How to Cook a Pork Roast in the Instant Pot

Times may vary slightly but I always cook 1lb tenderloins for 5 minutes on high pressure and then naturally release the heat for another 10. Before serving make sure the internal temperature of the pork loin is at 145°F at its thickest point then allow it to rest for 5 minutes before slicing and serving.

Pressure Cook Only 3 Minutes

After weve deglazed the bottom of the pot, we add some Worcestershire sauce and liquid smoke to the chicken broth. Then we place the pork tenderloin right into the liquid, secure the lid, make sure vent is set to sealing, and pressure cook on high pressure for only 3 minutes. Yes, just 3 minutes. Then let the pressure naturally release. The NPR will take about 12-15 minutes.

When cooking in complete and pressure has naturally released, remove the pork and set on a plate for 5 minutes before slicing.

How To Make This Pork Loin Roast Your Own:

  • Vary the sauce ingredients. Want to make a honey garlic sauce? Substitute honey for the brown sugar and add minced garlic or increase the amount of garlic powder. Experiment with your favorite seasonings. Soy sauce, rice vinegar, and ginger would be good.
  • Use your favorite rub on the pork before searing it. Try this easy spice rub for pork. Or make a BBQ flavored rub and serve the pork with BBQ sauce on the side.

Cooking The Pork Roast

There will be some browned bits on the bottom of the pot from searing the pork. You need to get that up by adding liquid to the pot. Dont do this while saute mode is still on. Its very hot and the liquid will steam up immediately. It can be dangerous to stand over the IP when its that hot.

Add the broth and use a whisk to scrape the bits up. This adds great flavor to the broth, which will be used later to make the gravy.

Then put the trivet in the pot. Place the roast on top of the trivet. This is to keep the roast whole and to steam it rather than boil it. If you want, you can leave out the trivet. I just think the roast looks nicer when cooked on the trivet.

Close the Instant Pot and set it to pressure cook . The length of time you need to cook the pork for will vary depending on the size of your roast.

It is recommended that you cook a boneless pork roast for 15 minutes per pound in the Instant Pot. For a 3 lb roast, that would be 45 minutes. Cooking it this long will lead to a sliceable roast, not a fork tender roast.

PRO TIPS

If you want to slice the roast, dont cook for longer than 45 minutes or it can become dry. If youd rather have a fork tender roast that falls apart like shredded pork, you need to cook it for much longer, like 60 to 70 minutes. If shredded pork is what youre after, Id also recommend placing the roast directly into the pot, not on top of the trivet.

If its under, you can turn it back on for 5 or 10 minutes.

How To Store Roast Pork

I like to carve the entire roast and store it in the fridge in slices. The slices are easier to grab to use than having to haul out the whole roast and cut it every time. Put the slices in a sealed container. Theyll keep for 3-4 days in the fridge. Or you can put them in a freezer bag and freeze them for a month.

What Is Pork Roast

A pork roast is actually part of the whole bone-in pork butt or shoulder, also known as a Boston Butt. It is cut down and deboned into a roast. It comes from the upper part of the shoulder, from the front leg.

When you are looking for it in the grocery store it will be called aPork Butt Roast or Boneless Shoulder Pork Butt Roast and it will generally be between 2-4 lbs. They usually come tied in a netting, as you can see in the photo above. I like to remove the netting and tie it for cooking .

The cut referred to as a butt roast or Boston Butt is actually from the front of a pig. The shoulder area to be exact. The shoulder is divided into two cuts the top rectangular part and the lower triangular part.

Historically, the top rectangular portion was a less popular cut. Butchers in colonial New England took these less popular cuts and packed them in wooden barrels for storage and transportation. The barrels used were called butts. So now you know. Interesting, right?

How To Tie A Roast

A pork roast comes as one piece of meat, but generally it has portions that are not as intact as the rest. For this reason it is good to tie your roast into one nice tight piece of meat so you get an even cook.

Did you know that the USDA changed the names of cuts of pork for pork loin and pork chops? Theyve been rolling out the changes for a while, but it explains why you may keep finding new cuts of pork at the grocery store or in restaurants.

