The pressure cooker I use is an Instant Pot. I have both the 6- and 8-quart models, and I find that the 6-quart size is plenty big for most meals. It handles recipes making 4 to 6 serving recipes easily, including this beef chili.

How To Thicken Instant Pot Chili

This easy Instant Pot chili has a substantial amount of flavor-rich broth, thanks to the addition of beef broth and beer. When I make our favorite Stove Top Chili Recipe, a lot of the liquid evaporates while the recipe simmers away. In this recipe the liquid doesnt have a chance to evaporate so the chili will need to be thickened before serving.

There are two ways you can do this.

    • Thicken with Cornstarch :;Make a cornstarch and water slurry by combining equal parts water and cornstarch. When the cook cycle is done and the pressure has released, bring the chili up to a boil using the saute button.Add the slurry a little bit at a time until you reach the desired consistency.
    • Thicken by Simmering :;Simmer your Instant Pot chili with the cover off using the sautee function for 20 minutes, or until the broth has reduced to your desired consistency.

How To Make Instant Pot Chili

  • Brown the ground beef. Turn the IP to saute and wait for It to say hot. It should only take a minute or two. Add the ground beef, breaking it up with a spatula, and cook for about 5 minutes or until its no longer pink.
  • Deglaze the Instant Pot. Pour water or beef broth in and scrape up any bits that may be stuck on the bottom.
  • Stir in vegetables and beans. Add Rotel tomatoes, crushed tomatoes, tomato sauce, green pepper, onion, kidney beans, and black beans. Feel free to use a different variety of beans if you like.
  • Stir in spices. Add chili powder, cumin, oregano, salt and pepper. Go easy with the salt here because you can always add more later. I like to use Mexican oregano, but regular oregano is fine. You can go spicy here and add extra chili powder or a few dashes of hot sauce.
  • Pressure Cook. Put the lid on the Instant Pot and seal it. Cancel the saute function and switch to manual , setting the timer for 25 minutes. After it beeps signaling its done cooking, do a quick release, then remove the lid and stir. At this point you should probably give it a taste and add any additional salt or spices. Let it sit for about 10 minutes to cool and thicken.
