My Instant Pot has become my do it all cooking appliance. Its great for stews, soups, braised vegetables and meats, and sides. To take your Instant Pot skills to the next level, you gotta know how to brown meat.

If youve used the saute mode to brown meat in your Instant Pot then youve likely encountered the seemingly hard to avoid the problem of sticking. This is especially a problem with skin-on chicken.

Browning meat is such a critical step to adding flavor and depth to a dish so skipping the step is not an option unless you want food sub-optimized for flavor.

Straight-up as frustrating as it is to try and flip that chicken, only to leave that delicious and beautiful brown skin behind stuck to the bottom of your pan, there is a simple way around this.

For Mashed Sweet Potatoes:

  • Begin with the recipe above and fully cook the desired amount of sweet potatoes.
  • When the NPR is finished and you release pressure from the pot, unseal the lid. Reserve 1/2-1 cup of the cooking liquid and mash with the desired add-ins. Follow the same instructions for regular mashed potatoes.

The Slow Cook is a non-pressure cooking setting that is compatible for use with any common slow cooker/Crockpot recipe. The pot is heated but is not pressurized and the Less, Normal and More modes correspond to Low, Medium and High slow cooker settings but you will need to adjust the time manually.

You Always Leave The Lid On

Youre Slow Cooking On Low

The miraculous Instant Pot also moonlights as a slow cooker, but you wont get very far if youre using the low setting for your beef stew. Because low is more comparable to the keep warm function on your slow cooker, you can imagine that your meat will still be about as raw as when it went in, even after hours of cook time. Use the normal setting for a true slow cooker low, and the more setting for high. Or scrap the raw beef stew and opt for plan B: steak tartare.

Instant Pot Rice Setting

This button is made for cooking medium and long-grain white rice. The Rice setting uses low pressure and a 10-minute natural release is recommended for perfect results, however, we found that 2-3 minutes natural release followed by quick release is sufficient. Below is how to use the Rice setting on Instant Pot.

  • Turn the Instant Pot on, it will say OFF to indicate the Stand-By mode. Add rice, water or stock and seasoning if you wish. Secure and lock the lid. Press the Rice button. The default setting is pre-programmed to set the pot to cook at Low pressure for 12 minutes, which is suitable for slightly larger rice kernels. If you press the button again, you can adjust the mode from Normal to Less or More .
  • Less mode 8 minutes at Low pressure tender but firm to bite texture great for thinner white rice such as Basmati and Jasmine rice.
  • Normal mode 12 minutes at Low pressure for normal texture white rice great for regular medium to long-grain white rice and for more al dente Arborio risotto rice.
  • More mode 15 minutes at Low pressure for softer texture white rice great for slightly softer risotto.

If desired, use the / + buttons to further customize the time. The cooking time may be adjusted at any time during pressure cooking.

RICE COOKING TIPS

1 cup of dry white rice usually yields 3 cups of cooked rice.

The perfect grain to water ratio is 1 cup white rice to 1.25 cups liquid if cooking risotto rice, the ratio is 1 cup Arborio rice to 2 cups liquid .

How to use the Saute Function of your Instant pot

Now you need to release the pressure. There are two ways:

  • Natural release: That means you do nothing but wait. The more food in the Instant Pot, the longer it takes for the pressure to come downas long as 30 minutes if you have, say, a big batch of chili. In a lot of recipes, this time is actually part of the cooking time, and the recipe will specify natural release in the instructions. Think of it as carryover cooking. Youll use natural release with dried beans, a lot of soups and stews, most meats, steamed desserts, and long-cooking vegetables.
  • Quick release: With this method, you use the quick release valve and steam shoots up out of it. Once again, the more food in your Instant Pot, the longer it takes for the steam to release. Youll use quick release for quick-cooking foods like tender vegetables and seafoods.

Whats Up With All Those Knobs And Buttons

I know, there are so many. Good news! You can ignore most of them. I use my Instant Pot nearly every day, and Ive never touched the Rice, Porridge, or Soup buttons. I do, however, make rice, porridge and soup in my IP all the time, just by programming it manuallywhich you need to know in any case.

