The Ingredients You Will Need To Make Pepperoncini Roast

Beef: Choose a boneless chuck roast for this Pepperoncini Roast recipe. This cut of beef boasts excellent marbling, which is important to the taste and texture of the meat.

Oil: Its important to choose a cooking oil with a higher smoke point for searing. Extra Light Olive Oil is our favorite choice.

Seasonings: Its super easy to flavor this beef. Just pick up a packet of Italian dressing seasoning. Some use ranch dressing seasoning too.

Beef Broth: The broth helps to keep the beef moist while cooking. This allows the beef to cook to the ideal tenderness, so it can be easily shredded. In particular, beef broth, adds some depth of flavor.

Pepperoncini Peppers: This recipe requires you to use the entire jarbrine and all. Once you try this flavorful take on pot roast, youll never look at a jar of pepperoncini peppers the same way again.

How To Make Pot Roast In The Instant Pot

60 minutes is all you need for super tender, pull apart, pot roast. Making it in your instant pot is as easy as 1, 2, 3.

I set my instant pot to manual mode for 60 minutes and then let it slow release for about 45 minutes.

Honestly you can just let it slow release while you get everything else ready up to an hour.

It’s the same prep work when making a roast in the instant pot as you would in the crockpot. You’ll want to season and sear all the edges.

So for that, set your instant pot to sear mode. Add a touch of olive oil to the bottom and sear all the sides.

Once it’s seared hit cancel. Then add your beef broth and from then out is when you’ll do your 60 minutes on manual mode.

I seriously can’t believe how tender this pot roast comes out after 1 hour in the instant pot, it’s crazy. But I love it.

Cooking The Instant Pot Roast

Pepperoncini Beef Roast  Instant Pot Recipes

I placed the seared roast into the IP inner liner and topped it with my sautéed onions. Then I poured that whole jar of sliced Pepperoncini on top, juice & all.

Theres no need to add any additional seasonings not even salt & pepper. The jar of sliced Pepperoncini with its juice will provide all the flavor thats needed.

If you like to go a little more heavy-handed with salt & pepper its easy enough to add a sprinkle once its on your plate if you feel it needs it. But its always been perfect for us just as it was.

Can I Start Out With A Frozen Roast In My Instant Pot Or Ninja Foodi

Yes. Ive personally never tried it, but it is possible.

The thing to keep in mind is that you cant sear the meat, so youd miss out on forming extra flavor through the Maillard reaction. Also, the roast will take 1/3 of the time longer to cook, plus the pot will take a lot longer to come to pressure.

Thats being said, I HAVE cooked frozen ground beef in the instant pot before and it worked out well. Im suspecting any difference between them is that one is ground and the other is whole muscle fibers and it might create a difference in the texture of the roast if cooked from frozen.

Its also not recommended to cook a whole muscle roast from frozen in the slow cooker because the meat will be left at an unsafe temperature for too long.

Tips For Making This Recipe:

  • To Reduce the Salt. Make sure that you use unsalted butter and do not add any broth. I only use water in this recipe to reduce the salt. You can also use half of the pepperoncinis in this recipe to reduce the salt as well.
  • Use whole Pepperoncinis. They sell whole and sliced pepperoncionis. I use whole pepperoncinis so that anyone that doesnt like them can easily pick them out. Also, the whole works best with the long cook time that is needed to make the beef tender in this recipe.
  • Use a marble roast. I love using a well marbled roast in this recipe so that it adds more flavor to this

Can I Use Frozen Meat

Yes, you can use frozen meat for this Instant Pot Mississippi pot roast recipe. Please note you will need a few more minutes to brown it.

Fresh beef will most likely get a better sear and turn out even more flavorful. If you are using frozen meat, I recommend fully defrosting it in the refrigerator before cooking. Then, dry the roast with paper towels before seasoning to get that desired golden-brown crust.

