Setting the Instant Pot Ultra for Sous Vide Cooking

The “manual” button on some entry-level models is the source of so much confusion on otherwise simple, straightforward panels. Most people only know this from watching tutorials or bugging the shit out of people on Instant Pot Reddit: The manual button is the pressure cooking button. Why it’s not labeled as such, we can’t be sure. Think of it as manually inputting how long you want something to pressure cook. Telling your pot to begin pressurizing is as simple as hitting manual, then the arrows. This is the setting to use if you want to defrost something fast, and most foods don’t take longer than a few minutes at this setting.

Even if your recipe only calls for one minute of cook time, you are not about to go from frozen chicken breasts to a perfect roast with a well-done center. The act of sealing and coming to pressure feels like it takes forever , and yes, it’s fine if your Instant Pot blows steam in the process. It will automatically switch to pressure cooking when pressurization is complete and will automatically switch to warming when the timer is up.

Sous Vide Cook Times For The Instant Pot

The temperature you set the IP to determines how well-done your food will become. Selecting higher temperatures will make the food more well-done. The actual cooking time varies based on the size and cut of the meat and how well-done you prefer. Most sous vide recipes will have the cooking times and temperatures included. Here are a few rough cooking guidelines.

  • Chicken breast 145 to 150 degrees for 1.5 to 4 hours
  • Chicken thigh 148 to 165 degrees for 2 to 4 hours
  • Turkey breast 145 to 151 degrees for 3.5 to 5 hours
  • Steak 130 to 140 degrees for 1.5 to 3 hours
  • Salmon 125 to 130 degrees for 30 to 45 minutes
  • Trout 120 to 130 degrees for 20 to 30 minutes
  • Pork chops 135 to 150 degrees for 1 to 3 hours
  • Pork tenderloin 140 to 150 degrees for 1.5 to 3 hours
  • Scallops 140 degrees for 30 minutes
  • Shrimp 135 to 140 degrees for 30 to 45 minutes

    Sous Vide Immersion Circulators

Sous vide cooking is the traditional yet finest way of making dishes. In this method, the sous vide immersion circulator is clipped over the edge of a container.

The Instant Pot is manufacturing the sous vide immersion circulators that are compatible with all instant pot models including the ones with the size of 6 quarts or above.

An immersion circulator is a kitchen appliance that is used for precise cooking. The sous vide immersion circulation maintains the optimal temperature of the water bath for every recipe by heating and circulating the water in the instant pots.

    The Best Stovetop Pressure Cooker

After cooking many pounds of brisket, rice, and beans in six pressure cookers, we think the Fissler Vitaquick 8.5-Quart Pressure Cooker is the best you can get.

The new generation of electric pressure cookers are more accurately called multi-cookers because they can also slow-cook, steam, cook grains, and sometimes even make yogurt quickly and safely. Theyre less intimidating and more versatile than stovetop pressure cookers, although they take up more space and cost more. Many Wirecutter staffers love using their electric pressure cookers for quickly feeding their families or experimenting with simple, riffable recipes.

    Competition: Smart Models Available

Another of the newer-generation models is the Instant Pot Smart WiFi, which integrates the pot with your home Wi-Fi system to allow you to control it from an app or from your Alexa device. This model doesnt have a sous vide function, though, and the controls are not quite as sophisticated as the Ultra. While Wi-Fi connectivity is cool, Id have to give the nod to the Ultra for its sous vide capability and better user interface.

One of the latest Instant Pot releases is the Instant Pot Max, which can cook at 15psi , like stovetop cookers. It can also be used for pressure canning, and it has a sous vide function. If you have to have the latest gadgets or you like the idea of pressure canning a few jars at a time, the Max is for you, but youll be paying more for less cooking capacity. If you needor wantthe larger cooking capacity, the Ultra does almost everything the Max does and gives you more space for that giant roast in your freezer.

    Buy it!

Its hard not to fall right in love with the Instant Pot Ultra 10-in-1 Multi-Use Programmable Pressure Cooker, even though I didnt think Id need the capacity of the 8-quart option I ordered. I liked the user interface, and I like the addition of the start button that just seems to make sense. Id happily recommend this to anyone who has space for it.

Can You Air Fry In An Instant Pot

Instant Pot Ultra Chicken Breast~Sous Vide

You sure can. Where the Ninja Foodi’s crisping lid once had a leg up is no longer Instant Pot’s blind spot. The fall 2019 collection brought the Instant Pot Duo Crisp .

For folks who already have an Instant Pot and don’t want to replace it just to buy the Duo Crisp, Instant Pot released a standalone air fryer lid that attaches to regular Instant Pots and turns them into an air fryer. This lid works on all existing models with the exception of the Instant Pot Smart WiFi, the now- discontinued Duo Evo Plus, Duo SV, or Max.

What Does An Instant Pot Do

Yeah, why can’t you just get a regular slow cooker? At their core, Instant Pots are electric pressure cookers. The proprietary locking lid creates a seal that heats any water inside far past its boiling point, turning it to steam. When that steam has nowhere else to go, it creates pressure thus cooking food 2-10 times faster than what an oven or slow cooker could do.

The Instant Pot’s heart is a microprocessor aided by built-in temperature sensors that give Instant Pots the ability to 1. Mimic the cooking functions of multiple different appliances and 2. Switch between those functions at the press of a button. This collection of programs can be tweaked and tailored to perform super specific tasks that you may have struggled with pre-Instant Pot . They get down to the nitty-gritty of heat intensity, pressure, and cooking duration to achieve more precise results in the kitchen. Some of the more advanced models even offer personalized programming and will remember your settings for the next time.