For now, were focusing on the buttons you need for most pressure cooking recipes. If it helps, just get masking tape and cover up those other buttons so that you only focus on the buttons needed for our test drive:

  • On the Instant Pot Duo: the Low Pressure and High Pressure buttons, the +/- Cooking Time buttons, the Manual button, and the Keep Warm/Cancel button.

Instant Pot Saute Not Getting Hot

1. Ensure the lid is off

In sauté mode, you should know that the lid needs to be off before you can put it on saute mode. It is a safety precaution because you must sauté by keeping the lid off. If not, the function simply isnt going to work properly.

2. Do not change the default sauté time

According to the customers experience who have used it, the instant pot will probably not heat up if you change the default saute time. Avoid doing that because that could prevent it from reaching its desired temperature.

3. Takes extra time to heat up

The appliance will not start sautéing the meal until it has reached its desired temperature and become hot. When you first power it on, the instant pot takes time to heat the pan.

It may be taking extra time to heat up, depending upon the conditions. So, be patient, and check to see if the Instant Pot gets sufficiently hot before it starts sauteing the foods. If it doesnt, then you may have a problem on your hands.

4. Look into FAQs

The official website has a section of FAQs, including many common questions asked by the customers. You can look into that if your instant pot is not heating up in sauté mode.

The instant pot is an efficient appliance for you to cook your meal. It gives you a variety of options to cook all kinds of foods.

Just ensure the lid is off. Read FAQs and try not to change the default time of sautéing. If you still cannot solve the problem, you can get help from customer care or an expert.

What Are The Best Things To Cook In Your Instant Pot

How long do things REALLY take to cook?

I love to brag about how a soup takes 5 minutes to cook. It does, but only once the Instant Pot reaches pressure. This can take 5 minutes or it can take 15, depending on how much liquid is in your pot and how hot that liquid is. As soon as you can see the time on the cooker, you know its up to pressure and counting down. Once its cooked, you can release the pressure valve to save time.

Why is it so messy when I release the pressure?

You can release the pressure (moving the lid valve from sealing mode to venting mode once the food has finished cooking.

You can also let it depressurize naturally by waiting 15-20 minutes. The lid will be locked until the pressure is released.

Safety Time Steam Is Hot

Steam is hotter than boiling water, and it can burn you badly. Keep your hand clear of the steam release valve when you do a quick release. Sometimes I even use the handle of a spoon to push it open instead.

If you have your Instant Pot near cabinets, be mindful when you do a quick releaseit can get a lot of condensation on your cabinets, which can damage them over time. To keep the steam at bay somewhat, you can tent the valve with a kitchen towel during a quick release. Foods like oatmeal, beans, and porridges can sputter goop through the steam valvethe towel trick is handy for those times, too.

How To Dry Saute Onions In The Instant Pot
  • Remove the flimsy outer leaves from your cabbage and shred it. I prefer to shred mine in the food processor because it is easy to clean and very fast. You can also do this with a mandoline slicer or a knife, of course.
  • Place 1-2 cups of water or broth in the inner pot, then place the cabbage in. You dont need to use the trivet or steaming basket for this.
  • Cook on high for 2 minutes.

How To Saut With An Instant Pot

When browning or sautéing you likely will be using different types of food. You may be sautéing vegetables for to go with your rice, or you could be browning a roast to make a stew.

Because foods cook differently at different temperatures, Instant Pot gives you the ability to select one of three different temperature for sautéing and browning.

The Instant Pot pressure cookers offer three different options with its sautéing and browning function

  • Normal which is for regular browning at 320° F.
  • More which is for darker browning at 338°F.
  • Less which is for lighter browning at 221°F.
  • When using the sauté function the lid must be left open at all times. This prevents it from pressurizing while cooking.

    You will need to add a small amount of oil to the pot. Some users have found that they may need to add more oil to coat the bottom of the pot because it isnt completely flat.

    After selecting which of the three temperatures you would like to use, the pot will warm up and it will display Hot on the display screen to let you know it has reached the proper temperature.

    For best results you should wait until the desired temperature has been reached before adding your food. This will prevent over cooking and will also help getting that perfect crispy brown exterior, rather than letting your food get soggy from sitting in oil.
