Thicken & Season Spaghetti In Instant Pot

Dont worry if your Instant Pot Spaghetti looks liquidy & thin when you open the lid!

*Note: we purposely cook the spaghetti to about 85% 90% cooked at this point.

Now, use the Saute More function to bring the content back to a simmer.

With a wooden spoon, break down the tomatoes, then stir to cook the spaghetti and thicken the sauce. Itll take a few minutes to thicken the sauce as the spaghetti releases its starch.

Dont forget to taste and season with more salt. Youll need roughly 3 4 large pinches of salt to bring out all the flavors.

Turn off the heat .

One of the most common ways to make keto style spaghetti is to simply swap out the spaghetti noodles for spiralized veggie noodles. The two most popular choices for low carb veggie spaghetti are typically either squash or zucchini.

The steps for cooking pasta in the electric pressure cooker couldn’t be easier! Simply:

  • Add liquid and pasta: Add water, pasta, salt and oil. If cooking short pasta , give it a stir. If cooking spaghetti or other noodle shaped pasta, break in half and lay in two batches in a criss-cross pattern. Do not stir.

Instant Pot Spaghetti Technique

Using different techniques will result in different textures of cooked pasta from the Instant Pot.

This is an important point, I want to talk to you about in more detail.

The manner in which you add your dried spaghetti to the pot, will make a difference to how it cooks.

I have taken the photos below to illustrate what I mean.

If you have a look in the photo on the left above, you will see that the spaghetti noodles are laid flat in both directions, reasonably close together.

If you have a look at the 2nd photo, you will see that the spaghetti noodles are criss crossed in diagonal directions.

The biggest thing to understand about the above is that the level of pasta in Image 1 has less depth than Image 2. This is important as it means that less water is needed to cook the spaghetti if it is added to the Instant Pot like the 1st image than the 2nd.

I like my Spaghetti with a bit of bite to it, this is perfect for recipes such as my Garlic Spaghetti. As this recipe is all about minimal ingredients and basic flavour combinations, we need to get the texture spot on.

Soft mushy over cooked spaghetti doesn’t cut it.

The technique of adding the spaghetti to the Instant Pot in image 2 results in non al dente soft spaghetti that has no bite to it.

You can use either method but know up front what your options are and how it will effect the end result.

Saute Onion Garlic Seasoning And Tomato Paste

Next, add 1 cup diced onions along with 1 tablespoon minced garlic, saute until the onions are translucent, about 2 minutes.

Add 2 teaspoons each of dried oregano and dried basil along with 1 teaspoon of salt, 1 teaspoon of sugar, 1/4 teaspoon dried thyme, 1/4 teaspoon red pepper flakes, and 1/2 tsp ground black pepper. Also, add 2 tablespoons of tomato paste. Cook for another minute.

Add 1/2 cup of broth and deglaze the pot, scraping off any browned bits stuck at the bottom of the pot. Do not skip this step, as you will get a BURN error if the browned bits are left at the bottom of the pot.

The biggest challenge is preventing the cooked noodles from becoming too clumped together. Since there is no stirring once the lid is on, some sticking will occur, like cooking pasta on the stovetop. The stickiness is due to the starches that release as the flour hydrates.

Dont worry. I have a solution! Spaghetti noodles are long, so break them in half. Then add ¼ of the pasta at a time, creating a stacked crosshatch pattern. The result is less sticking, which makes it easier to stir the noodles and sauce together.

My Spaghetti Keeps Sticking To The Side Of My Instant Pot

The easiest way to avoid this is to make sure that you break your spaghetti noodles in half before adding them into the instant pot , while also making sure to take a bit of extra time to press your noodles down into the water before sealing your instant pot.

Youre also going to want to resist the urge to give your spaghetti a stir before you cook the noodles as well. This also applies if youre planning on cooking a spaghetti sauce to go along with the noodles. Youll want to fully cook the sauce first, and then add in your pasta noodles afterwards, without stirring them.

Once the timer is done, wait 1 minute and then switch the valve to venting to release the pressure. Open the lid away from your face. There will be leftover steam in the pot, so you need to be careful. At first, it will look like there is too much liquid in the dish. You may think you just made spaghetti soup! Dont panic! The amount of liquid prevented the burn and made sure the pasta is perfectly cooked. The spaghetti will look like in the image below.

All you need to do now is stir it well and let it sit for 5 to 10 minutes. Perfect time to set up the table and whip up a simple salad or breadsticks. After that, when the excess liquid evaporates and some absorbs into the dish, you will have spaghetti that looks like the image below, simply perfect!

How To Calculate Cook Time For Pasta In The Instant Pot

Cook time varies depending on the type/shape of pasta. So I use a general rule of thumb to determine the cook time.

I follow this simple formula for calculating the cook time: Take the recommended standard cook time printed on the box and divide that in half. Then, subtract one minute.

The resulting number is your cook time for high pressure in the Instant Pot!

For example, if the box says to boil the pasta for 10 minutes, then divide that in half to get 5 minutes. Subtract one minute and you get 4 minutes, which is the cook time for that pasta at high pressure.

If your box gives you an odd number for the suggested cook time, just round down to the nearest even number. So if the cook time is 11 minutes, round down to 10 and go from there.

I realize everyones preference for how firm or tender pasta should be is a little different, so if for some reason your pasta doesnt seem tender enough for your liking, just cook it for one more minute.

Likewise, if you prefer a firmer pasta, subtract one more minute from the cook time.
