Whenever I feel even slightly under the weather, I immediately make this easy chicken bone broth in the Instant Pot. Typically, making a bone broth over the stove would take 24 hours, but with the Instant Pot, you can easily make homemade bone broth in only 2 hours thanks to pressure cooking.

The best part is that you can use the extra ingredients from your chicken bone broth to make a delicious homemade chicken noodle soup, chicken wild rice soup, or any soup that uses chicken broth. I always use a rotisserie chicken when I make soup which is a great way to save on time and make your own broth at home. Bone broth is also incredibly nutritious and perfect to sip by itself.

Adding Vegetables To Your Stock

The classic trio of onions, carrots, and celery adds some personality to stock.

But are you ready to have your mind blown? Sometimes I dont add anything extra. Just the bones! I dont always want the flavor of mirepoix in there. Plus, if Im using roasted carcasses, they often already have so much flavor by themselves.

If its summer and I have fresh herbs on hand, I might throw in a thyme sprig or a few parsley stems. If I have carrots or onions handy, I might add them. If I want a more straightforward stock , I leave them out.

What Is The Difference Between Bone Broth Chicken Broth And Chicken Stock

Bone broth and chicken stock are essentially the same thing and use the bones of the chicken to make the broth, while chicken broth does not. Regular chicken broth uses only meat and vegetables, is lighter, and does not form a gelatin when cooled. Stock and Bone Broth use bones and cartilage. It is richer in vitamins, minerals, collagen, and protein.

Instant Pot Chinese Chicken Broth: Recipe Instructions

Add the raw chicken drumsticks and bones, ginger, and scallions to your Instant Pot. Add 12 cups of water.

Seal the lid of your Instant Pot. Set it to manual high pressure for 45 minutes. Once it beeps, its on, but it will take about 15-20 minutes to come up to high pressure, in addition to the 45 minutes of cooking time.

When its done, allow the Instant Pot to release pressure naturally for at least 30 minutes and carefully turn the venting knob to venting to finish releasing pressure. Alternatively, just let the pressure release gradually until the float valve/pressure indicator drops.

When its safe to do so, carefully remove the lid. If youre using the stock right away, carefully ladle the broth out to ensure its clear. If youre planning on storing it, remove the chicken, let the broth cool, and let the sediment settle. Then transfer it to reusable freezer containers for later use.

The broth will last in the refrigerator for 3-4 days. Freeze for up to 6 months, though it tastes best when used within 3 months.

How Long To Cook Chicken Stock In The Instant Pot

For years, I cooked my stock for 30 minutes at high pressure because thats what the recipe booklet from my very first pressure cooker said. But then I saw all kinds of different times in other recipeseven up to two hours! Thats quite a range. What gives?

I made a slew of batches with various cooking times and found out.

  • 30 minutes is the minimum. Any less and you wont get good flavor or body the different tissues wont have time to break down and release gelatin or flavor with a shorter time. Stock cooked for 30 minutes is lighter in color but still has a gelatinous body. . The flavor is clean and straightforward but not lacking in chicken character.
  • 60 minutes gives you a stock thats darker and not as clear. It has more of that slightly fatty boiled chicken meat taste and smell. But it is indeed more chicken-y.
  • 45 minutes is a good compromise. This stock has good color, body, and flavor without tasting too boiled.

I still prefer 30-minute stock, though to some it might taste a little wan. This is actually great news! Whether you cook your stock for 30 minutes or one hour, itll still be chicken stock and still better than anything you buy. Experiment with cooking times and see what you like best.

How To Sub Chicken Thighs In This Recipe

Bone Broth Instant Pot Recipe (AIP, Paleo, Gluten-Free)

My preferred cut of chicken for the Instant Pot is usually the chicken thigh. Why? Because it is least likely to dry out.

But! I wanted to do a chicken breast recipe for yall because so many of yall have been asking about recipe adaptions for chicken breasts. So this fits the bill. And it turned out great, yall! The chicken was so tender and juicy.

That being said, you can make this Instant Pot chicken tortilla soup recipe as written with chicken breasts. Or you can opt to make it with chicken thighs instead, if you just adjust the cooking time to about 13 minutes.

