Thicken & Season Spaghetti In Instant Pot

Dont worry if your Instant Pot Spaghetti looks liquidy & thin when you open the lid!

*Note: we purposely cook the spaghetti to about 85% 90% cooked at this point.

Now, use the Saute More function to bring the content back to a simmer.

With a wooden spoon, break down the tomatoes, then stir to cook the spaghetti and thicken the sauce. Itll take a few minutes to thicken the sauce as the spaghetti releases its starch.

Dont forget to taste and season with more salt. Youll need roughly 3 4 large pinches of salt to bring out all the flavors.

Turn off the heat .

Finally, garnish the deliciously al dente spaghetti with freshly grated Parmesan cheese, then serve!

Saute The Meat And Aromatics

The advantage of using an electric multi-cooker is that it has a built-in saute function. Add olive oil and cook the beef and pork, breaking it down into smaller chunks. I let it heat until most of the moisture from the juices evaporates, then give it a few extra minutes to lightly brown. This process develops more flavor on the surface.

Add the chopped onions, minced garlic, dried Italian seasonings before the wet ingredients to release fat-soluble flavor compounds for a more pungent taste. Youll notice some stuck-on golden bits on the bottom of the vessel. To prevent it from burning, deglaze with red wine and water. Scraping the bottom releases those tasty juices into the sauce.

Can I Double Instant Pot Spaghetti Recipe

Yes, you can definitely double the recipe! Just make sure you layer the ingredients properly, and youll probably want to make sure youre using at least an 8 quart size pressure cooker to avoid over-filling. The pot may take a little longer to reach pressure, but still go with the 10 minute HIGH pressure and you should be golden!

How To Cook Pasta In Instant Pot

Instant Pot Spaghetti Recipe

Cooking plain pasta in the Instant Pot is as simple as adding your dry pasta, water, and kosher salt to the pot, pushing a button, and then walking away until its done!

NO stirring so the pasta doesnt stick, NO watching to make sure it doesnt boil over, and NO constantly checking to see if its perfectly al dente yet In fact, you dont even have to drain the pasta when its done, since most of the water is absorbed during the pressure cooking process.

1| Add the dry pasta, water, and kosher salt to the Instant Pot insert. Dont stir the ingredients. Just place the lid on top and turn the steam release knob to sealing.

2| Use the Manual Pressure function to cook the pasta on high pressure for 5 minutes. The Instant Pot will take about 11-12 minutes to come to pressure before the actual cooking time begins.

3| When the cook time is up, perform a quick release. The pasta is ready to serve!

Is This Spaghetti Noodle Recipe Keto Friendly

Unfortunately, because youll be using traditional pasta noodles to make this spaghetti, this recipe is definitely not keto friendly .

Theres no need to fret though as you can still definitely make ridiculously good keto friendly spaghetti with your instant pot. Youll just need to get a little bit creative with your ingredient choices.

One of the most common ways to make keto style spaghetti is to simply swap out the spaghetti noodles for spiralized veggie noodles. The two most popular choices for low carb veggie spaghetti are typically either squash or zucchini.

By Step Instructions For Instant Pot Pasta

The steps for cooking pasta in the electric pressure cooker couldn’t be easier! Simply:

  • Add liquid and pasta: Add water, pasta, salt and oil. If cooking short pasta , give it a stir. If cooking spaghetti or other noodle shaped pasta, break in half and lay in two batches in a criss-cross pattern. Do not stir.
  • Set cooking time: Close the lid on sealing position. Using the rule of thumb, calculate the cooking time for your specific pasta shape. Set Pressure Cook/Manual for the calculated pasta time.
  • Perform an intermittent quick release: After the cooking time is done, use the intermittent pressure release technique and release all the pressure. Open the lid when the pin drops.
  • Rest, sauce and serve: Stir the pasta and separate any clumps using two forks. Let the pasta rest for 3 to 5 minutes as this lets it absorb the leftover liquid. For a simple and satisfying meal, stir in your favorite sauce, such as spaghetti sauce or pesto.

Instant Pot Spaghetti Technique

Using different techniques will result in different textures of cooked pasta from the Instant Pot.

This is an important point, I want to talk to you about in more detail.

The manner in which you add your dried spaghetti to the pot, will make a difference to how it cooks.

I have taken the photos below to illustrate what I mean.

If you have a look in the photo on the left above, you will see that the spaghetti noodles are laid flat in both directions, reasonably close together.

If you have a look at the 2nd photo, you will see that the spaghetti noodles are criss crossed in diagonal directions.

The biggest thing to understand about the above is that the level of pasta in Image 1 has less depth than Image 2. This is important as it means that less water is needed to cook the spaghetti if it is added to the Instant Pot like the 1st image than the 2nd.

I like my Spaghetti with a bit of bite to it, this is perfect for recipes such as my Garlic Spaghetti. As this recipe is all about minimal ingredients and basic flavour combinations, we need to get the texture spot on.

Soft mushy over cooked spaghetti doesn’t cut it.

The technique of adding the spaghetti to the Instant Pot in image 2 results in non al dente soft spaghetti that has no bite to it.

You can use either method but know up front what your options are and how it will effect the end result.

Saute Onion Garlic Seasoning And Tomato Paste

Next, add 1 cup diced onions along with 1 tablespoon minced garlic, saute until the onions are translucent, about 2 minutes.