Instant Pots rock because models ladder up in skill and price: Each model gains a new cooking method, so you aren’t paying for functions you won’t use.

    Can I Change The Flavors

Yes, this is a base-line how to recipe for perfectly cooked scallops. However, you can easily mix up the flavors to add more spice or seasoning to your seafood. Keep things light, though, because scallops have a delciate flvor thats easily overpowered.

One delicious flavoring idea is to sprinkle your scallops with Old Bay seasoning before placing them in the vacuum bag. You can find Old Bay at most grocery stores, or make your own.

    Drawbacks Of Sous Vide Cooking

    • Many people dont consider it a good idea to cook their food in plastic containers because keeping the high-temperature water in plastic containers will lead the harmful chemicals to get dissolves in the water or could enter your food. Thats why prefer using glass containers or sous vide instant pots.
    • You have to wait until the water bath stains the recommended temperature for the food ingredients.
    • Sous vide cooking is very time-consuming.
    • After preparing the ingredients in sous vide instant pots, you would need to grill them or fry them in a pan to make your dish which means that more utensils will be used.
    • There are chances of food contamination during the sous vide cooking methods. Therefore, ensure proper storage of food in clean bags to avoid it.

    What Is Sous Vide

Flipboard: Save $20 on the Instant Pot sous vide immersion ...

Sous Vide means Under Vacuum in French. The sous vide cooking method consists of sealing your food in an air tight bag and then cooking it in water that is kept at the desired temperature of the finished food. Have you ever wondered why if you want a steak cooked to 140° F in the oven, you have to place the temperature of the oven to 350°F and not the temperature you want your food to be cooked at? Well, thats because air is a terrible conductor of heat. It would take so long for the heated air to bring your food up to temperature, that it would be a dried out mess. Not only that, but because you have to have the oven turned up so high, it doesnt transfer heat well so by the time the inside of your food is cooked, the outside is overcooked.

Water conducts heat much better than air, so it does a much better job of transferring heat to your food. That is why you can bring the water to the exact temperature you want your food at and not higher like you would if cooking in an oven or on the grill. The air tight bag, helps this heat transfer to go directly to the food. It also protects the food inside and keeps all the juices and moisture that is naturally in the food, right where it should be. Thats what makes it different from just placing food directly into a hot container of water. That would work, but all the flavor and juices would seep out into the water. Thats why boiled food doesnt take so good.

Cons Of The Instant Pot Ultra

There isnt much negative to say about the Instant Pot Ultra! Its new and improved with the same classic features you already love about your current model. What can we say? The IP can do no wrong.

    • The Instant Pot Ultra is still a 6-quart model. While it isnt necessarily a con, that is the only size option. This is the same size as the original Instant Pot, so you wont be getting a roomy upgrade. This probably wont be a turn-off for most, though, as you can fit quite a bounty of food into the pot.
    • There will be a learning curve. New things take time. This is especially true with any electronic item! If youve been using the original Instant Pot for a while, youre probably quite accustomed to its abilities and how to use it for what you want. The Instant Pot Ultra might take some time, trial and error, and maybe a few oops meals before you get the swing of things. Practice makes perfect.

Upgrade Pick: Instant Pot Duo Evo Plus

*At the time of publishing, the price was $120.

It seems like every one to two years, Instant Pot rolls out a new model that promises smarter cooking programs and overall better usability. Weve dutifully tested many of these costlier models, only to realize they tend to perform more or less on a par with the less-expensive Instant Pot Duo. Then in late 2019, they released the Instant Pot Duo Evo Plus, which has a collection of useful updateslike handles on the inner cooking pot, the biggest LCD weve seen, and an automatically sealing lidthat together make it a worthy upgrade over the basic Duo. The Duo Evo Plus also comes with an extra silicone sealing ring for the lid.

That said, the basic cooking functionspressure, slow, steam, yogurt, rice, grainon the Duo Evo Plus are essentially the same as on other Instant Pot models. We do like that the Duo Evo Plus has six sauté temperature settings . Theres also a sous vide setting that, for all intents and purposes, does the job.

That said, if you want to do sous vide cooking, consider getting an immersion circulator. Sous vide cooking is all about accurate temperature control and water circulationtwo things the Instant Pot sous vide setting doesnt really do.

    Performance: Its A Beast

Theres no doubt about it: This is a solid performer. From fluffy rice to creamy cheesecake to spicy chili to a French toast casserole, I used this cooker for every meal, aside from the occasional lettuce leaf, and I didnt have a single failure.

Again, I ordered the 8-quart version, and I wondered if it would be a benefit for anyone but large families. After using it for a while, however, I began to appreciate the extra room. When I cooked in a springform pan or a soufflé dish, I had plenty of space around that cookware. So, for example, while making my go-to Instant Pot cheesecake recipe, the extra width of the 8-quart bowl made it easier to get the pan into and out of the pot.

Unlike cookers that require users to turn the steam release valve itself, the quick-release button just needs to be pressed to start the venting process.

The extra room was also much appreciated when making soup stock, since I had more than enough room for the bones from a roast chicken, along with onion, celery, and carrots for extra flavor. An hour at high pressure was all it took to make a flavorful stock that went on to become soup later in the week, also cooked in the pressure cooker.
