I have made steamed buns in IP multiple times, but I; was never interested in making bread in the instant pot. I mean the real baked bread. It happened after I upgraded my IP model from Classic Duo to Duo Evo Plus.

;Duo Evo plus comes with BAKE mode. I baked a decent mini cake in that.; Because of this, I wondered if it could bake rich bread that normally requires 350-375 0F.

;It kind of got me interested, and I started experimenting.

S For Proofing Bread In An Instant Pot

To proof the dough in an instant pot, you want to follow these easy steps:

Step 1: Brush Steel Insert

An instant pot comes with a steel insert. Lightly brush this component and then position the dough on it. Then, lightly apply oil on top of your dough.

Step 2: Cover the Insert

Use an aluminum foil or glass lid to cover the insert. With a glass lid, you should be able to keep track of whats going on inside the pot.

It also isnt advisable to use the lid that comes with your pot since dough tends to stick to it, causing it to lock in place. This could cause a whole lot of trouble for you later on, particularly when it comes to cleaning.

Step 3: Adjust the Settings

Make sure to adjust the yogurt feature to a low setting and set your timer.

Step 4: Remove the Dough

Once the yeast reaches just the right size, turn the instant pot off and remove it. For the final step, go ahead and feel free to bake or shape the dough according to the recipe.

Can I Use Whole Wheat Flour To Make This Bread

You can use part whole wheat flour and part bread flour/all-purpose flour for a less dense loaf of bread. Using 100% whole wheat flour will result in an extremely dense bread. If you still choose to go in for whole wheat, I suggest adding 3 tablespoons of vital wheat gluten along with the rest of the ingredients. That will ensure you have a lighter loaf of bread.

And Now The Hardest Part: The Waiting

Lastly, let your bread cool in your Dutch oven for at least 10-15 minutes and remove to a rack. Let cool completely before slicing and serving.

How To Tell If The Dough Has Been Proofed Just Right

If the dough has doubled its original size, then youre good. If it is difficult to tell if thats what happened, you can use the fingertip or knuckle method to find out. This involves touching the dough with the said parts and seeing how it reacts.

Should it cause a dent that bounces back little by little and almost returns to its former shape, youre in the clear. On the other hand, if the return bounce is swift or if the dent collapses, then it has been under-proofed and over-proofed, respectively.

How To Make Instant Pot No Knead Bread

  • Start by placing 1 cup of lukewarm water in a mixing bowl. It should be less than 110°F, or feel neither cold nor hot to the touch. Yeast is a living organism, and water that is too hot will kill it and your bread will not rise. Which would be really, really sad.
  • Sprinkle 2 1/2 tsp. instant or active yeast over the water, then add 2 tsp. sugar on top of it and stir together. Allow the mixture to sit for 5-10 minutes, or until the yeast has dissolved and become bubbly and foamy. If it doesnt do that, your yeast is dead and youll need to get new yeast before making bread.
  • Add the flour and salt to the water and yeast and stir together until a rough, shaggy dough starts to form. Itll be very dry, so slowly stir in more water a tablespoon or two at a time until you have a soft, tacky dough.
  • Once your dough is thoroughly mixed, cover it with a clean towel and place the bowl in your Instant Pot. Push the yogurt button until the light is on the Normal setting, place the lid over the top, and allow it to sit for 25 minutes. The dough will not quite double, but should be puffy and noticeably risen.

Instant Pot Pizza Dough

If you love baking but dont necessarily like waiting around, this is a great alternative. You can use pizza dough with yeast or make sourdough starter from scratch.

How do you proof dough without a proofer?

This is the answer! Use your pressure cooker on the yogurt setting to do it. Of course you can do this too in your oven but who wants to heat up your whole house, especially during the summertime?

How long does it take to proof dough?

Traditionally it is about 2 hours. If you use our Instant Pot proofing dough method here your rise time is cut it in half to just 60 minutes.

What happens if you dont proof dough?

You wouldnt like the results. The carbon dioxide cant be released if this step is skipped and the gluten wont stretch to hold the air bubbles. This all means that it wont become airy and fluffy like you want it.

How do you prove dough quickly?

Use your Instant Pot! We will show you how to do that here. I have heard some use their microwave, but I am not set on this as a good method to speed up the process.

How to Proof Dough in your Instant Pot

Press YOGURT button on Instant Pot, then select LOW temperature setting. After a few seconds, the Instant Pot will beep. Cover with a lid that fits, or if you have the clear Instant Pot lid, or any plate that is big enough to cover the liner.

Dont use the regular Instant Pot lid, just in case your dough rises too much otherwise youll be left with a doughy mess to clean out of your sealing ring and edges of the lid. Not so fun to clean.

So How Long To Proof Dough In Instant Pot

Take 30 mins as your starting point and go on from there. Usually, simply halve the time mentioned in the recipe that you are following.

Of course, this would not be the case if you are about to make a No-Knead Bread.

Once the dough is proofed, take it out, shape and allow for second proofing if the recipe calls for and then bake the beautiful bread.