The idea for this roast came from a vinaigrette dressing I made a few years back now. I had just a couple pepperoncini peppers leftover in the jar after making my Italian Antipasto Pasta Salad. And I was wondering what on earth I was going to do with them.

Since I was making a giant salad with grilled chicken for dinner, I decided to make my 2-Ingredient Balsamic Vinaigrette.Then I proceeded to jazz it up a bit with some Italian seasoning and those leftover pepperoncini peppers.

And that was it, it was such a good combo I started doing more and more things with those 2 ingredients. To the point where I decided to add them to the balsamic roast I would make a few times every winter.

Which of course brings us to todays recipe. I have to say that adding balsamic to your regular ole pot roast is good. But putting in pepperoncini takes it right over the top in my opinion!

This recipe comes together quickly, so its best to have your ingredients prepped ahead. You can make this in the oven or slow cooker the way you would if you dont have an Instant Pot.

After you sear the roast on both sides, remove the roast from the pot. Then add the rest of the ingredients, except the pepperoncini. Once you stir the sauce together, carefully place the pot roast back in the top with the peppers.

Then the Instant Pot goes to work breaking down the pot roast into tender perfection.

Instant Pot Mississippi Roast Faqs

How many minutes per pound for a roast in an Instant Pot?

How long a roast takes to cook in the Instant Pot depends on the size of the roast. Account for about 15 minutes of cook time per pound when cooking roast beef in the Instant Pot. Then, naturally release the pressure for 15 minutes to finish cooking the beef. For this 4 lb. roast, we cook on high pressure for 60 minutes, then naturally release the pressure for another 15.

Can you overcook chuck roast in Instant Pot?

It is possible to overcook a chuck roast in the Instant Pot. I recommend using 15 minutes per pound and checking with a meat thermometer for doneness if you’re cooking a larger or smaller piece of meat. You can always add more cook time if it’s not done to your liking, but once it’s overcooked, it’s overcooked.

Can You Freeze Leftover Mississippi Pot Roast

You absolutely can. Just be sure to freeze it in a freezer-safe container with the meat and gravy together. Remember to allow a small amount of room for expansion while it freezes.

To thaw, remove from the freezer and keep in the fridge overnight.

Also, leftovers will stay fine in the fridge for up to 4 days in an air-tight container.

How To Make Mississippi Pot Roast In The Instant Pot

  • Prep: Press the SAUTE button on your Instant Pot and get the vegetable oil heated up.
  • Cut your chuck roast into 3 to 4 even chunks so it will fit more easily into your Instant Pot.
  • Saute: Add the meat to the hot oil and saute it for 5 minutes. Flip it over and continue to cook for 5 more minutes. Add more oil, if needed.
  • Remove the meat from the Instant Pot and set it aside.
  • Slowly add your beef broth to the Instant Pot. Stir the broth and loosen up all the browned bits from the bottom of the pot. Whisk in pepperoncini juice.
  • Transfer the meat back into the Instant Pot
  • Sprinkle the meat with the ranch seasoning mix and the gravy mix. Add pepperoncinis and butter.
  • Turn off the SAUTE mode.
  • Pressure Cook: Close the Instant Pot with the lid and set the steam release knob to the sealing position.
  • Press the MANUAL button and set to 60 minutes HIGH PRESSURE.
  • When the cooking cycle ends, do a Natural Pressure Release for 15 minutes.
  • Turn off the pot and release remaining pressure by turning the knob to the venting position.
  • When the pin drops, you can open the lid.
  • Serve: Remove pot roast from the Instant Pot and serve with the juices.
  • For a Thick Gravy: If you want to thicken the juices, you can whisk together 2 tablespoons of cornstarch with ¼ cup cold water. Select the saute setting on the IP and bring the juices to a boil. Whisk in the cornstarch mixture and cook for 2 minutes, stirring frequently, until slightly thickened.

    What Type Of Rolls Should I Use For Sliders

    Any kind of small roll will work wonders for sliders!

    You can make your from scratch.

