One of my go-to quick and easy weeknight meals is a simple baked potato bar. Our usual toppings include butter or sour cream, shredded cheese, roasted broccoli and sometimes chili. My family loves baked potatoes, especially since everyone can choose their own potato toppings!

Baked potatoes are a filling and nutritious meal that is also budget-friendly. Russet potatoes are a good source of protein, fiber, iron, magnesium and Vitamin C, as well as other vitamins and minerals.

Since Ive owned an Instant Pot pressure cooker, cooking baked potatoes in my Instant Pot is my preferred method. Its faster than cooking them in the oven and the potatoes always turn out fluffy and tender. Just like with my Instant Pot mashed potatoes recipe and Instant Pot sweet potatoes, the Instant Pot works its magic on potatoes once again with these Perfect Instant Pot Baked Potatoes!

Besides being a delicious lunch or dinner on their own, baked potatoes are a good side dish to serve with baked salmon, steak, pork tenderloin or baked chicken thighs. You can cook your baked potatoes ahead of time and reheat them for an even faster meal.

Instant Pot Potatoes With Green Beans And Carrots

If you would like to add more vegetables to this, you certainly can! I usually add carrots and green beans. But as the green beans cook quicker than the potatoes, I suggest cooking in the Instant Pot for 5 minutes instead of 7 on high pressure. If you dont mind the potatoes just a bit firmer, leave them as they are. If you want them to be soft, just cut them in halves.

Keep in mind that the green beans will be quite tender, but still delicious!

This is a great way to add more vegetables to your meals and goes so well with everything.

How To Steam Small Baby Potatoes In The Instant Pot

For baby potatoes, I prefer to use a steamer basket. Add water to the instant pot steel insert. Place the steamer basket with baby potatoes in the instant pot insert. Pressure cook at high pressure for 5 minutes, then let the pressure release naturally.

There is just something about potatoes that sings comfort and joy, whether it’s the starchy goodness of Russet, the creaminess of Yukon gold or the butteriness of baby potato.

I used to boil potatoes using a stove-top pressure cooker.; Even though it was mostly hands-free, it needed some monitoring and heat adjustments during the process.

And when I boiled potatoes in a pot on the stovetop, I would have to monitor it, wondering when was the right moment to remove them from the heat so that they were cooked to my desired tenderness.

Well, all that is taken care of with the use of an Instant Pot, or any comparable electric pressure cooker. This boiled potato recipe is a set-it-and-forget it kind. All you have to do is push a button and you are on your way to boiled potato bliss.

Which Variety Of Potatoes Do You Use To Make Pressure Cooker Potatoes

For these Pressure Cooker Potatoes, I used marble potatoes. I liked the variety of the baby purple, red and gold potatoes. I think that it makes a fun colorful dish. If you cant find the marble potatoes you could use baby red or yukon gold potatoes, just cut them into large bite size pieces.

As far as herbs go, I chose to use dill and chives. I think the two work really well together and give a bright flavor. Freeze dried herbs that worked great for this.

I love using freeze dried herbs because they give you lots of freshness like fresh herbs but;they last SO much longer. I have seen a few different brands but I happened to pick up the Litehouse;herbs at Costco. Ive been using them in everything. They make a great addition to dressings, sprinkled in pasta and of course, sprinkled on these Pressure Cooker Potatoes.

Instant Pot Steak And Potatoes

Instant Pot Steak and Potatoes cook all together in the Instant Pot at the same time! Tender steak tips, fluffy mashed potatoes and silk smooth gravy to bring the whole meal together! This is a dinner the family will love!

Ingredients

  • 1 tsp minced garlic dried
  • 1 tsp minced onion dried
  • 1 tsp parsley dried
  • salt and pepper to taste

Instructions

  • Combine all of the marinade ingredients. Place the marinade and stew meat into a ziplock bag. Marinade for at least 1 hour but up to 24 hours.
  • After the meat has marinaded, heat the oil in the Instant Pot on the saute function. Brown the meat. Reserve 1 1/2 tsp of the marinade.
  • While the meat is browning, peel and quarter the potatoes.
  • When the meat has browned, remove the meat and deglaze the pot with the beef broth.
  • Add the reserved marinade to the beef broth.
  • Place the meat into the liquid, the potatoes into the steamer basket and place the steamer basket into the liquid. *
  • Cook on Manual HIGH for 15 minutes, NPR 10 minutes and then manually release the remaining pressure.
  • Remove the potatoes and mash with 2 tbsp butter and 1/4 cup milk. Season with salt and pepper.
  • Turn the Instant Pot onto saute and bring the meat and gravy to a simmer.
  • Create a paste with the remaining butter and the flour.
  • When the gravy is simmering, melt the butter & flour paste into the gravy to thicken it.
  • Season with salt and pepper.
  • Serve the meat and gravy over the mashed potatoes.

    Instant Pot Mashed Potatoes:

    Making mashed potatoes in the instant pot starts out just a simple and easy as if you were making mashed potatoes on the stove like my reader favorite Cream Cheese Mashed Potatoes.

