This recipe also makes a great freezer meal, simply prepare the meal as if you were making it by dicing the ingredients and placing them with the stew meat in a large Ziploc freezer bag. Place everything in the bag except for the broth, Worchestershire sauce, and the biscuits. Shape the freezer bag to fit the inside of your pressure cooker and freeze.

When it comes to pressure cooker beef stew, there is no better cut of meat than chuck. Buy a thick chuck pot roast and cut it into chunks. If you cant find chuck, regular stewing beef will work just fine!

VEGETABLES

This recipe contains the classics, potatoes, onions, carrots and celery. Peas are added in at the end .Not a fan of peas? No problem, add in some green beans instead!

BROTH

This is a rich brown-gravy type broth with flavor from fresh herbs and a bit of tomato paste. If desired a small can of diced tomatoes can be added for a tomato broth stew.

  • Cut the beef into about 1-inch bite-size pieces or use pre-cut stew meat.
  • Chop the potatoes, onion, carrots, and celery. This can be done the day before if desired.
  • Add oil to the Instant Pot and turn it to the Sauté setting.
  • When the oil starts to sizzle, add the stew meat. Let it brown for a couple of minutes. Then turn the meat so it browns on all sides. Dont cook it all the way through. The goal is to just brown the outside of the meat.
  • Add the chopped onion and garlic to cook. Add additional oil, if needed. Cook until the onions are translucent.
  • Deglaze the pan by pouring in the wine. Scrape all the brown bits from the bottom of the pan. That adds flavor to the sauce.

The pieces will be stuck together in a big clump either way. This means you will need to break it up after about 25 minutes so the inner pieces cook evenly and get soft too.

    How To Make Beef Stew In An Instant Pot

    Lets get cooking!

    Set your Instant Pot to SAUTÉ and when the indicator reads HOT add a couple of tablespoons of vegetable oil. Add half of the beef cubes and season with 2 teaspoons of the seasoning mix. Cook, stirring occasionally, until the beef is nicely browned.

    Use a slotted spoon to transfer the beef to a dish and repeat this process with the remaining beef and an additional 2 teaspoons of seasoning mix. There will be a little seasoning left and you want to reserve that for later.

    Add a little more vegetable oil to the empty pot, if necessary, and add some diced onions, chopped celery, and minced garlic. Cook, stirring, until softened.

    Add a few tablespoons of tomato paste and stir it well to combine. Tomato paste adds some oomph to the sauce.

    Pour in some low-sodium beef broth, a little red wine , some Worcestershire sauce, the remaining seasoning mix, and a bay leaf.

    Time to add the browned beef back to the liquid in the pot and give it a stir. Scatter the potatoes and carrots over the top and do NOT stir the mixture at this point. They should rest on top of the meat and liquid so that they will cook to fork-tender perfection. I use this same method in my Instant Pot Pot Roast and it works like a charm.

    Secure the lid and set your Instant Pot to cook at HIGH pressure for 30 minutes.

    Just slice the bread and pour the wine and dinner is served.

    How Long To Pressure Cook Beef Stew

    Instant Pot Beef Roast

    The Instant Pot is a unique multi-cooker that uses pressure and heat to create superheated steam. This process cooks the food in the enclosed vessel at the high pressure setting anywhere between 239 to 248ºF and 10 to 12 psi .

    Because multiple types of ingredients are cooking, I found that 20 minutes at high pressure, followed by releasing the steam naturally for 15 minutes works well. This method allows the beef to tenderize and vegetables to become more tender but not mushy.

    When I served this dish to my family, it disappeared quickly with no leftovers for the next day. It is by far one of my favorite Instant Pot recipes to make.     • Beef stew meat: An affordable roast like chuck, rump, or any other cheap roast turns into tender beef in the Instant Pot. Just cut it into 1-inch pieces and you are good to go.
    • Potatoes: Yellow, red potatoes or baby potatoes will keep their shape better because they are waxier than they are starchy. Russet potatoes are good if you like fall apart potatoes in a stew.
