I am a big fan of desserts that have a salty component to them. I find that salt brings out the sweetness and flavor in desserts and makes it even more delicious. Mango sticky rice is such an amazing example of that perfect salty sweet combination. Sweet, sticky rice and juicy mangos, drizzled with a salty coconut sauce, creates an irresistible blend of sweet and salty, chewy and creamy.

In Thailand, traditionally the sauce that is served as a topping for mango sticky rice is salty and has no sugar added. This helps cut through the richness and sweetness of the sticky rice. However, I find that in the US, whenever I’ve ordered Mango sticky rice at restaurants they drizzle the sticky rice with a sweet sauce instead.

My recipe is very close to the traditional recipe and I’ve included instructions to make the salty coconut pouring sauce. If you aren’t a fan of that salty and sweet combination, you might not prefer the salty coconut topping sauce. If that’s the case, add a couple of tablespoons of sugar while making the pouring sauce and either reduce the salt by half or omit it entirely. This will result in a sweet pouring sauce similar to the one served in restaurants in the US.

First, make sure to rinse your rice like I mentioned above. If you didnt see it up there, scroll back up for the method I use.

Put the rice and chicken broth into the Instant Pot.

Put the cover on.

Cook on high pressure for 4 minutes.

Then let natural release for 12 minutes.

Quick release any steam that might be left.

Open the Instant Pot and fluff your delicious rice.

  • Stove-top: Soak your rice and then place the rice in the colander. Add enough water in the pot to just touch the bottom of the colander. Bring the water to a simmer and cover it and steam it for about 10 minutes. You must make sure to flip the rice halfway through, like a giant pancake.
  • Rice Cooker: Place your rice and water in the rice cooker to let it soak there for 40 minutes to 4 hours. Then you can turn your rice cooker on cook until its done.

How To Make Sticky Rice On The Stovetop

  • Soak rice in water for 4 to 10 hours.
  • Place a colander inside a Dutch oven or large pot with a lid.
  • Add water so that it reaches to just below the bottom of the colander.
  • Drain the soaked rice into the colander and put it inside the Dutch oven.
  • Bring water to a simmer and cover with a lid.
  • Steam rice, covered, for 10 minutes.
  • Using a large spatula, flip the entire portion of rice like its a pancake.
  • Put the lid back on and continue steaming the rice for another 10 to 20 minutes, checking it for doneness every few minutes towards the end of the cooking time.
  • Serve warm, within 10 to 15 minutes of preparing it.
  • How To Make Sticky Rice In The Instant Pot / Pressure Cooker

  • Soak rice in water for 4 to 10 hours.
  • Add 1 cup water to the bowl of the Instant Pot / pressure cooker.
  • Using a colander that will fit inside the bowl of the Instant Pot , drain the soaked rice.
  • Place the colander with the rice into the bowl of the Instant Pot.
  • Close and lock the lid.
  • Set the pressure cook / manual setting on high for 12 minutes.
  • Allow the pressure to release naturally for 12 minutes and then manually release.
  • Unlock the lid but leave it on, slightly ajar, until ready to serve. Serve rice warm, within 15 minutes of preparing it.

  • Rinse the glutinous rice until the water runs clear.
  • Add 1 cup of glutinous rice and cup of cold water in a stainless steel bowl.
  • Add the stainless steel bowl on top on top of a steamer.
  • Add 1 cup of water into the bottom of the pressure cooker.
  • Close the pressure cooker lid and seal the venting knob.
  • Set the pressure cooker to high pressure for 12 minutes.
  • Allow the pressure cooker to natural release.
  • Open lid carefully, fluff the rice and serve!

    INSTANT POT CHINESE STICKY RICE | Loh Mai Fan

    There are two major things that contribute to the perfect sticky rice consistency: The type of rice, and the soaking process.

    • The right type of rice will be labeled as sweet rice or glutinous rice.
    • You should soak your rice anywhere from 4-10 hours. The longer you soak the rice the softer the texture will be!

    PREP. Measure rice and place in a medium bowl or a large glass measuring cup. Add water about 1 inch above the rice. Let soak for at least 4 hours.

    ADD. Add 1 cup of cold water into the Instant Pot. Place a fine colander in. . Drain rice and pour rice in the colander spread into an even layer.

    COOK. Place lid on and lock. Check to ensure the valve is set to sealing. Turn Instant Pot on MANUAL mode for 12 minutes. Once fully cooked, release pressure manually by carefully switching the valve to venting position. Once the float valve pin drops, carefully remove the lid.

    SERVE. Serve immediately.
