Frozen summer corn is incredible! It’s such a treat to find in the freezer in the middle of winter. Here is how I do it:

  • To a large bowl add lots of ice and cold water, set aside.
  • Pour 1 cup of water into the pressure cooker pot and place a trivet inside. Place cobs of corn on the trivet . Cook at high pressure for 0 minutes, followed by a quick release.
  • Immediately put corn in the prepared ice bath.
  • Once cooled, cut corn off the cob, pat dry with a towel, then place on a sheet pan lined with nonstick foil. Freeze until solid then transfer to a freezer safe bag. Store in freezer 3 months or so.

    Reheating corn on the cob is not an issue at all and the most simple, easy and best way to reheat corn on the cob is to microwave them.

    You can simply transfer the corn on the cobs in a microwave safe container or plate and reheat for about 30 seconds to one minute.

    You may also use an oven to reheat the corn on the cob, but I havent tried this method yet.

    Surely you may boil them again in little water to reheat the corn on the cob on stove top, but this may soften the corn on the cobs further.

    Starting with sweet, fresh corn is essential to achieving the tastiest Instant Pot Corn on the Cob. If you mistakenly buy older ears of corn, or corn that hasnt been freshly picked you could end up with very starchy, less sweet corn.

    Why does older corn get starchy? Over time, the cob dries out and the sweet sugars within the corn kernels convert to starches. Here are some tips to selecting the best cobs for your dinner.

    • Buy corn in season, preferably directly from the farmer or at a Farmers Market. Chat up the vendors for the low down on when the corn was picked. Ideally, choose corn that was picked that day or the day before.
    • Choose ears that have tight, bright green, moist husks and dark silks. If the husks are loose, or the silks are too dry, it means that the corn has also began to dry out.
    • Moisture is key. Select ears of corn that are heavy. Peel back enough husks to view even rows of plump kernels . They should be fully formed to the tip of the cob and appear light and slightly translucent in colour.
    • Finally, poke one kernel with your fingernail. The juice should just squirt out of a perfectly fresh ear of corn. Of course, be sure to purchase the cob you have tested, regardless of the outcome for sanitary reasons.
    • Cook the corn the same day you bought it for best results. If you let it sit for too long, it will start to dry out or even mold.

    • Remove husk from corn before cooking if youd prefer, but it still works when you keep it on.
    • Snap corn in halves to fit more into the pot, especially for 3 quart and if making lots of corn for a crowd.
    • Set Instant Pot outside to cook and vent to keep the kitchen cool. 99% chances you will be cooking corn in summer!
    • Keep corn warm all day in Instant Pot with Keep Warm feature as nobody likes cold corn. This is my favourite function for this recipe.

    Accessories For Making Corn On The Cob In The Pressure Cooker

    I really love my stainless-steel steamer basket for making corn on the cob in a pressure cooker. It has a big pop-up handle in the middle that unscrews so you can fit beautiful full-size corn on the cob inside your 6-quart pressure cooker.

    Or if youd rather not remove the handle, you can use a green silicone steamer basket that has handles to help you quickly remove your corn from the pressure cooking pot.

    While I like to use a steamer basket, you can also stack the corn on the trivet that came with your Instant Pot.

    To get corn out of your electric pressure cooker, I like to use the red silicone mini mitts to just grab the individual ears of corn and put them on a platter. However, if thats too hot for you, canning jar tongs actually work really well.

    How To Cook Instant Pot Corn On The Cobb

    So to be completely transparent, this is so simple and easy I can barely call it a recipe. But nonetheless, this is information many people want to know. So here we go

    First, I added 1 cup of water to inner pot of a 6 quart Instant Pot. I stirred in 3 tablespoons of sugar to the water.

    Then I placed the trivet in the bottom of the inner pot.

    Next, I added 5 ears of shucked and husked bi-color corn .

    I sealed the IP and set the pressure cook time to 3 minutes.

    When that ended I did a quick pressure release and viola! Perfectly cooked instant pot corn on the cob, hands-free with little effort on my part.

    Can someone please pass me the BUTTER YUM!

    There are so many toppings you could sprinkle onto your corn like Cotija cheese, chopped cilantro or you can make your own zesty flavored salt mixture with some smoked paprika, chili powder, lime zest, and salt of course.

    But for me when it comes to corn on the cob Im a butter and salt girl. The end.
