Tips For A Tender Sirloin Tip Roast

Sirloin Tip Roast (BBQ) – Instant Pot | BUMMERS BAR-B-Q & SOUTHERN COOKING

A few simple tips will help to ensure you to get a tender and juicy sirloin tip:

  • Take the roast out of the fridge 1-2 hours before cooking. This allows the meat to approach room temperature for a shorter cooking time.
  • Cook it medium-rare or medium, as this cut usually becomes tough with longer cooking.
  • Always use an instant thermometer to check doneness.
  • Dont cut into the meat during cooking or resting, as juices will escape causing the meat to dry out.
  • Let the meat rest for 15 minutes out of the oven covered in tented aluminum foil. This gives time for the juices to redistribute before carving.
  • Slice thinly against the grain to serve.

Beef Tips Instant Pot

There are only a few ingredients in this slow cooker beef sirloin tips recipe and you don’t have to use steak tips. You can also cut sirloin steak into smaller pieces.

If you are starting with frozen beef, keep the time the same. It’ll still be perfect, I promise.

I have made this recipe several times and I have had no problems with it. The pressure cooker keeps the moisture in and pulls all the flavors together.

I have a 6QT Ultra Instant Pot. The buttons on most instant pots are the same, but if you don’t see the setting you need on your instant pot, please ask.

What Are The Best Cuts Of Meat For Instant Pot Pot Roast

In general, tougher cuts of meat work best for making a Instant Pot pot roast.

These are the cuts of meat that contain a decent amount of fat throughout and connective tissue, so if they were grilled, fried, or cooked quickly in some other way they would be as tough as old boots!

When cooked with a slow cook time, over a low heat, the collagen will eventually break down and melt, creating a fork tender piece of meat.

We want to make;that same fall apart tender piece of meat over a much shorter cook time in our pressure cookers!

My favorite, no fail, piece of beef for my Instant Pot Pot Roast is the boneless chuck roast, it works for me every time.

How to make this recipe ahead of time:

I think for this recipe, fresh is especially best.; However, you can make it a couple days ahead of time.

    • Follow the recipe like normal, with the exception of putting the sauce on top of the meat.; Dont do this last step if you are not eating the dish immediately.
    • Let meat and sauce cool completely.; Then transfer sauce and meat into separate air-tight containers and put them in the refrigerator.
    • When ready to eat, heat meat in a microwave safe dish, starting with a few minutes and then checking meat with every additional minute.; Once almost heated through, add sauce and finish heating.

If you want to make it ahead, go for it.; Just know the meat is not going to be as good of quality once reheated.

Can I Pressure Cook More Than One Pot Roast At A Time

Yes! I have a 6qt machine and Ive frequently cooked two pot roasts in one go. The trick is to not lay them on the bottom like Ive done in this recipe, if you put them one on top of the other like that they may take much longer to cook. What I do is simply stand them up sideways on opposite sides of the pot, the cook time then is exactly the same as it would be for one pot roast, win win!

    Cooking The Pork Roast

There will be some browned bits on the bottom of the pot from searing the pork. You need to get that up by adding liquid to the pot. Dont do this while saute mode is still on. Its very hot and the liquid will steam up immediately. It can be dangerous to stand over the IP when its that hot.

Add the broth and use a whisk to scrape the bits up. This adds great flavor to the broth, which will be used later to make the gravy.

Then put the trivet in the pot. Place the roast on top of the trivet. This is to keep the roast whole and to steam it rather than boil it. If you want, you can leave out the trivet. I just think the roast looks nicer when cooked on the trivet.

Close the Instant Pot and set it to pressure cook . The length of time you need to cook the pork for will vary depending on the size of your roast.

It is recommended that you cook a boneless pork roast for 15 minutes per pound in the Instant Pot.;For a 3 lb roast, that would be 45 minutes. Cooking it this long will lead to a sliceable roast, not a fork tender roast.

    PRO TIPS

If you want to slice the roast, dont cook for longer than 45 minutes or it can become dry. If youd rather have a fork tender roast that falls apart like shredded pork, you need to cook it for much longer, like 60 to 70 minutes. If shredded pork is what youre after, Id also recommend placing the roast directly into the pot, not on top of the trivet.

If its under, you can turn it back on for 5 or 10 minutes.

The Best Cut Of Beef For Instant Pot Pot Roast:

Cook With Us: Instant Pot Roast and Veggies | Cooking for Two

Chuck roast is the most commonly used cut of beef used in pot roast recipes.;Chuck is from the front part of the animal and different cuts will be labeled as blade, boneless cross rib, top blade, bottom blade, and shoulder. There are even different names for the same cut and it can differ from store to store I know so confusing!

While you might instantly think of the rectangular, highly marbled chuck roast widely available at most grocery stores, some of the other cuts are also a great choice for pot roast.

The popular rectangular cut of chuck will have a large amount of fat both around the edges of the cut and running through it. I have used this cut with great success in this recipe and nothing rivals it in terms of a tender result but it takes a bit more prep to make it work well . Since a big part of my end goal in this recipe is to create a luscious, fuss-free gravy, I went with a boneless chuck cross rib roast, aka, shoulder roast , this time around. It is a leaner cut of chuck which means less trimming of fat before the cooking process and cleaner drippings that will result in an effortlessly perfect gravy.

Rump roast, which is obviously not from the front portion of the animal, is another cut that will work here. This was my moms cut of choice for her roast and a much leaner cut than chuck. This recipe has not been tested with a rump roast and its possible it could need a longer cook time.

Cooking Time For An Instant Pot Roast

A basic rule for cooking pot roast in an Instant Pot is to allow 20 minutes per pound. You also need to let the Instant Pot release the pressure naturally, so you need to add a full natural release of about 25 minutes . Doing so helps lock in the juices and keep the meat moist.

    • These cooking instructions will give you a medium-done tri-tip. If you do not want any pink, cook it for an extra 10 minutes. Even if your tri-tip is well done and without a trace of pink, it will still be very tender.

It seems that many times a tough roast was cooked for too short a time, or a natural release was omitted. A three-pound roast should take around 85 minutes. Add in the 10 minutes or so that it takes for the pot to come to pressure, and you get 95 minutes. This may sound like a long time, but keep in mind that a low and slow version takes about six hours!
