How Long To Pressure Cook Collard Greens
You may be asking yourself, Only 5 minutes? YES! And, for me that was perfect. The collards came out fairly tender and still hearty. But, thats how I like them. Also, keep in mind were not using ham or turkey which is common in this traditional dish.
If you want your collard greens really tender simply increase the cooking time to 15 minutes.
How To Cook Using Your Instant Pot
To cook using your instant pot begin by getting your Instant Pot ready. Plug it in and the display will light up.
The silver pot will sit in the chamber to cook. I always put food in the pot while it is outside the chamber and then set it inside the chamber so I dont spill anything in the cooking area. Lift it out of the chamber and set it on a potholder or heat resistant surface to serve the food for the same reason to keep from dripping or spilling food in the cooking area. I love using my Instant Pot and want to keep it clean inside and out!

Make sure the milky white plastic looking seal is in place underneath the silver ring. Note: You may have colored seals instead of the milky white ones. I use my finger to get it started and run around it until it is in place.

How To Make Instant Pot Collard Greens
Start by adding the olive oil into the Instant Pot, and then press the saute button. Give it 30 seconds to let the olive oil heat up, add the onions and garlic, and continue to saute until the onions are softened, about 3-4 minutes.
Then add the collard greens and the water, and add the lid, set the manual high pressure for 20 minutes, letting it naturally release.
Then strain the collard greens, and mix in the spices if you want to add some crumbled bacon.

Set the Instant Pot to the Sauté setting . When the display reads “Hot” add the butter. Once melted add the sliced garlic, vinegar, water, sugar, Creole seasoning, salt, black pepper, and red pepper flakes. Sauté stirring occasionally, until liquid slightly reduces, about 10 minutes. Cancel the sauté function so the pot will stop heating. Add the collard greens to the Instant Pot, use tongs to toss and coat in the liquid.
If the collard greens still seem bitter even after cooking, you can add a little salt and lemon juice to taste. This should get rid of the bitter taste.

The Best Way To Cut Your Greens
Cut away most of the stalk from each leaf. They have a tendency to be tough and bitter.
Thoroughly wash each leaf individually. I usually do this two or three times. You want to remove ALL the grit! A little grit goes a LONG way.
Stack a large handful of leaves – larger ones on bottom, smaller ones on top.
Roll leaves tightly like a cigar and slice across thinly.
Wash them again! Like I said… A little grit goes a LONG way!

Pour 1 cup water into the Instant Pot and arrange a steamer basket on the bottom. Place the vegetables in the steamer basket, making sure the vegetables arent touching the water. Why Add Vinegar Or Lemon To Greens
Vinegar is sometimes added to collard greens during the slow braising process on the stove. The acidity of the vinegar helps soften the greens. Vinegar isn’t necessary when cooking collard greens in a pressure cooker. Instead, I usually add a drizzle of apple cider vinegar or squeeze of lemon at the end of the cooking process, simply to add more flavor.

Mustard greens can easily be substituted for collard greens in this recipe you do not need to alter the cooking time.
Another option is kale or chard, however these greens are not quite as tough and do not take as long to cook. An appropriate Instant Pot cooking time for kale and chard would be 4 minutes.
What Takes The Bitterness Out Of Collard Greens
Taste the greens. If they are too bitter for your taste, add a teaspoon or two of salt or lemon juice. Mix the greens, ham hocks and water. Continue adding a teaspoon of salt or lemon juice and tasting until the bitterness is cut.