Instant Pot Proofing Temperature:

The ideal temperature for proofing dough is between 75 and 95 degrees Fahrenheit. This is when yeast activity is at it’s peak. You risk killing the yeast if the temperature is over 145 degrees.

The Yogurt setting will work as well, but you will not be able to adjust the temperature. I have used this method in the past, but it is hotter than the sous vide setting. Be careful when removing the dough, the oil on the bottom is hot.

Do not use the Keep Warm setting on your pressure cooker for proofing dough! It reaches 145 degrees which is too hot and will kill the yeast!!

Sweet Potato Quick Bread Recipe

Here’s my favorite quick bread recipe. It tastes amazing when cooked in an Instant Pot. It comes out with a moist, chewy, cake-like texture.

;Ingredients:

  • 1 cup canned sweet potatoes
  • 2 eggs
  • 1 Tbs. pumpkin pie seasoning

Instructions:

1. Mix all of the dry ingredients with your stand mixer on low.;

2. Slowly add the wet ingredients with your mixer on medium.

3. Grease and flour a coffee can.

4. Pour the mix into the coffee can.

5. Place the steamer rack upside down in the inner pot.

6. Add 6 cups of water.

7. Place the coffee can into the inner pot and cover with a buttered aluminum foil square.

8. Turn the valve to Sealing.

9. Turn off the Warming button.

10. Lock the lid.

11. Set Pressure Cook to 40 minutes.;

12. Do a natural release of pressure for 10 minutes or until the Instant Pot is ready to open.

Several years ago, my sister scored a bread machine for me at a yard sale for just $5, and I have used it countless times for mixing and kneading and rising the dough for many types of bread.

But when the holidays rolled around and I was tasked with baking the dinner rolls for our family get-together, I knew I would need to make more than my bread machine could handle.

They say necessity is the mother of invention, and thats how I discovered that I could proof dough in the Instant Pot!

The result was my favorite homemade Instant Pot dinner rolls, which are soft, fluffy, and tender! In that recipe, the dough completes its first rise in the Instant Pot, then is shaped, rises a bit more in the pans, and bakes in the oven.

You can also use this method to make frozen dinner rolls ahead of time and thaw them out on baking day! Or, you can proof the frozen rolls in the Instant Pot in a fraction of the time.

I also decided to experiment with rising AND baking some bread in the Instant Pot. Not every bread recipe is suitable to be baked in the Instant Pot, but I did find a winner!

You can bake bread in an Instant Pot, but that is normally for sweet breads like our banana bread in a jar, banana cake bread, applesauce bread, or even a cornbread.

While there are many bread recipes, Instant Pots are used to proof dough and decrease the lengthy dough rising process. Instant Pot pizza dough is a perfect example of this use.

So, while it’s not a bread pot like a bread maker that mixes, kneads, proofs and bakes the bread all in one container, a pressure cooker is a handy tool when it comes to bread making.

Can I Make This Crusty Bread Without A Dutch Oven

Yes, you can definitely make this no-knead bread without a dutch oven. You can use;

  • A pizza stone: Preheat the pizza stone as you would with the dutch pot. Then carefully transfer the dough onto the pizza stone. Cover the dough with a stainless steel pot or bowl that is oven safe up to 500 to 550; degrees F. Bake as directed in the recipe, remove the pot/bowl carefully after 30 minutes, and let the bread bake for another 15 minutes.;
  • Or use the stainless steel pot such as a soup pot that is oven-safe up to 500 to 550; degrees F, and cover it heavy-duty aluminum foil. Make sure that the handles are oven-proof and not plastic. There is no need to preheat the steel pot.;
  • A cast-iron skillet: Grease the bottom and sides of a 10 or 12-inch cast-iron skillet, transfer the dough ball onto the skillet, cover and let it proof for 30-45 minutes. Preheat the oven to 450 degrees F during the last 20 minutes, place the cast iron skillet on the middle rack, and bake and bake for 45-50 minutes

How Do You Know When Bread Is Done Proofing

Bread dough thats done proofing will have a full, puffed appearance. Your loaf should have expanded to roughly twice its size. To test if your dough has proofed long enough, gently poke it. It should feel soft and supple, and your finger should leave an indent in the dough. Find out exactly how long it takes for dough to rise.

If your bread doesnt see enough proofing time, it wont rise properly. Youll wind up with a flat, dense doorstop rather than a lovely, fluffy loaf.

On the flip side, bread can rise for too long. If you overproof, your dough will wind up collapsing. If you have a problem with overproofing, try letting the dough rise for a shorter period of time or at a cooler temperature.

Now, this is very crucial. I made two types of bread in terms of shape; one as a boule and the other as separate rolls. Although both baked well, the rolls were better. Baking the whole boule takes longer and sometimes can remain undone from the center, and then, you have to put it back in the instant pot.

;Though, that should not happen if you follow this instant pot bread recipe as such.

Still, I like to shape my instant bread as separate rolls. If you are a first-timer, I suggest you do the same.

So, I divide the dough into seven equal parts. Then, I roll each ball into a roll by smoothing the surface and tucking the edges underneath.
