How Long To Cook Oxtail Soup With Pressure Cooker
Todays recipe is the pressure cooker version of our familys favorite Oxtail Soup Hong Kong Style Borscht. Since its Mr. JOCs favorite comfort soup, Ive been cooking this recipe with my Instant Pot to cut down on the cooking time.
For those of you whore not familiar with Hong Kong styled Borscht, its basically an oxtail soup that uses tomatoes instead of beetroots in the classic Russian Borscht. If you love tomato base soup, youll enjoy this rich and flavorful Oxtail Soup during the cold months.
Pressure Cooker Oxtail Soup
A simplified version based on my original oxtail soup recipe so you can use minimal prep and time to cook everything in one pot. No searing or par-boiling required. The oxtails will turn out soft like butter and the soup rich and hearty. Both Instant Pot and stovetop pressure cooker methods are included.
One of the reasons I love blogging is that I learn so many things from my readers. And the questions I receive always challenge me to create better and easier recipes. A while ago I received a request to develop an easier oxtail soup recipe. I had published my moms oxtail soup recipe a long time ago. I read the recipe again when I received the request. Oh my, the cooking process for that dish does look super complicated in retrospect.
How To Cook Curry Oxtail Stew Instant Pot
If you have a pressure cooker or instant pot, use it to tenderize the oxtail. It will tremendously cut the cooking time.
My previous instant pot recipes had very detailed steps within the recipe but some people mentioned that the recipe was too long. So instead of having it in the recipe, now I have it within the blog.
If this is your first time using your instant pot, please read the manual for your safety and to familiarize yourself with the different features of this device.
My instructions DOES NOT REPLACE THE MANUAL.
It will explain in details the different instant pot programs and what to do and what NOT to do. You will enjoy your instant pot if you have a better understanding of all these functions.
Place the condensation collector behind the cooker and plug the instant pot.
You will use the SAUTE program twice. Before and after using PRESSURE COOK.
Press the “SAUTE” program and set time to 30 minutes Note: 30 minutes is the maximum time you can assign. If you need more time, set the time again otherwise, if done before time elapse, CANCEL program.
Half cook potatoes, carrots and red bell pepper. Set aside
Brown oxtail on all sides.
Saute onion and garlic. Add tomato sauce and water. Simmer for 10 minutes.
A regular pot lid can be used to cover instant pot while simmering. DO NOT USE instant pot lid, it is only used when using pressure cooker.
Cancel SAUTE, if program is not done yet or if display shows L000 etc, press CANCEL.
Open the lid.

Are Oxtail Beef Or Pork
An oxtail comes from a cow, which of course, is beef.; I have seen some pretty beefy pigs, but never a porky cow.; All jokes aside, back in the day, oxtails were the tails of an Ox.
But today, most oxtails are cow tails that are cut into pieces or sections.; Oxtails are also sold in whole pieces about a foot long.; These are great for roasting and makes a nice rich beef stock.

Curry Oxtail Stew Instant Pot is slow cooked oxtail in tomato base and savory curry powder in a variety of vegetables.
Tenderizing oxtail in an instant pot or pressure cooker is much quicker than stove top.
Curry Oxtail Stew was a staple in my Moms kitchen when we were growing up. When she made it though, it doesnt have vegetables. This was always a big hit with us. It’s delicious, flavorful and no vegetables.
For a long time, I made it without vegetables and it was delicious. Then one day, I needed to use up all the potatoes and carrots I have before they go bad.
Since then, I have tweaked my moms ;recipe by adding these veggies plus green peas when I make this oxtail stew.
The vegetables complement the rich flavor of oxtail so well plus it thickens the sauce.
Honestly, I dont know if this is a Filipino recipe. I know its Asian but which country, I have no clue.

How long does it take for oxtails to get tender?
If cooking oxtails over the stove, it will take 2 to 3 hours for the meat to cook completely and become tender. In the instant pot, it will take 45 minutes.

In this recipe, I actually used frozen oxtails to show you how you can use meat from frozen and not have to wait for the defrosting process, however you normally do it, it takes some time and prior planning. How many times have you forgotten to take the meat out of the freezer for tonights dinner? As the pressure cooker builds pressure, it also handily defrosts frozen meats. It only adds about 10-15 minutes to the time to build pressure, but is a lot less time than waiting for it to defrost the old way. It not only saves time but greatly decreases the chance of bacterial contamination in that process. I like doing things that Kill 2 birds with one stone in the process.
Since using frozen oxtails, I also seasoned heavier than normally with salt, black pepper, and granulated garlic. I have found sometimes meats are not able to absorb the seasonings as well with pressure cooking like slow cooking. So knowing this, I have tried to compensate by seasoning heavier than normal.
I cut the vegetables large, so they will hold up to pressure cooking, keep in mind that the onion will practically disappear if you cut it too small. I like to see my onions in there. But if you have a picky eater, heres a way of getting it in there and they wont know its there. You can also add celery with the potatoes and carrots, I did not in this photo.

