • Deglaze the pot and scrape up every brown bit. Deglazing both adds richness to the stew and ensures that you dont receive the dreaded Instant Pot burn warning.

    What Potatoes Should I Use

    I love to use little new potatoes because they keep their shape and have a smooth texture when cooked. Even better, theres no need to peel them and theres minimal chopping!

    However, you can use russet potatoes without any change to the cook time. Substitute about 2 cups of chopped russet potatoes in this recipe.

    So How Do Instant Pot Settings Work

    Each Instant Pot setting button is essentially a SMART PROGRAM option. Most smart programs, or buttons, simply set the pot to HIGH or LOW pressure for a specific period of time most closely aligned with the food it is meant to cook. For example, the default SOUP button sets the pressure cooker for 30 minutes at HIGH pressure, which you could use to cook any food that requires that much time and pressure.

    If you press each SMART setting button more than once, it will toggle between Normal, Less or More options, which gives you more control of time, temperature or default pressure. For example, the RICE button can be set to Less or More depending on how soft or firm you like your rice or the type of rice you might be cooking.

    Some buttons dont use the pressurizing function of the Instant Pot. For example, Slow Cook and Sauté settings use the heating element that sits underneath the inner pot. They are programmed for heat level and time.

    To keep it super simple, it is possible to use the Instant Pot for all recipes using just a few important buttons. With the Pressure Cook or Manual buttons in addition to the Pressure Level and and buttons, you can control the time and pressure level which are otherwise preset for the rest of the buttons. This will work for any recipe that requires pressure. For non-pressure cooking, the Sauté, Slow Cook and Yogurt buttons help you accomplish a similarly custom cooking setting.