    You can bake pre-made frozen balls of dough. Which is what I do for this recipe, with rhodes rolls.

    You can buy pre-made already cooked rolls.

    Buying a bag of pre-made ready to go rolls is definitely the easiest and if you go for this option I recommend you get the Kings Hawaiian Rolls for your pot roast sliders, which is just personal preference.

    How To Make The Pot Roast Gravy:

    Instant Pot Italian Beef –a throw-together go to!!

    Remove the beef and peppers from the instant pot and switch the instant pot to the sauté setting.

    Then mix 2 tablespoons of cornstarch with 1 cup of cold water. Whisk together until blended completely.

    Whisk this mixture into the juices in the instant pot. Then cook for 2-3 minutes until the sauce has thickened.

    Taste test it and seasoning with salt and pepper. Then its ready to serve with the Mississippi roast.

    Wild Game Internal Temperature Recommendations

    First Ill check the internal temps of this meat. For venison the recommended internal temp according to the extension service should be 145 degrees. For wild pork it should be 145-155 degrees according to a wild-game cooking site .

    A quick probe with an *Instant Read Thermometer proves that were good to go. So the roast was moved to a platter and allowed to rest while I gathered our plates & utensils and set the table.

    Can I Use A Gravy Packet Instead Of The Au Jus Packet

    To make this dish and call it Mississippi Roast, I would say no, you cant. Basically, because the gravy packet usually has thickeners , the drippings after cooking wont be the same. However, if all you had on hand were gravy packets, you could try making my Instant Pot 3 Packet Roast, which uses a gravy packet and is equally delicious as this succulent beef roast recipe!

    Incidentally, after trying this recipe and loving it, and you were wondering if you could make it with chicken instead, you most definitely can. Just sub in the same amount of chicken as it calls for beef. I did that same thing as with my 3 packet roast, I also made a 3 Envelope Chicken as well. All of these are amazingly delicious!

    Whether your roast is cooked in the Instant pot or the Ninja Foodi pressure cooker, the cooking method and times will be the same.

    And the best part is the steps to making this Mississippi roast are incredibly easy!

  • Sear the roast. I highly recommend not skipping this step because searing the roast creates a Maillard reaction. Essentially, its browning the roast that creates a deeper, more intense flavor on the beef. Skipping this step makes the roast seem almost steamed in a sense. Its really worth your time to sear the roast the flavor payoff is huge. If you want an interesting read that really explains how the Maillard reaction intensifies the flavors of food, Serious Eats has a great article that explains all of that.
  • Add the broth and sprinkle the packets over the top of the roast.
  • Add the pepperoncini peppers and the jar liquid.
  • Dont forget to put the butter in there as well!
  • Set it to cook and youre off to the races. You can go and get other tasks done while dinner is cooking. I love digital pressure cookers for that reason!
  • Recipe Tips For Perfect Instant Pot Mississippi Pot Roast

  • Use Good Quality Beef. Use a good chuck roast that has lots of marbling.
  • Brown The Beef First. I know people love their dump and go recipes, but you can add so much flavor to the recipe by taking an extra few minutes to brown both sides of the beef before you start pressure cooking. After you taste it, you will thank me for adding this step.
  • Use Low Sodium or Homemade Ingredients. This recipe can get salty because several ingredients, including the beef broth, pepperoncini peppers and juice, and seasoning packets already have salt added. Therefore, I recommend using the low sodium versions of these ingredients. To reduce the salt even more, you can make homemade versions of the ranch seasoning and au jus mix. Remember, you can always add salt later, but you can never take it away once it is added.
  • Use Natural Release and not Quick Release. This is very important. Be patient and allow the Instant Pot to release pressure naturally. The roast will still be cooking during this time. If you do a quick release, your pot roast could be tough and may not be completely cooked.
  • Make Gravy with the leftover liquid. Obviously, the gravy is optional, but it is so flavorful when made with the liquid left over from cooking the roast. In my opinion, dont skip the gravy.
