Making it in a regular pot does take some time & it needs continuous stirring to prevent the milk from getting scorched at the bottom.

But making kheer in Instant pot is a breeze as all you need to do is just dump the ingredients in the pot & press the button.

I have been making it more often ever since I started to use instant pot. All I do is just put the ingredients & turn on the porridge button.

The color of the instant pot kheer would be slightly golden due to the caramelization of sugar and it is just normal.

I have also made it a couple of times with jaggery. Once the rice and milk are cooked, cook on a saute mode until it reaches the desired consistency. Remove the steel insert and let the kheer cool down a bit. Then stir in the grated jaggery. Do not cook further as jaggery curdles the milk.

To Make It In The Stovetop

Wash and soak the rice for 20-30 minutes. In a heavy-bottomed pan saute the rice in ghee along with the nuts. Add milk and creamer and cook till the rice turns soft.

Keep the flame on medium and keep stirring the pot to prevent the rice from sticking to the bottom.

Add cardamom powder, saffron, and sugar and stir until the sugar is dissolved. The milk will thicken and reduce in half eventually.

In a separate pan, fry the mixed nuts along with raisins in ghee and pour it over the payasam. It’s ready to be served.

Want to give this kheer or payasam recipe an upgrade? Add a little rose essence and rose syrup towards the end of the recipe. It will give the payasam a nice pink hue and a rose flavor.

By Step Recipe Instructions

Start by setting the Instant Pot to ‘Saute’ mode. Add ghee.

Add the cashew nuts and raisins and saute until nuts are slightly browned.

Hit ‘Cancel’ and add rice.

Add milk, cardamom powder, saffron, sugar, and mix well.

Set the Instant Pot to ‘Porridge’ mode. It will default to 20 minutes of pressure cooking time. Let the pressure cooking cycle complete.

Once the cooking cycle is complete, let the pressure valve drop by itself . Then open the lid of the Instant Pot.

Pro Tip – This is optional, but a recommended step – Add 1/3 cup of condensed milk and mix well. Cover with the lid and let sit for 5 minutes before serving.

Once done, your Instant Pot kheer should look like this! Serve immediately or cool and refrigerate.

What Kind Of Vermicelli Noodles Is Used To Make Vermicelli Kheer

Vermicelli kheer or semiya payasam is made using broken vermicelli noodles.

This kind of vermicelli noodles is usually made from durum wheat semolina flour,which is different from the rice vermicelli noodles that you usually use to make salad noodles for dinner in thai, chinese, japanese cuisines etc.

Vermicelli kheer is made from vermicelli noodles popularly used in Indian cuisine which is slightly different in texture.

Kheer, khir, and Indian Rice Pudding are often used interchangeably for Rice Kheer. Rice Kheer might also be referred to as Rice Payasam or Phirni but a few notable differences between them exist.

In the southern part of India, kheer is called payasam or payasa, meaning milk. The difference between the kheer and payasam are that payasam is typically made with jaggery and the consistency is usually thinner. A good example would be this moong dal payasam.

Vermicelli pudding besides being my favorite dessert, tops my list as it is easy to make and takes the least amount of my time. This dessert is popularly known as “vermicelli kheer”, “sevai kheer” or “sheer khurma”. It can be enjoyed anytime of the year as it can be served warm or chilled.

Traditionally, sevai kheer was made by cooking the noodles in boiling milk. This required monitoring to ensure that milk does not overflow. But with the instant pot, making this Indian vermicelli dessert has become a time saver.

What Are The Ingredients Of Instant Pot Indian Coconut Rice Kheer

Rice Basmati or Sona Masoori rice works well so does any other short grain rice. Avoid using Jasmine or sticky rice. Wash and rinse it in cold water and drain excess water.

Milk this recipe uses coconut milk to thicken the kheer. Coconut milk gives excellent decadent feel along with marvelous flavor to this kheer.

Desiccated coconut flakes or coconut powder for an extra layering of texture , we use coconut powder. It gives ultra rich taste without heavy dose of calories like heavy cream. Trust us, you will love it.

Sugar to sweeten the kheer. You can use any sugar of your choice. White, brown, coconut, palm sugar. Any other sweetener like maple syrup or agave nectar also works but adds different flavor.

Saffron this is how traditional kheer gets its golden and orange hue.

Cardamomand nutmeg powder ground cardamom seeds and nutmeg powder add intense and distinctive aroma to this kheer or Payasum.

Traditional Kheer On The Stove Vs Instant Pot And Rice Cooker

The fastest I can cook kheer on the stove takes about 45 minutes. Thats also after soaking the rice for 30 minutes. You also need to stir it often. Now that I know kheer can be made with Instant Pot or rice cooker, we can make kheer in a fraction of a time, without much stirring. I can pretty much set and forget!!Im pretty obsessed with my Instant Pot and have been using it pretty religiously any way I can. My rice cooker gets the same love too. These two gadgets are my kitchen essentials now. I CANNOT LIVE WITHOUT THEM. Though, technically speaking my rice cooker can be replaced by Instant Pot, but I have really cool rice cooker that Im not willing to give it up

How To Make Rice Kheer In Instant Pot

Soak the rice for 30 minutes. Wash and drain the rice. Switch on the Instant pot and add ghee. Roast the cashew and raisins till golden. Remove it to a plate. Add 1 cup of water to the pot. When it starts boiling add milk, rice, and sugar. Cover the lid and pressure cook for 20 minutes. Once done, let the pressure release naturally. When the pressure is released, open the lid and add the roasted nuts. If you are adding any other flavor, add it now.

