Why Sprouted Brown Rice

PERFECT Instant Pot Brown Rice Every Time!

Good question! After all, there are a million websites that tell how to cook regular ol rice in the Instant Pot. And, you dont even need to go to a website to learn how to cook rice in the IP. A quick glance at the grain-cooking chart in the Instant Pot user manual can tell you that.

Except as I mentioned here, the Instant Pots user manual is sadly short on nourishing, traditional-type preparations.

It gives no instructions for how to cook soaked beans or sprouted beans. No indication on cooking time or liquid amount for soaked quinoa or soaked rice. Not even a mention of sprouted or soaked grains or beans of any kind.

Since you and I are believers in the Nourishing Traditions way of preparing our food to reduce phytic acid and make it more nourishing and digestible thats a problem.

I dont know about you, but Ive never sprouted my own rice. Soaking? Sure. Never sprouted. I didnt even know buying sprouted rice was a thing for a long time!

And why would I need to sprout my own rice when I can buy it for relatively inexpensively?

According to my friend Wardee at Traditional Cooking School, the 3 grain preparation methods soaking, sprouting, and souring provide different levels of digestibility because each has its own level of effectiveness against phytic acid .

Soaking = Good.

How Do You Freeze Chicken Breasts

I like to take the breasts out of the package and put them on a parchment-lined baking sheet. I separate them slightly so they freeze as individual breasts. I place the sheet in the freezer overnight and the next day I take the solid individual frozen chicken breasts and put them in a zip bag for longer storage.

It is nice to have individual breasts because I can pull out the amount I need for a recipe without thawing a large clump of chicken.

You wont believe how easy it is! Perfect to enjoy with your favorite curries or stir-fry!

Is rice good for you?

This is like a never ending debate!

I grew up in a family where rice was eaten every day. A meal would just not be complete until there was rice on the table. Thats because we belong to a region in India where rice was grown in abundance and my grand-father was a farmer, so we had rice farms! And since there was so much rice, it was obviously eaten all the time.

Growing up I never thought if rice was good or bad. However in spite of growing up in such an environment I never became a rice fan. I dont know why! While no one in my family could finish their meals without rice, I chose to avoid it whenever I could.

I always preferred my roti and eating rice seemed like a chore. All the rice in my home was always white. I didnt even know about brown rice until I grew up and it became a trend!

And hence came the debate that which rice is better for you brown or white?

Both white rice and brown rice are high in carbohydrates. White rice is basically brown rice minus the germ and the bran. Because brown rice contains the whole grain it is said to be a healthier alternative. It has more fiber, minerals and vitamins than the white counterpart.

But according to some studies, white rice is more easily digestible and hence a better alternative for the gut.

Natural Pressure Release Vs Quick Pressure Release

Whats better? Hands down, no doubt > > natural pressure release. If you cook rice longer so you can do quick pressure release, with the hope to have the rice cooked faster overall, it gets sticky and mushy.

I encourage you to be patient and wait for natural pressure release. I timed all rice and there doesnt seem to be any rhyme or reason to the timing. Even the same kind of rice in the same amount has had different natural pressure release times.

Want Fluffy Rice Rinse Well

How to Make Instant Pot Brown Rice

I dont always remember or have time to do this step, but it helps when I do: Rinse the rice in a wire mesh colander under cold water for 30 seconds or so, or until the water runs mostly clear.

Rinsing makes the rice fluffy, and seems to make more of a difference with white rice varieties verses brown the latter is protected by its hull and doesnt tend to have a lot of extra starch clinging to the outside of the grains.

What Is Brown Rice

Brown rices literal meaning in Chinese is rough rice. Its an unpolished whole grain rice the bran, germ, and aleurone layer are not removed like the regular polished white rice we eat.

Brown rice is the same grain as white rice, but its more nutritious with more nutrients and high in fiber.

Normally it takes almost an hour of simmering to make a pot of brown rice on stove top, but its super easy to cook Brown Rice in Instant Pot with just half the cooking time!