The other day when making Beef Pho , I originally wanted to combine beef bones and oxtail in the same pot but alas I dont have a pan large enough to accommodate that. So I decided to cook Beef Pho on the stovetop the traditional way, and use the Oxtail to make Pho in my nifty Instant Pot. I was going to compare how the Pho turned out and surprise
The Instant Pot Pho won! My husband preferred the Oxtail Pho in the Instant Pot over the traditional stovetop Pho Bo.
If you have a large enough pot , feel free to make stovetop Pho using both beef bones and oxtail. I think the result would be amazing!
As you probably know, if youre a longtime reader of my blog, I absolutely LOVE my Instant Pot. I have a 6QT, and its a lifesaver. It doesnt make too many servings, but its enough for a family of three.
If you dont know what oxtail is, its the the tail meat from cows. Its a tough piece of meat, so you have to really cook it for a long time. Even though I used the Instant Pot, I still pressure cooked it for two hours. You probably could do less time, and I may experiment with the timing in the future, but pressure cooking it for two hours made it super tender, fall off the bone, just perfection.

Ingredients To Make This Dish
Oxtail is available at almost all major super markets and international markets.;
Like all good traditional beef stews, this stew is made with onion, carrots, celery, garlic, beef broth, browning, tomato paste, herbs, and, of course, oxtail to name a few.
This instant pot oxtail stew recipe is the perfect Sunday meal to make for your loved ones. To be truthfully honest, just like lamb, we do not eat it often as oxtail can be pricy.
However, It is beyond delicious and pairs well with low carb recipes, such as this cauliflower mash potatoes.
How To Make Oxtails The Jamaican Way
Wash and dry oxtail. Place in a large bowl. Season with the spices . Add browning, soy, and Worcestershire sauces to the oxtail covering each piece well. Marinate for at least 2 hours.
Set Instant Pot to high Saute settings. Once hot add oil, butter or ghee. Add the oxtail and brown on all sides. Remove and set aside.
Cut slits into the sides of the chili using the point end of a sharp knife then add to the pot.
Add carrots, onions, celery, and garlic and sauce 2-3 minutes adding a bit of the seasoning as you go. Add the paste and mix well.
Add the red wine being sure to deglaze the pot by scrubbing the bottom with a wooden spoon. Allow the wine to cook down slightly . Add the cognac, beef broth, thyme, bay leaves, and any remaining dry spice seasoning.
Add the oxtail back to the pot,; mixing well.
Close the lid and pressure cook 45 minutes and then allow the pressure to release naturally.
Remove the oxtail, then return instant pot back to high saute settings to reduce the liquid to gravy consistency.

Benefits Of A Pressure Cooker
When I make braised meat or stew on the stovetop, I usually brown the meat to seal in the juices and make the meat taste richer. This is not the case when using the pressure cooker.
The pressure cooker raises the boiling point of the water in the pot. The extra-high heat not only speeds up the cooking process, but also promotes caramelization and browning in a different way. Yes! Your beef will be caramelized in the liquid and it will result in a deep and complex flavor without browning the meat.
Cooking Instructions For The Instant Pot
Now set the IP to Pressure Cook at high pressure . Cook at high pressure for 40 minutes.
Once the oxtail soup has cooked for 40 minutes in the pressure cooker, immediately release the steam valve and let the steam quick-vent.
Once the steam has vented, remove the lid and skim as much fat off the top of the soup as you can with a ladle place in a separate bowl to discard.
Once you have removed as much fat off the top as possible, add all the chopped vegetables. Smoosh them down with your ladle as much as possible to submerge them in the liquid and then cover the IP with the lid again.
Cook 10 more minutes at the same pressure setting. Allow the steam to natural vent for 5 minutes, then quick release pressure until quiet.
Serve hot with brown rice, a splash of soy sauce, some cilantro and parsley, or however you like!

Selecting And Cooking Oxtail
Nowadays oxtail can be found at many local supermarkets and grocery stores, but if you have trouble finding it there the best place to look will be an Asian market. Our local Asian market has pre-packaged oxtail as well as whole oxtail that they can cut to your specifications.
When selecting oxtail for this oxtail soup recipe, get around 2.25-3 lbs. This will be around 6 pieces of oxtail
Because of the high quantity of bones and cartilages in oxtail, it typically takes a long time to cook oxtail sufficiently and get fall-off-the-bone meat. This Instant Pot oxtail soup recipe gives you perfectly cooked oxtail in a fraction of the time!

Wine Pairing With Pressure Cooker Oxtail Soup
We had the opportunities to taste 3 different wines 2014 from Frank Family Vineyards in Napa and share them with friends over the holidays. These wines are great paired with food or enjoyed by themselves.
Among three wines, our favorite was the Petite Sirah, it was very fruity and flavorful, with hints of plums and berries. We enjoyed the Sirah with baked salmon and they worked out really well.
For the oxtail soup, we enjoyed it with cab. The cab had strong earthy flavor but yet smelled light and refreshing. The complex flavors complemented the meat and tomato-based broth.
As you drink, we particularly enjoyed the spicy finish for the cab. The pinot was light-colored and easy on the palate. We would recommend drinking the pinot in the afternoon for fun as it was very sweet and fruity. It would go well with cheese and crackers, or just by itself.
