The Sauté function is also useful for finishing the dish after pressure cooking is done. Once the pressure has been completely released, open the lid and then press Sauté button again. Press the button again to cycle through Less or More for lower or higher temperature.

Instant Pot Porridge Setting

The porridge setting on the Instant Pot can be used to cook oatmeal using old-fashioned oats and steel-cut oats, rice porridge and congee or porridge-like dishes that use a mixture of grains that expand in liquid. Ideally, you should use natural release when cooking high-starch foods that expand or a combination of 5-10 minutes natural release and quick release to follow. Below is how to use the Porridge setting on Instant Pot.

  • Turn the Instant Pot on, it will say OFF to indicate the Stand-By mode. Add the grains, liquid and spices or fat if you wish. Secure and lock the lid. Press the Porridge button. The default setting is pre-programmed to set the pot to cook at High pressure for 20 minutes. If you press the Porridge button again, you can adjust the mode from Normal to Less or More.
  • Less mode 5 minutes at High pressure this is suitable for cooking rolled oats and risotto-like porridge or rice porridge with slightly firmer to bite texture.
  • Normal mode 20 minutes at High pressure use for steel-cut oat porridge or rice porridge with a slightly softer texture and for making congee.
  • More mode 30 minutes at High pressure use for a porridge/congee that contains a mixture of beans or tougher grains.

If desired, use the / + buttons to further customize the time. The cooking time may be adjusted at any time during pressure cooking.

Do I Need To Adjust My Recipes At Higher Altitude

The short answer is yes. Some Instant Pot models e.g. Ultra and MAX will allow you to set your altitude and the cooking times will be automatically adjusted for you. Otherwise, cooking should be adjusted 5% for every 1,000 feet above 2,000 ft. above sea level. So, for example, at 3,000 ft., you will increase cooking time by 5% and at 4,000 ft., you will increase cooking time by 10% and so forth. One of our team members has lived at many varying high elevations and personally, I have never run into altitude-related issues with my Duo model.

When To Select Low Pressure

Low pressure should be used for delicate foods like eggs, fish, and vegetables. However, all of these foods can also be cooked using high pressure for a reduced amount of time. If you are confused about whether or not to use low or high pressure, its best to stick to high pressure. This should be specified in recipes.

Instant Pot Yogurt Setting

The Yogurt button is a non-pressure cooking Smart Program made for easily fermented dairy and non-dairy recipes. The setting modes Less, Normal and More are used for different times of fermentation or for boiling the milk. Below are some basic steps and setting options for making yogurt using the Yogurt setting button.


  • Add milk to the inner pot. A minimum of 4 cups of milk is recommended for a 6-quart Instant Pot . Secure and close the lid. Make sure to press the quick-release button down until it clicks and locks into the Vent position. On Duo Classic, turn the steam release hand to point to Venting. Do this before you select the settings and make any adjustments.
  • Select Yogurt setting. The default mode is Normal. Press Yogurt again to cycle to the More option. The display indicates boiL. After 10 seconds the cooker begins heating. This setting mode can be used to pasteurize the milk but is also there for heating the milk before adding in the starter culture. When pasteurization/heating completes, the display indicates End.

  • Duo Plus: Like the Duo, but with a blue LCD display and few more settings . You can toggle to sound off or on.
  • Smart WiFi: Generally like the Duo, but you can pair it with an app and use your smartphone to control some of its functions.
  • Lux: No yogurt making setting. Does not need a drip catcher. Each setting will remember the cook time you programmed most recently.
  • Ultra: Has a central control knob, not as many buttons, and a few more special settings. Has a feature to automatically adjust for pressure cooking at altitude. Quick release button keeps fingers away from the steam release valve. Each setting will remember the cook time you programmed most recently.
  • Max: This has a touch screen, a sous-vide function, heats faster, can be programmed to automatically release steam, and offers an altitude adjustment option.

When Should I Use Keep Warm Function

The Instant Pot can be kept on Keep Warm after cooking most foods. In fact, its very handy if you are finished cooking before youre ready to serve food. Some foods like rice, quinoa, or anything that has soaked up a lot of liquid should be monitored or warmed in a more moist environment to prevent dryness or burning. You can select Keep Warm cycle before you start cooking or after.

The Rice setting uses low pressure and a 10-minute natural release is recommended for perfect results, however, we found that 2-3 minutes natural release followed by quick release is sufficient. Below is how to use the Rice setting on Instant Pot.

  • Turn the Instant Pot on, it will say OFF to indicate the Stand-By mode. Add rice, water or stock and seasoning if you wish. Secure and lock the lid. Press the Rice button. The default setting is pre-programmed to set the pot to cook at Low pressure for 12 minutes, which is suitable for slightly larger rice kernels. If you press the button again, you can adjust the mode from Normal to Less or More .
  • Less mode 8 minutes at Low pressure tender but firm to bite texture great for thinner white rice such as Basmati and Jasmine rice.
  • Normal mode 12 minutes at Low pressure for normal texture white rice great for regular medium to long-grain white rice and for more al dente Arborio risotto rice.
  • More mode 15 minutes at Low pressure for softer texture white rice great for slightly softer risotto.

The perfect grain to water ratio is 1 cup white rice to 1.25 cups liquid if cooking risotto rice, the ratio is 1 cup Arborio rice to 2 cups liquid .

How To Cook Brown Rice In Instant Pot

Unlike white rice, the brown rice has its grain husk intact, which takes longer to cook. Using the Instant Pot to cook brown rice really speeds up the process.

Rinse 1 cup of brown rice once under cold water . Add brown rice to the pot together with 1 cup water and 1/2 teaspoon of salt or the same amount of stock without salt. If cooking 2 cups of rice, add 2.25 cups of water and or stock.

Set to Manual/Pressure Cook for 22 minutes on HIGH with 10 minutes natural pressure release , and then use the quick release. Total time is about 35 minutes.

On Instant Pot pressure cooker models Duo Nova and beyond, the steam release is automatically set to the sealing position when the lid is closed.

  • Sealing position For a quick release , press down the quick release button until it clicks and locks in the venting position.
  • Venting position To stop the quick release, slightly turn the quick release button counter-clockwise until it pops up to the sealing position.
  • Wash The Pot Trivet & Lid

    Instant Pot Duo Nova Electric Multi

    Its important to wash the pot, trivet, and lid of the Instant Pot Duo before you start to use it. You can easily just wash them in the sink with a mild dish soap and a sponge, or you can run the pot and the trivet through the dishwasher.

    The lid of the Instant Pot should not be put in the dishwasher. Its best to always wash the lid by hand in the sink. This will help preserve the seal that is installed on the underside of the lid.

    While we are talking about the lid, its important that you take note of the sealing valve. There are two settings of the Instant Pot Duo lid: sealing and venting.

    When cooking something, the seal should always be set to sealing. When you need to release the pressure, the seal should be set to venting .

    Problem : The Screen Says Ovht

    Your Instant Pot stopped cooking and has a weird Ovht code on the screen.

    The fix: Ovht stands for overheat. This means that more than likely, your food is burning inside the locked pot. The code C5 on the screen is also an indication that your pot is too hot.

    Quickly release pressure until the float valve goes down and remove the inner pot. Chances are you didnt put enough water or other liquids in the pot, which caused everything to overheat and burn. Next time, closely follow the recipes directions for how much liquid to add to the ingredients.
