Instant Pot Jamaican Oxtail Stew

Oxtail. The word alone is curious. Probably mostly because its not like we typically eat tail . But when I tried it for the first time, I immediately realized this cut of meat is among the best of the best. Were talking joining the ranks of short ribs and osso buco . Oxtail is succulent, tender and fall-off-the-bone perfection.

And when you cook it in a sweet and savory gravy with just the right amount of spice, you have yourself the finest Jamaican Oxtail Stew youve ever devoured. But have no fear, although this dish is known to have a Scotch bonnet or habanero pepper in it, its not THAT spicy once cooked and its also totally optional should you wish to keep things on the mild side. And although this is called a stew, its not really meant to be eaten like a soup. Its more a premium meat dish with a rich and zesty gravy meant to be draped over the oxtail and rice.

The Instant Pot changes the game with this one, folks.

Heres How I Made It! :

Begin with a Spanish onion

and dice it up.

Take a bunch of scallions

and slice em up.

borrow some carrots from Bugs Bunnys garden

and slice them into disks.

And comes the sole ingredient which puts the Jamaican spin on this dish: our pepper! We are going to use a Scotch bonnet OR habanero OR Jamaican hot pepper here . And any color will do as theyre really all the same. Now, dont be fooled by this tiny, little pepper. It may be small, but the spice level is MIGHTY.

Cooking Instructions For The Instant Pot

Now set the IP to Pressure Cook at high pressure . Cook at high pressure for 40 minutes.

Once the oxtail soup has cooked for 40 minutes in the pressure cooker, immediately release the steam valve and let the steam quick-vent.

Once the steam has vented, remove the lid and skim as much fat off the top of the soup as you can with a ladle place in a separate bowl to discard.

Once you have removed as much fat off the top as possible, add all the chopped vegetables. Smoosh them down with your ladle as much as possible to submerge them in the liquid and then cover the IP with the lid again.

Cook 10 more minutes at the same pressure setting. Allow the steam to natural vent for 5 minutes, then quick release pressure until quiet.

Serve hot with brown rice, a splash of soy sauce, some cilantro and parsley, or however you like!

That’s not a Jamaican oxtail,, have of the ingredients is not even Jamaican,, no doubt it taste good,, but it cannot be classified as a Jamaican oxtail, sorry. Celery, broth, red wine,, seriously!! Smh

Hi thanks for the feedback. In the post I clearly state the recipe was ADJUSTED for Instant Pot cooking. I don’t think 3 out of 20 ingredients count as half but I respect and appreciate your larger point. I agree red wine is not a typical ingredient in Jamaican cooking but Jamaican cooking does include a lot of acidic ingredients and acidity is needed when cooking fatty foods such as oxtail. Secondly when cooking with instant pot if you don’t add enough liquid in recipes like this the instant pot will actually shut-off. I tried adding more water, more soy, more worcestershire, etc. but the taste wasn’t there. Adding more water dilutes the flavor. The taste of soy and worcestershire are strong so adding more changes the flavor profile too much and not in a good way. After multiple attempts I determined that a combination of beef broth and Red wine in my opinion was the best option since it flavors, tenderizes, and breaks up the fattiness without changing the flavor too much.

How To Make The Best Instant Pot Oxtail Stew

  • Sear oxtails. Use a paper towel to pat the beef oxtails completely dry. Set aside on a plate. Turn on the Sauté function to high on the Instant Pot. Heat oil until the hot oil sizzles, about 1-2 minutes. Sear the oxtails until golden brown, about 5 minutes on each side. The oxtails don’t need to be fully cooked at this point.
  • Add seasoning. Add onions, ginger, garlic, star anise, bay leaves, and crushed red pepper . Mix well and cook until fragrant, about 2 minutes. Stir in wine, soy sauce, and tomato paste. Mix well until smooth.
  • Add vegetables. Add carrots, radish , tomato, and water. The liquid should just cover the oxtails. If not, add a little bit more water.
  • Pressure cook. Switch the instant pot to pressure cooking mode on manual High and seal the lid . Let the oxtails pressure cook until tender , about 1 hour. The longer you cook, the more tender the oxtails are. Once the time is up, you can let the instant pot slowly release the pressure, about 20 minutes or quick release the remaining pressure by turning the steam release valve to the venting position.
  • Serve. Season with salt and pepper to taste and garnish with green onions. Serve immediately with a bowl of steamed rice or noodle soup if desired.

    How To Know When Oxtails Are Cooked

    Think of this like any other sort of beef recipe. You want it to become fork tender where you can pull the meat off without cutting it. Yes it will be quite hot when you pull these out of the pot. Use tongs to hold each piece and a fork to pull the protein off the cartilage and bone.

    You may use a knife just to get into those smaller crevices in between. If you use a fork and you are yanking on the meat and it isnt going anywhere, it isnt done yet. Put it back into the boiling water for another 30 minutes. Then do the fork check again and continue doing this until it shreds easily away from the bone.

    Unlike other larger beef bones which you could use to make bone broth I wouldnt save these and use for that. They will break apart and there wouldnt, and shouldnt, be anything left of it. Just enjoy the tender bites of protein that should be nicely seasoned right out of the pot.

    How Long Does It Take To Cook Oxtails

    It is going to take 5 hours in a low rolling boil pot full of water. Adding a bit of salt, black pepper and garlic is a nice addition too. There are a few choices when it comes to the liquid you use. The biggest factor is you want all of them to be completely submerged for sure though. You can use

  • Water is a given and free
  • You can use vegetable broth instead that adds more flavor
  • Or half beef broth and half water is best if you ask me
  • if you do use this I would omit the added salt so it isnt overwhelming
  • Then youll want oxtail seasoning or else the protein will be rather bland
  • That is just the basic, how to get them nice and tender with some light flavors to the meat. From there there are tons of oxtail recipes out there. If you wanted to brown the oxtails with olive oil over low heat to medium at the end you could to add some texture to the outside. Make sure you dry them with paper towels before adding to the pan for this step.

    Youd want to remove the protein and discard the bones and then you can add it into something like our Instant Pot bean soup, butter beans or inside a batch of collard greens.