The kheer at that time may look very liquid but when it cools down it thickens and comes to the perfect consistency. So do not reduce the liquid quantity as mentioned.

Pro-tip you can also roast the rice in ghee before adding it to the milk.

Can You Make This Vermicelli Kheer Without Condensed Milk

Sure, you can add sugar to sweeten the vermicelli kheer instead of using sweetened condensed milk.

You can add about 1 cup of sugar for this recipe and you can add the sugar while you add milk, water and vermicelli for preparing the kheer.

The vermicelli kheer made with condensed milk is usually more creamy in texture, so if you do not have condensed milk, you may also use evaporated milk or little heavy cream if you want to make the kheer more creamy in texture.

Kheer is a fairly simple dessert to make but needs a good amount of time, energy and concentration. It is a slow-cooked dish that you dont want to shift your attention for even a few minutes from it, else youll see a nothing but a burnt mess. Traditional Kheer is made over the stove by boiling whole milk, then soaked rice and sugar added and simmered till you get thick and creamy kheer. It can be flavoured with cardamom, actually, cardamom helps in digesting the rich and heavy foods. It is finally garnished with the chopped nuts of your choice.

Rice kheer in instant pot, using instant pot for rice kheer is easier as it need not be supervised or worry about overflowing. Step by step & quick video.

I planned to make rice kheer for my Instant pot Diwali special Live session in my facebook page. Because of long waiting time, I changed my plan last minute. I really loved the way it is prepared less messy when compared to the regular method, as well as less worrying. This is similar to the paal payasam I posted earlier. But this is so versatile.

For variations, if you like more rice and thicker consistency, you can use ¼ cup rice instead of cup. One more variation is you can powder the rice coarsely for more homogenous texture.

Heres a quick video on how to make the rice kheer in instant pot.

While shooting, I was letting the rice slightly browned, so my kheer was on cream colour rather than white. So please take care not to change the colour of the rice for whiter results.

In terms of mode, I chose Porridge menu. But you can also do this in pressure cooker mode by reducing the milk we add earlier and then adding rest of the milk and simmer in Saute mode for thickening. You can also use condensed milk for even more quicker results, instead of adding 2 cups milk at the end and simmering. If using condensed milk, reduce sugar quantity accordingly.

Nuts can be of your choice. It can be badam, pistachio or even ghee roasted cashews.

Making Kheer In Stove Top Pressure Cooker

Dont have an instant pot. no worries. Even I didnt have one until recently. The kheer can be easily made in the pressure cooker.

Just make sure you use a large pressure cooker. Reduce the quantity of milk from 5 cups to 3 cups while cooking. This will help us from over spilling the milk. Add rest of the milk after rice is cooked.

Can I Make Kheer With Jaggery Or Brown Rice

Yes you can.

Once the rice is cooked and the milk is also reduced to half.

Take it off the flame and allow it to cool for around 5 mins.

Meanwhile melt jaggery in some water. Sieve to remove impurities then add it to the rice and milk mixture. Mix to combine.

This ensures that the jaggery is well mixed with the kheer.

But do note that this would change the colour to brown.

You can use brown sugar too and follow the same procedure as mentioned.

Tips For The Best Rice Kheer

Kheer is one of the easiest desserts under the sun! Its a one-pot dessert which makes it super straight forward, and the Instant Pot makes it extremely accessible to all! However, as with anything, there are always little tricks for optimal results in the kitchen! Here are my tips for making the best kheer youve ever had right in your Instant Pot:

  • The water is added to ensure that the milk doesnt burn while cooking.

  • We add the sweetener later to ensure everyone can have their Kheer the way they want it!

  • Be careful not to scrape the bottom of the Instant Pot. A touch of milk will likely have burnt onto the Instant Pot during pressure cooking.

  • Feel free to use any of your favourite dried fruits or nuts for garnish.

    Top Tips For Making Kheer In The Instant Pot

    1. Do add the extra water at the beginning to prevent the kheer from sticking to the bottom of the pan. If you are afraid of getting the burn warning, read this post: Instant Pot Burn Notice. It has a lot of useful info on how to avoid the dreaded instant pot burn.

    2. Avoid using skimmed milk for making kheer. It will not have the same taste or thickness as whole milk.

    3. The ground almonds will make the kheer caramel in color. It is a very pleasing caramel as you can see in the picture, but if you want a light colored kheer, soak all the almonds and peel all of them. Grind one half and chop the other half. Put the ground almonds in the milk and sugar mixture and your kheer will remain light in color!

    4. If you want to do away with the step of soaking, grinding and slicing the almonds , you can use store-bought ground or sliced almonds. These are quite convenient and work well.

    5. If you don’t like thick kheer, don’t cook it after opening the pot. Just mix it well and take it out in a bowl. On the other hand, if you think the consistency of kheer is too thin, press sauté again after the pressure cooking cycle is over and cook the kheer for a few minutes until it reaches the desired consistency.

    6. Add other nuts for a more interesting kheer. Raisins and slivered pistachios work very well and add more color to the pudding.

    7. If you want a richer kheer, omit the sugar and add a can of condensed milk to the milk. The kheer will be sweeter and even creamier.
