    • Add ingredients into Instant Pot: Pour broth into Instant Pot. Add in mushrooms and onions. Place the roast on top. Sprinkle with the onion soup mix and ranch dressing mix.
    • Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 75 minutes for fresh roast or 90 minutes for frozen roast. When time is up let pot sit until pressure releases naturally . Remove the lid.

    I dont know that we ever ate roast growing up.

    Its not for my mom not liking roast, but my dad is one of the pickiest eaters on the face of the earth especially when it comes to meat.

    If there is any sort of fat, gristle, or weird texture, my dad is OUT. He hates cuts of beef that arent lean so roasts werent a norm for us growing up.

    They really *should* have been though, because when done right, roasts have a delicious, rich flavor with perfectly rendered fat. Its perfect for people like my dad, since when you carve a roast you can usually see the composition and can carve around any tissue or bits of meat youd rather skip.

    Its also got a great, fall-apart buttery texture that is perfect and the luxurious gravy that comes with many roasts makes for a great topping for mashed potatoes or vegetables.

    Because of that, I always have a hard time getting good ideas for a proper pot roast dinner especially because I am not a good advance planner and often forget to cook something until about an hour before I want to be eating.

    With roasts that causes a huge problem the fat and connective tissue in pot roast takes hours to slowly break down and a rich, salty, and velvety gravy can take hours.

    What I Used For My Mississippi Pot Roast

    6-Quart Instant Pot: You dont need the biggest instant pot to make a perfect pot roast! I love this one because its big enough for a family meal. And if you ever need help with your Instant Pot, I have written a full Instant Pot guide to answer all of your questions!

    How To Make A Delicious Instant Pot Pot Roast

    Ingredients:

    3 red potatoes, cut into 2 pieces 4 large carrots, cut into 2 pieces 1/2 cup water 2 Tbsp cornstarch

    Directions:

    Add the oil to your Instant Pot, then select the Sauté button. Once the display reads HOT, add the roast and sear it for about 3 minutes on each side.

    After searing, turn your Instant Pot off and add 1 cup of cooking liquid. Add the ranch mix, au jus mix, and pepperoncini to the pot as well.

    Seal the lid, select the Manual or Pressure Cook button, and cook for 40 minutes on High pressure.

    When the timer goes off, let the pressure release naturally for about 15 minutes, then use Quick Release to depressurize the pot. Remove the lid, add the carrots and potatoes, and cook on High pressure for another 20 minutes.

    Meanwhile, whisk together the water and cornstarch to make a slurry. When the Instant Pot timer goes off, let the pressure release naturally for about 15 minutes, then use Quick Release to depressurize the pot.

    Remove the lid and carefully remove the roast, carrots, and potatoes. Skim any fat out of the remaining liquid, then select the Sauté button.

    Whisk a small amount of the slurry at time into the liquid in the pot. Add only as much of the slurry as you need to thicken the mixture into a gravy.

    Serve the pot roast, potatoes, and carrots with the gravy, and enjoy!

    Why Make This Recipe In The Instant Pot

    Making a pot roast can be an all day affair. Cooking a large chuck roast in your oven or crock pot until it is tender and falling apart can take you up to six hours. This is one reason why a traditional roast dinner is often reserved for Sundays. Because, lets be real who has time to spend 6 hours on dinner on a weekday?!?

    Now, this recipe might seem on the long side, even for an Instant Pot at about 1.5 hours total. But, compared to 6 hours, 1.5 hours sounds like a breeze. Its also totally manageable on a weeknight.

    • You can use a packet of brown gravy mix instead of au jus if desired. This will create a thicker gravy.
    • Rump roast is slightly more tender than chuck roast, so I recommend giving it a try. However, you can use either rump roast or chuck roast for this dish.
    • To make gravy out of the Instant Pot roast drippings, measure out a cup of the drippings from the pot. Whisk it together with 2 Tablespoons cornstarch mixed with ¼ cup water, then simmer in the Instant Pot on saute mode for several minutes until thickened to your liking.

    How To Make Instant Pot Mississippi Pot Roast

    • Set Instant Pot to sauté and heat the olive oil
    • Once heated, sear your chuck roast for 5 minutes, flip and then sear for another 5 minutes
    • Pull the meat out and then deglaze with the beef broth by scraping the browned bits from the bottom
    • Add back the roast, then add in the three packets of mix, as well as the peppers, and top with the butter
    • Add the lid and turn the vent to seal
    • Using the manual setting, set the Instant Pot to high pressure for 120 minutes
    • Once done, naturally release for 10 minutes, then remove the meat and rest on a plate for 10 minutes

    Slice or shred into the gravy, then serve over mashed potatoes

    What About The Salt

      Mississippi Pot Roast can be a bit salty, so here are some tips to help with that:

    • Use unsalted butter
    • Use low or no sodium broth .
    • Try to find low sodium ranch dressing mix, or make a batch of my Homemade Ranch Dressing Mix and dont add salt .
    • Rinse off the pepperoncinis and use 1/2 the amount of the juice from the jar. You can always add more after cooking if you want to.

    What Would I Serve With This Pot Roast

    I prefer to serve mashed potatoes with it.     How Do I Use The Roast Setting On My Instant Pot

    Brown the roast on both sides with a bit of oil using the Instant Pots SAUTE setting on HIGH. Once the meat develops a nice brown crust , go ahead and add the rest of the ingredients.