    You’ll start out with three pounds of potatoes.; This is about 6 medium potatoes total.; Go ahead and peel them.; I haven’t tried this recipe leaving the skin on the potatoes because we prefer ours without skin.

    Next, simply slice the potatoes into large rounds.; For me, this came out to about 4-5 round slices per potato.; There is no reason to spend time cutting them into cubes.; You’ll then cover them completely in water which will be about 4-5 cups depending on what size of instant pot you’re using.; The picture below shows the potato rounds in my 8 quart instant pot.

    After the potatoes are covered in the water you will add ½ teaspoon of salt.; This is just enough salt to flavor the potatoes while they cook without being overwhelming.

    Then, that’s it for now!; Go ahead and place the lid on your instant pot.; Set the valve to sealed and cook on manual for 8 minutes.; Keep in mind that it will take about 8-10 minutes for the pot to come to pressure.

    Once the timer goes off you can quick release the pressure from your pot.; You will need to drain the potatoes and then return them to the instant pot with the power off.

    You can mash these up with a standard potato masher if you wish.; Or, you can mash then whip them with a hand-held mixer;which is what I love to do!

    How to Cook Sweet Potatoes in an Instant Pot

    Instant pot-baked potatoes are best when fresh, but can also be stored and enjoyed a few days after. This makes them a perfect, easy side for a quick dinner!

    • In the Refrigerator: Store in an airtight container for up to 5 days. Make sure your baked potatoes are completely cooled before storing!
    • In the Freezer: You can freeze baked potatoes without any butter or toppings on them. Wrap them tightly in aluminum foil, place in a ziplock bag, and store for 1-2 months. Let thaw overnight before reheating.
    • Reheating: Pop your baked potatoes in the oven at 350 degrees Fahrenheit for about 10-15 minutes or until warmed through.

    3. Add a trivet and water to the Instant Pot. As with all Instant Pot recipes, its essential to start with liquid in the bottom of the pot. Here, a cup of water helps create the pressure that allows the potatoes to cook. Just as important is a trivet or steamer basket, which keeps the potatoes elevated from sitting in the water.

    4. Use potato size to determine the cook time. You can cook any and all sizes of russet potatoes in your Instant Pot. To get the tender, creamy potatoes you crave, plan on a slightly shorter cook time for small spuds and a little longer for the larger ones .

    It is as easy as it gets. Just place the potatoes on a trivet. Add some water to the pot. Hit the Steam button. Adjust the time based on the size of the potatoes. It usually takes between 8 to 15 minutes depending on size of potatoes.;For potatoes about 7 oz in weight, I steamed for 10 minutes. If potatoes are about 9 oz, then steam for 12 minutes.     I have two answers to this question the right answer and the lazy answer.

    Lazy answer: I always forget to poke potatoes and sometimes the skin breaks apart a bit but I have yet to have a potato completely fall apart.

    • 7.5 Potatoes High Pressure for 28 minutes + Natural Release for 10 minutes
    • 8 Potatoes High Pressure for 31 minutes + Natural Release for 10 minutes;
    • 8.5 Potatoes High Pressure for 34 minutes + Natural Release for 10 minutes;
    • 9 Potatoes High Pressure for 37 minutes + Natural Release for 10 minutes;
    • 10 Potatoes High Pressure for 43 minutes + Natural Release for 10 minutes;
    • 10.5 Potatoes High Pressure for 46 minutes + Natural Release for 10 minutes;
    • 11 Potatoes High Pressure for 49 minutes + Natural Release for 10 minutes;

    *Note: If youre cooking a big batch or pot full of potatoes in Instant Pot, itll take a longer time to Get Up to Pressure, so youll need to reduce the pressure cooking time accordingly.

    Pressure Cooker Mashed Potatoes: Mashing

    How do you like your mashed potatoes? Dense and creamy or light and fluffy? Im firmly in the light and creamy camp. This means that I whip my potatoes with a handheld mixer instead of mashing them with the traditional potato masher.

    Here are the tools you can use for mashing potatoes

    Masher

    Results: Dense, thick mashed potatoes often dotted with small lumps.

    Pros: Easy-to-use. Kid-friendly.

    Ricer/ Food Mill

    Results: Creamy, dense mashed potatoes

    Pros: Makes mashed potatoes with a silky texture. No lumps here.

    Cons: Pain to clean

    Note: You dont have to peel potatoes before putting them through a ricer. Ive found this to be somewhat true. Some of the peel always gets through and the holes tend to clog on me. Id rather spend a few minutes peeling the potatoes than futzing with a clogged ricer.

    Handheld/Stand Mixer

    Pros: Whips a batch of potatoes very quickly.

    Cons: Dirties a second bowl.

    Food processor

    Pros: None

    Cons: Turns potatoes into a dense, gluey puree. Avoid the food processor when youre making mashed potatoes.

    So which should you use? Whichever one you like. Seriously. They all make great mashed potatoes.