Which Pot Should I Use To Make Rice

I use the Instant Pot 6 quart Duo for my recipes however, I always make long grain white rice in the 3 quart Instant Pot.

Since Im usually making the main dish in the larger Instant Pot, I like making the sides in the 3 quart.

This recipe is compatible in a 6 or 3 quart Instant Pot.

If I make Japanese sticky rice which is short grain white rice, I always use my Japanese rice cooker.

What If Rice Came Out Mushy Or Crunchy

When it comes to rice cooked in a pressure cooker, its a little bit of trial and error method for everyone. Sometimes different varieties of brown rice cook differently. Also rice could be old. I always use long grain brown rice and buy one brand. Last time my husband bought different brand and it needed maybe 1 more minute cooking. Once you find your rice you will know how long it cooks and you can add extra minutes.

If your rice comes out crunchy: stir, close the lid and let it sit for 20 minutes. It will get there. Also, next time cook for 25 minutes and let pressure come down on its own. It could be the altitude or rice and beans brand. Unfortunately, you cant re-close the lid, cook for extra 2 minutes and say that your new cooking time. You have to try recipe from scratch again to find your rice cooking time.

If your rice comes out mushy: cook a few minutes less next time. Easy-peasy.

Why Is My Rice Still Crunchy

How to make Brown Basmati Rice in the Instant Pot

If your rice is still crunchy, there was not enough water added or the pressure was not released correctly from the Instant Pot. Unfortunately, there isnt a way to ensure you wont get the burn notice if you try to continue to cook the rice.

To use crunchy rice, add it to a soup or make cook in a little oil and water on the stove top in a skillet.

Instant Pot Brown Rice Method: Rinsed 20 Minutes High Pressure Quick Release

  • Rating: 8/10
  • Timing: 32 minutes, including 10 minutes to come to pressure

About this method:This method from Minimalist Baker was suggested by Kitchns Editor-in-Chief, Faith Durand. You rinse the rice, combine it with 2 cups of water, cook it under pressure for 20 minutes, then do a quick release at the end of cooking.

Results: This pot of brown rice had nice, tight individual grains, but the rice was slightly undercooked, making it chewier than wed like. We have mixed feeling about this method: Its ideal for meal prepping because the slightly chewy rice is excellent for reheating or for using in cooked dishes, but its not the best for eating freshly cooked rice. This method is excellent if you plan on reheating the rice or cooking it further .

Should I Use Rice Button Or Pressure Cooker Function For Making Brown Rice

We prefer to use the pressure cooker function than the rice function, here is why

  • First, different varieties of rice have different cooking times, thus the pressure cooker function is better than the preset rice function which typically takes 40 mins to cook rice irrespective of the variety of rice.
  • Second, cooking rice using the pressure cooker function is definitely a time saver as it takes less time than the rice function.

    What Is Glycemic Index

Glycemic index is a value that is assigned to food that ranks items based on how fast they affect your blood glucose levels. The scale runs from 0 to 100.

Foods on the lower end of the scale slowly release glucose at a steady rate. Foods on the higher end release glucose rapidly and can lead to blood sugar spikes.

Eating low glycemic index foods such as brown rice, sweet potatoes, and whole grain breads help you feel fuller longer and tend to be a better choice for weight loss.

    Glycemic index of rice:

    • Black rice: 42.3

    Use A Natural Pressure Release

No matter what kind of rice youre cooking, its a good idea to let the pressure release naturally for 10 minutes before opening the pot. This allows the moisture to distribute evenly throughout the grains, and helps it unstick from the bottom of the pot, too.

You *can* open the pot with a quick pressure release if you like, but it really does benefit from a little resting time!

    How To Store Rice

Before storing cooked rice in the refrigerator or freezer, you must cool the rice quickly. It is important to cool the rice quickly to prevent bacteria from growing. Rice is fairly moist, making it a perfect breeding ground for bacteria to grow quickly. It is not recommended to leave rice at room temperature longer than 2 hours. I recommend no longer than 60 minutes.
