Instant Pot has released many new models of electric pressure cookers since we first started testing them, and in 2021 the company reduced its lineup to five core Instant Pots. Figuring out exactly what youre giving up or getting from one to the next can be tricky. To help, Instant Pot has a comparison chart that you can reference. In general, however, if you can find another model on sale for a better deal than whichever of our picks is nearest in price, we think most of them will serve you well.

We understand that there are some cases where folks are looking for their Instant Pot to truly do everything . The Instant Pot has come in handy to aid in cooking a variety of meals with minimal stress. With just the press of a button and you can prepare meat, porridge, cake, and a variety of meals.

The great thing is that the innovativeness of the brand does not stop. We now have Instant pots with the Sous Vide Function. In simple terms, this allows you to prepare meals in a vacuum.

This cooking technique is not new. However, its becoming more popular as its easier to accomplish with the function introduced in Instant Pots.

Add Food To The Bag And Use The Displacement Method To Remove Air

With sous vide cooking, its very important to remove as much air as possible from the bag.

This is because the food needs to be in contact with the hot water in order to cook properly. Air is a poor conductor of heat, so if your food is surrounded by air in the bag, the heat cant reach the food and the food will not be cooking at the desired temperature.

If you happen to have a vacuum sealer, you can use that for removing air. However, most home kitchens dont have one, so the displacement method is a good alternative.

Begin by placing your food into a high-quality freezer bag . Close the top zipper, leaving just an inch of the zipper open.

Squeeze out as much air as you can, then lower the bag into the water in your insert pot . Be careful to keep the zipper above the level of the water.

The water exerts enough pressure against the bag to force air up and out of the opening, allowing the plastic bag to be pressed directly against the surface of the food.

Close the remaining inch of zipper.

Instant Pot Sous Vide Cook Times

The sous vide temperature determines how well-done your food will be. The higher the temperature, the more well-done your food will be.

When youre trying out your first sous vide recipe, I suggest following a tried and tested recipe.

There are so many great resources on the web. I really like Americas Test Kitchen. I also suggest that you read your Instant Pot manual for recommendations of sous vide cook times.

Here are some rough guidelines for cooking times. The actual cooking time will vary based on how well-done you want the food to be cooked and the size and the cut of meat.

Based on my experience with the models that I own, the maximum time you can set for sous vide is 99 hours and 30 minutes.

Food

When cooking foods at above 158 degrees Fahrenheit , you may want to double-bag your food since higher temperatures can weaken the plastic.

COOK TIMESGenerally speaking, you can let your cooked food sit in the water bath until youre ready to serve it. Some foods can overcook if theyre left for too long. But this only happens after many hours in the water bath after the suggested cook time.

Sous vide recipes usually have a range of cooking times. The lower end of the range is the least amount of time to cook the food and the higher end is the most amount of time you can keep the food in the water bath without affecting the consistency of the food.

Delicate foods like eggs and fish can overcook if left in the water bath too long.

How to program sous vide on the Instant Pot Ultra

There are two important factors when it comes to cooking foodtime and temperature.

As a general rule of thumb, if youre cooking for a shorter period of time, youll use a higher temperature, which is the case with a pressure cooker. Likewise, if youre cooking at a low temperature, it will take more time, such as with a slow cooker.

Sous vide , which in French means under vacuum, is a cooking method where food is typically vacuum-sealed in a bag, then cooked for a specific amount of time in a temperature-controlled water bath. The food will eventually reach the same temperature as the water.

Because the temperature never fluctuates to extremes, the cooking process is gradual and controlled.

This is a slow method of cooking, but it is well-loved for cooking proteins, tender vegetables, potatoes, and eggs, because the food wont accidentally be overcooked.

Cooking Times & Temperature

The cooking times and water temperature will vary depending on the specific item and its size. Here is a list of the estimated times and temperatures youll need:

  • Chicken breast 145 to 150 °F for 1.5 to 4 hours
  • Turkey breast 145 to 151 °F for 3.5 to 5 hours
  • Chicken thigh 148 to 165 °F for 2 to 4 hours
  • Pork tenderloin 140 to 150 °F for 1.5 to 3 hours
  • Steak 130 to 140 °F for 1.5 to 3 hours
  • Delicate fish 120 to 130 °F for 20 to 30 minutes
  • Firm fish 125 to 130 °F for 30 to 45 minutes

Most often, sous vide circulators are used to maintain water temperature.

These devices, which look similar to an immersion blender, have a metal coil that heats the water, and they also function to circulate the water, so all of the water is the same temperature. This helps to prevent the water nearest the circulator being hottest, while water away from the circulator could be colder.

Traditional circulators can be attached to a pot of water and programmed to the desired time and temperature.

The Instant Pot company makes an immersion circulator, which can be clipped to any large container or even the insert pot of the Instant Pot, if its 6-quart size or larger.

Which Instant Pot Has Sous Vide Function

There are about seven Instant Pot models with the Sous Vide Function. They include The Instant Pot Duo Plus, Pro Crisp, Duo Crisp, Max, Pro Plus, Duo Evo Plus, and Pro.

    Should I Buy A Sous Vide Stick Or Just An Instant Pot

    This question all depends on the model of Instant Pot you buy. There are only a select few Instant Pots that offer the Sous Vide function.

    If you already own an Instant Pot, I would not splurge to buy another full Instant Pot only for the Sous Vide function. If you don’t already have an Instant Pot or electric pressure cooker, it is worth the investment to buy one with the sous vide function.

    What we liked: This model pressurized the quickest and offered the best searing and sautéing experience, with a stable, non-spinning pot. The ability to use the stainless steel inner pot on an electric, induction, or ceramic stovetops was welcome, as it gives the user greater flexibility and control. Releasing the steam feels straightforward and safe because of its separate push-button release and the plastic cover around the steam valve. The control panel is easy to navigate with a mixture of buttons and a dial. We also liked the handles on its cooking pot, which made it easier to lift the pot up and out of the Instant Pot’s base.

    What we didn’t like: Its pretty expensive at about $130 . The sous vide function works, although it isn’t nearly as reliable as an immersion circulator.
