    • The Instant Pot Ultra is still a 6-quart model. While it isnt necessarily a con, that is the only size option. This is the same size as the original Instant Pot, so you wont be getting a roomy upgrade. This probably wont be a turn-off for most, though, as you can fit quite a bounty of food into the pot.
    • There will be a learning curve. New things take time. This is especially true with any electronic item! If youve been using the original Instant Pot for a while, youre probably quite accustomed to its abilities and how to use it for what you want. The Instant Pot Ultra might take some time, trial and error, and maybe a few oops meals before you get the swing of things. Practice makes perfect.

    Upgrade Pick: Instant Pot Duo Evo Plus

    It seems like every one to two years, Instant Pot rolls out a new model that promises smarter cooking programs and overall better usability. Weve dutifully tested many of these costlier models, only to realize they tend to perform more or less on a par with the less-expensive Instant Pot Duo. Then in late 2019, they released the Instant Pot Duo Evo Plus, which has a collection of useful updateslike handles on the inner cooking pot, the biggest LCD weve seen, and an automatically sealing lidthat together make it a worthy upgrade over the basic Duo. The Duo Evo Plus also comes with an extra silicone sealing ring for the lid.

    That said, the basic cooking functionspressure, slow, steam, yogurt, rice, grainon the Duo Evo Plus are essentially the same as on other Instant Pot models.     Performance: Its A Beast

    Theres no doubt about it: This is a solid performer. From fluffy rice to creamy cheesecake to spicy chili to a French toast casserole, I used this cooker for every meal, aside from the occasional lettuce leaf, and I didnt have a single failure.

    Again, I ordered the 8-quart version, and I wondered if it would be a benefit for anyone but large families. After using it for a while, however, I began to appreciate the extra room. When I cooked in a springform pan or a soufflé dish, I had plenty of space around that cookware. So, for example, while making my go-to Instant Pot cheesecake recipe, the extra width of the 8-quart bowl made it easier to get the pan into and out of the pot.

    Unlike cookers that require users to turn the steam release valve itself, the quick-release button just needs to be pressed to start the venting process.

    The extra room was also much appreciated when making soup stock, since I had more than enough room for the bones from a roast chicken, along with onion, celery, and carrots for extra flavor. An hour at high pressure was all it took to make a flavorful stock that went on to become soup later in the week, also cooked in the pressure cooker.