Sirloin tip roasts come from the top-back of the pig, next to the sirloin but before the ham. Its a very lean cut of meat, so you have to be careful not to overcook it.

I first learned about pork sirloin tip roasts when I received an email from Pat, a sweet Pressure Cooking Today reader. If youre a Costco shopper, you may have noticed them. Costco sells these pork roasts in a bundle of four, and each roast is about 2 to 3 pounds.

Its a fairly inexpensive cut of meat, often selling between $1.50 and $2 per pound. Despite the bargain price point, the pork cooks up lean and tender.

How Long Should I Cook A Pork Sirloin Tip Roast On An Instant Pot

So depending on the size of your roast cut the time its not going to be the same

So for those that have a 3 pounds Sirloin Tip Roast you can follow the recipe but in case that you dont, you will need to add or reduce the cooking time as follows:

  • 4 pounds = 31 mins.
  • 3 pounds = 25 mins.
  • 2 pounds = 19 minutes.

You can always calculate about 6 minutes per pound of Sirloin Tip Roast and you are going to be good as well

Nonetheless, if your roast is round and thick youll want to lower the time frame more than if you have a cut of meat that is much more oblong and flat.

If you are still not sure about the time in you can always set the pressure cooker for only a few minutes and check from time to time using an instant-read thermometer. The pork needs to reach the 145 ° F and after that allowed to rest for 3 mins.

If your roast needs more time, secure the lid and just set the timer for some extra minutes, and not worry about losing the pressure-time because once the poor is hot it will take not much time to reach High Pressure.

Will Instant Pot Pork Roast & Gravy Freeze Well

The pork roast will freeze very well! I actually love having some on hand to use for various things. It works well in sliders, tacos, and over buttered noodles or mashed potatoes.

The only thing I would not recommend freezing are the mashed potatoes, as potatoes tend to discolor when frozen. Theyre easy and quick to make in your Instant Pot to go along with the Pork Roast and Gravy, though!

Can I Make The Roast Ahead Of Time

YES! My parents restaurants used to do a lot of catering when I was a teenager, and so I did a lot of catering alongside them. What we used to do for turkeys is exactly what you should do for this roast pork if you have a crowd coming over. A day ahead, roast the pork. Follow the instructions above and roast it slowly at 300°F, then let it rest, then do the reverse sear, but then let it rest again. Let it rest until its cooled down quite a bit. Then refrigerate it whole until chilled. This makes it really easy to get nice even slices because slicing it cold there are less juices flowing and everything holds together better.

Use an inexpensive electric knife, if you have one, to get nice thin slices. A carving knife works too just not as well and it gets tiring if youre doing a lot of slicing.

Arrange the slices in a single slightly overlapping layer on a large sheet pan. 40 minutes before youre serving dinner, dribble water or chicken stock over the pork slices. You want about 1 drop of water for every 3-4 slices. Very little water, really. But the water is going to heat and steam and keep the roast juicy. Next, cover the sheet pan with foil and then put it into the oven at 300°F until just heated through, about 25-30 minutes. Serve.

Chicken broth is the perfect liquid for pressure cooking pork. It adds flavor that you simply cannot get with water. To round out the flavors, well be adding some Worcestershire sauce and liquid smoke. These flavors work together to bring about a boldness and savory aspect that youd normally get from the smoking/slow roasting methods of traditional BBQ. Naturally were going to emulate those flavors and the combination of Worcestershire and Liquid Smoke in the pressure cooker works wonders.

After youve deglazed the pot, add the rest of the wet ingredients and place the chunks of pork directly into the liquid. Dont stack it, spread it out as best possible. Secure the lid, close the vent and pressure cook on high for 1 hour. After the hour is up, let the pressure release naturally for 20 minutes. After 20 minutes you can quick release any remaining pressure.

Yes and No. Normally, the thickness of the meat you buy plays a major role in determining the pressure cooking time. But it doesnt really matter in this recipe.

With this quick & easy recipe, we decide to cut short the cooking time by slicing the meat into 0.5 thick slices in Step 3.

This works because were using fatty Pork Butt Meat. Hence, as long as youre able to cut the pork shoulder meat into 0.5 thick, then youre good to go.