Add 2 teaspoons each of dried oregano and dried basil along with 1 teaspoon of salt, 1 teaspoon of sugar, 1/4 teaspoon dried thyme, 1/4 teaspoon red pepper flakes, and 1/2 tsp ground black pepper. Also, add 2 tablespoons of tomato paste. Cook for another minute.

Add 1/2 cup of broth and deglaze the pot, scraping off any browned bits stuck at the bottom of the pot. Do not skip this step, as you will get a BURN error if the browned bits are left at the bottom of the pot.

Preventing The Pasta From Sticking

The biggest challenge is preventing the cooked noodles from becoming too clumped together. Since there is no stirring once the lid is on, some sticking will occur, like cooking pasta on the stovetop. The stickiness is due to the starches that release as the flour hydrates.

Dont worry. I have a solution! Spaghetti noodles are long, so break them in half. Then add ¼ of the pasta at a time, creating a stacked crosshatch pattern. The result is less sticking, which makes it easier to stir the noodles and sauce together.

My Spaghetti Keeps Sticking To The Side Of My Instant Pot

The easiest way to avoid this is to make sure that you break your spaghetti noodles in half before adding them into the instant pot , while also making sure to take a bit of extra time to press your noodles down into the water before sealing your instant pot.

Youre also going to want to resist the urge to give your spaghetti a stir before you cook the noodles as well. This also applies if youre planning on cooking a spaghetti sauce to go along with the noodles. Youll want to fully cook the sauce first, and then add in your pasta noodles afterwards, without stirring them.

How Long Does It Take To Cook Spaghetti In The Instant Pot

{Instant Pot} Pressure Cooker Spaghetti

This Instant Pot Spaghetti cooks in 7 minutes. Since the meat is browned, all you need to do is cook the pasta. Thats why the time is so short. You should also note that it takes about 10 to 12 minutes for the IP to come to pressure.

Once the timer is done, wait 1 minute and then switch the valve to venting to release the pressure. Open the lid away from your face. There will be leftover steam in the pot, so you need to be careful. At first, it will look like there is too much liquid in the dish. You may think you just made spaghetti soup! Dont panic! The amount of liquid prevented the burn and made sure the pasta is perfectly cooked. The spaghetti will look like in the image below.

All you need to do now is stir it well and let it sit for 5 to 10 minutes. Perfect time to set up the table and whip up a simple salad or breadsticks. After that, when the excess liquid evaporates and some absorbs into the dish, you will have spaghetti that looks like the image below, simply perfect!

How To Calculate Cook Time For Pasta In The Instant Pot

Cook time varies depending on the type/shape of pasta. So I use a general rule of thumb to determine the cook time.

I follow this simple formula for calculating the cook time: Take the recommended standard cook time printed on the box and divide that in half. Then, subtract one minute.

The resulting number is your cook time for high pressure in the Instant Pot!

For example, if the box says to boil the pasta for 10 minutes, then divide that in half to get 5 minutes. Subtract one minute and you get 4 minutes, which is the cook time for that pasta at high pressure.

If your box gives you an odd number for the suggested cook time, just round down to the nearest even number. So if the cook time is 11 minutes, round down to 10 and go from there.

I realize everyones preference for how firm or tender pasta should be is a little different, so if for some reason your pasta doesnt seem tender enough for your liking, just cook it for one more minute.

Likewise, if you prefer a firmer pasta, subtract one more minute from the cook time.

Easy peasy!

The Instant Pot Pasta Water Ratio

I typically make a pound of pasta at a time, so the ratio I use is a pound of dry pasta, 4 cups of water, and 2 teaspoons of kosher salt. You can easily scale this up to a maximum of 2 pounds of dry pasta in a 6-qt. Instant Pot or down to as little as 4 ounces, depending on your needs. Just adjust the water and kosher salt accordingly.

See the table below for a quick pasta/water ratio reference:

4 teaspoons

Make Ahead And Freezing Instructions:

To Make Ahead: The meat can be browned up to 2 days in advance.

To Freeze: Remove as much air as possible to prevent freezer burn. Store in a freezer safe container or bag for up to 3 months. Let thaw overnight in the fridge before reheating. For best results, cook the spaghetti for only 3 minutes at high pressure, so the noodles dont over cook when reheated, after freezing.

Tips For Perfect Pressure Cooker Spaghetti

When it comes to cooking pasta in the Instant Pot, the order that you add in the ingredients is important. If youre making this with a meat sauce, youll saute the ground beef first, then youll add the noodles, water, and sauce on top of that.

For a vegetarian spaghetti, skip the meat and start with the dry noodles right away. Cover them with water, then pour the marinara sauce over the top, without stirring. You dont want tomato products to touch the bottom of your Instant Pot, or it could trigger the burn error.

If you follow these directions closely, you should end up with perfect spaghetti! Keep in mind that this recipe uses one pound of pasta and one jar of sauce, but if you want more tomato flavor, I sometimes add a few spoonfuls of tomato paste and extra seasonings to boost the flavor.

Before we go into this, we have a caveat: What weve learned over many years of developing recipes in the Instant Pot is that despite this appliance claiming it works the same across the board, weve found that not to be true. So while weve had great success using this method of cooking nearly any type of dried pasta, you may need to tweak our recipe a bit based on your specific Instant Pot or other brand of pressure cooker.

Weve tried this recipe with three different types and sizes of Instant Pots with success, but be open to the idea that you may need to slightly tweak this recipe to get your exact desired results for whatever recipe you are using. However, were sharing this recipe because weve found it infinitely useful for making pasta, and think you will too.
