How To Make Instant Pot Mississippi Roast

Sear the beef. You can do this in the Instant Pot itself or you can do it on and transfer the roast to the instant pot. I prefer to do it on the stove because theres more space in my pan, but do what works for you.

Once you have the chuck roast in the Instant Pot, add the remaining ingredients and close the lid with a sealing position.

Pressure cook it. Set your pressure cooker to high pressure for 25 min per pound. I did an hour and 15 minutes for our 3 pound roast. Natural release for about 15 minutes, and then use the valve to release any remaining pressure.

If youre cooking from frozen, add about 10 minutes per pound, which would be about an hour and a half for 3 pounds.

Shred the meat and return to the pot to let it fully absorb the flavor of the cooking liquid before serving.

Can I Use Frozen Meat

Yes, you can use frozen meat for this Instant Pot Mississippi pot roast recipe. Please note you will need a few more minutes to brown it.

Fresh beef will most likely get a better sear and turn out even more flavorful. If you are using frozen meat, I recommend fully defrosting it in the refrigerator before cooking. Then, dry the roast with paper towels before seasoning to get that desired golden-brown crust.

Crock Pot Mississippi Pot Roast Recipe

INGREDIENTS

  • 1 packet dry Ranch dressing mix
  • 1 packet Au Jus Gravy Mix
  • 5 Pepperoncini peppers
  • 1/4 cup butter, sliced in tabs

INSTRUCTIONS

Place the chuck roast in the slow cooker and sprinkle the top with the dry Ranch dressing mix and the Au Jus mix.

Place pepperoncini peppers and sliced pads of butter on top of the roast. Then cover and cook on LOW heat for 8 hours or until the meat is fall apart tender.

When the meat is cooked through and tender, shred it with two forks. Return the shredded Mississippi pot roast back into the crock pot and toss with the residual liquid.

Serve with a side of mashed potatoes, roasted potatoes, over rice or noodles. For a low carb option, serve as a stand alone main dish with your favorite low carb vegetable.

  • I think I like this Mississippi pot roast better as leftovers. Stay with me here, I havent lost it, I swear. As it sits overnight, the juices have a chance to blend together and Im telling you it is even better simply reheated on day two!
  • Can you say French Dip Sandwich? Youll also catch me reheating the meat, layering it on a roll with horseradish and provolone cheese and dipping it into that incredible buttery Au Jus goodness.
  • Heres another idea cut your leftovers into chunks and simmer it in broth with root veggies for a hearty soup.

  • You can store your leftovers in your refrigerator in an airtight container for about 3-5 days.
  • You can also freeze it, juices and all, in a freezer safe, airtight container. Including the juices right in the container will keep the meat from drying out. It will stay in the freezer for about 2-4 months. Remember to label the container with the date it was frozen!

I love that the flavor of this roast is so deliciouswithout all of the extra ingredients and processed packages!

  • Chuck roast: A cut of beef from the shoulder. Often very lean, but not particularly tenderthis is why it is a common choice for making pot roast.
  • Olive oil: Always look for extra virgin olive oil. If a food label says only olive oil it can actually be a mixture of multiple other vegetable oils. Click here to learn more about processed oils.
  • Pepperoncini peppers: A sweet, mild pepper that is often sold pickled. If you cant find these, banana peppers are a perfect substitute. These peppers are not hot.
  • Beef broth: Always grab the low sodium variety!
  • Worcestershire sauce: If youre gluten free be sure and grab Lea & Perrins, which is the only gluten free brand that I am aware of.
  • Cornstarch: This is used to thicken your sauce. It can be omitted or subbed with other thickeners such as xanthan gum or arrowroot powder.
  • Homemade ranch seasonings: I love to use this mixture anywhere I would use a prepackaged ranch dressing mix.

It tastes the same but removes all of the stabilizers, additives, and artificial flavors. Make extra and sprinkle over roasted potatoes, or make your own ranch dip by mixing with Greek yogurt.

  • Sear: Heat the olive oil in a skillet over medium-high heat. Add the beef cubes, working in batches if needed, and sear them on all sides. Set the beef cubes aside.
  • De-glaze: Pour the pepperoncini juice and beef broth into the skillet and scrape up all the bits from the bottom. Stir in the ranch seasoning and onion soup mix.
  • Arrange: Add the beef to your slow cooker along with the sauce from the skillet. Arrange the pepperoncinis and butter over the beef.
  • Cook: Secure the lid of your slow cooker. Cook on low for 8 hours or high for 4 hours.
  • Finish: Use two forks to shred the beef directly in the slow cooker. Whisk the cornstarch and water together in a small bowl, pour it into the slow cooker, and stir well to combine. Cook on high for 20-30 minutes or until thickened.

However, if all you had on hand were gravy packets, you could try making my Instant Pot 3 Packet Roast, which uses a gravy packet and is equally delicious as this succulent beef roast recipe!

    Incidentally, after trying this recipe and loving it, and you were wondering if you could make it with chicken instead, you most definitely can. Just sub in the same amount of chicken as it calls for beef. I did that same thing as with my 3 packet roast, I also made a 3 Envelope Chicken as well. All of these are amazingly delicious!