Quick release for fresh chicken thighs, or add ten minutes of natural release for frozen thighs. .

Make sure to saute the celery, carrots, onions, and garlic before adding the chicken broth. Use a spoon to scrape the bottom of the pan to ensure that all the flavor is incorporated into the broth.

We like to use chicken drumsticks, which are inexpensive and can stand up to long cooking times. We used 2½ pounds of meat, and ½ pound of chicken thigh bones .

Other recipes also suggest chicken wings, but wings are actually quite expensive these days, and why would you use wings for broth or stock when you could make Baked White Pepper Chicken Wings, Three Cup Chicken, or Takeout Chicken Wings?!

How To Make Rotisserie Chicken Noodle Soup

  • Pressure cook the broth: Pull the breast meat off of the rotisserie chicken, chop it up into bite-sized pieces, and put it aside for later. Put the rotisserie chicken carcass, a peeled onion, scrubbed carrot, rib of celery, 2 bay leaves, and a half teaspoon of salt in the Instant Pot. Pour in 8 cups of water, then pressure cook at high pressure for 1 hour, and let the pressure come down naturally, about 30 more minutes. Strain the broth through a fine mesh strainer, discard the solids, and set the broth aside.
  • Sauté the aromatics: Wipe out the Instant Pot liner, then melt 2 tablespoons of butter using Sauté mode. Add a chopped onion, chopped carrot, chopped rib of celery, and a teaspoon of dried or fresh thyme. Sprinkle with ½ teaspoon of fine sea salt, and sauté until the onion softens, about 5 minutes.
  • Everything in the pot: Add the reserved chicken breast meat, a small diced potato, and 1 cup of wide egg noodles to the pot, then pour in the rotisserie chicken broth.
  • Pressure cook for 4 minutes at High Pressure with a Quick Release.
  • Stir in 1 ½ teaspoons of fine sea salt and ¾ teaspoon of fresh ground black pepper. Enjoy!

    Can you put raw chicken in soup to cook?

    Not in this recipe. Since were cooking the chicken takes longer to cook than the noodles, we need to brown the chicken first. Luckily, this can all be done in the instant pot so were not dirtying any more dishes!

    What can I add to soup to make it creamy?

    Were making our chicken noodle soup creamy with a cornstarch slurry. Its made of heavy cream and cornstarch. Just whisk those two together until smooth, then mix that into your soup at the end.

    How to store:

    Leftover chicken noodle soup will last in an airtight container in the fridge for 3-5 days. Keep in mind that the pasta will soak up the liquid and soften as the soup sits. Leftovers will still taste delicious though!

    How to freeze:

    If youre going to freeze your soup, I recommend doing so without the pasta. Cooked noodles can become mushy in the freezer. To freeze your soup, follow the recipe as instructed, but dont add the pasta. Instead, cool the soup completely, then store it in the freezer. When youre ready to enjoy, thaw the soup and add cooked pasta just before serving.

    How To Make Chicken Stock In A Pressure Cooker

    The process of making pressure cooker chicken stock is the same as for a classic chicken stock, which I’ve explored in depth before.

    You have lots of options for the chicken breast meat gives the best flavor, but is also the most expensive to use, and therefore not something we typically recommend. Wings, backs, and raw or cooked bones with meat and cartilage attached are all good. If I can, I always try to grab some chicken feet to throw into the pot as well, since they are by far the most collagen-rich of all the parts of a chicken, leading to stock with exceptionally high gelatin content and the very best body.

    For the aromatics, you just need a classic mirepoixa combination of onion, carrot, and celeryplus garlic, some fresh herbs like parsley and/or thyme, and maybe a bay leaf. I’ve found that dicing the vegetables first, instead of using the larger chunks often suggested, leads to better vegetable flavor in the stock.

    Once you’ve loaded up your pressure cooker with the chicken and aromatics, simply top it all off with water, making sure not to go above the cooker’s max-fill line. It’s okay if a few things stick up above the water level, since the internal heat of the pressure cooker will cook everything in there, above and below the water line.

    Then seal it, bring it up to high pressure, and let it run for 45 minutesplenty of time to coax flavor and gelatin from your ingredients.
