Easy INSTANT POT RIBS Recipe

Discovering that I could make tender, smoky ribs in the Instant Pot was nothing short of life-changing. Ribs, before the Instant Pot, were a once-a-summer special-occasion treat, slowly smoked on the barbecue and slathered with sauce until lacquered and glossy. But ribs are inexpensive and satisfying, and discovering I could cook ribs to tenderness in under an hour swung the door of possibility right open. Wont you step in and join me?

Your Secret Summer Seasoning: Smoked Salt

Smoked salt is a seasoning that every cook should have in their pantry. Not only does it do the same work of liquid smoke with less effort, but it is also flavorful and wonderful for adding to everything from ribs to salty caramels. I love this smoked salt from Spice House. A little will go a long way, making the small bottle a worthy investment.

Does Meat Get More Tender The Longer You Pressure Cook It

Yes, the longer you pressure cook, the more tender the meat will be because the connective tissues are broken down more. But this doesnt mean you must always cook it long because it might become too tender.

Having a bit of chew on your meat is important too. This is why I made sure my Instant Pot pork ribs recipe has that perfect fall-of-the-bone tenderness while having a good chew.

What Kind Of Ribs To Buy

I recommend making this Instant Pot ribs recipe with baby back ribs. Baby back ribs are the most tender type of pork ribs. They are smaller than spareribs and thats why theyre called baby back ribs because of their small size. A rack of baby back ribs contains about 12 ribs and will serve about 4 people, depending on how big of an appetite they have.

You can also use spareribs in this recipe. Spareribs are larger than baby back ribs and will take longer to cook in the Instant Pot. They are often fattier but may also have more meat on each rib.

Once you try this Instant Pot Baby Back Ribs, you wont have to order them at restaurants again! Heres why its so good:

Easy. Once you make this Instant Pot Pork Ribs, youll realize how easy it is to make. It uses repeatable steps that always comes out perfect.

Cheap. Buying baby back ribs in the grocery costs around $15. In restaurants, they tend to be quite expensive, usually more than $25, and it can even be a hit or miss with the quality. But these Instant Pot Pork Ribs are always delicious and better than a lot of the ones in restaurants!

Flexible. A lot of the ingredients are flexible so the possibilities are endless with what you can play around. For example, you can use spareribs or beef ribs instead of baby back ribs. You can use a different sauce instead of BBQ. I once did Instant Pot Jerk Ribs.

Versatile. BBQ Baby Back Ribs are definitely one of the perfect dishes for the Instant Pot Duo Crisp + Air Fryer because it allows you to pressure cook and air fry all in one pot. However, you can still do the caramelization in other ways by broiling in the oven or air frying separately, and Ive included them here too. Or you can even just skip the caramelization and stick with delicious pressure cooked ribs.

No Grill. This is very important for me because I live in a condo where a grill isnt allowed. By using the oven or air fryer, were able to make these BBQ ribs look like theyre grilled due to the caramelization of the BBQ sauce.

How Do You Know When Ribs Are Done In Slow Cooker

  • Thermometer. Ribs are safe to eat at 145 degrees F, but the temperature should be at 190 degrees F or higher to ensure the most tender meat. You can use an instant read thermometer to check the exact temperature.
  • Color. When done, the meat in the middle should be white, and there shouldnt be any pink juices.
  • Bones. Check your ribs to see if the meat has drawn back from the bone. When done, the meat will expose some of the bone at the thin end of the ribs.
  • Flexibility. Your ribs should be flexible but not falling apart. When you think your ribs are done, grab one end with a pair of tongs and pick them up. The ribs should bend towards the ground without falling apart.
  • Tenderness. Gently insert a toothpick between two of the bones. If the toothpick goes in easily, then the ribs are done.

What Are Spare Ribs

Instant Pot Country Style Ribs in BBQ Sauce

The most common cuts of pork ribs are Spare Ribs, Baby Back Ribs, and St. Louis Style Ribs.

Spare Ribs are the cut of pork ribs from the bottom of the rib cage . The full slab of meat has straight & flat bones.

Its meaty, tender, and packed with porky flavors. In comparison, Spare Ribs are longer and a bigger cut of meat than baby back ribs and St. Louis Style Ribs, while likely being the least expensive!

Easy 30 Minute Instant Pot Ribs Recipe

Begin by preparing the ribs. You can use spareribs or baby back ribs. If you use baby back ribs, remove the membrane off the back first. Then cut the ribs in to 3-4 sections so theyll fit in the Instant Pot.

We had two huge racks of pork spareribs equaling about 7-8 pounds total. I split each rack into 3 pieces and cooked them in two batches.

In order to cook anything in the Instant Pot, you need at least 1 cup of liquid. We always use cola for these ribs but you can use beer as well.

Next, season the ribs with the rub which is made with brown sugar, liquid smoke, garlic, salt and pepper.

Place the ribs in the Instant Pot on top of each other. Theres no need to use the rack. Just stack them up. You can also add a sliced onion for more flavor.

Put the cover on the Instant Pot and set the vent to seal. Cook on manual for 18-25 minutes. Cook time will depend on how off the bone you want your meat. Cooking them for 18 minutes will get the meat cooked, but not falling off the bone tender.

Use tongs to carefully remove the ribs from the Instant Pot.

The ribs at this point are ready to eat. You can simply put some barbecue sauce on them and eat them. But they are so much better if you brown them up in the broiler or on the grill.

These were finished in the broiler. You can see how to grill them in our Slow Cooker Spare Rib recipe.;Broil the ribs for 10-15 minutes until they are browned. Be careful to keep an eye on them as the barbecue sauce can burn easily.

Ingredients In Instant Pot Bbq Pork Ribs

Detailed measurements and instructions can be found on the printable recipe card at the bottom of the page.

Ribs
  • Ribs ;Baby back pork ribs are what were using today. About 2 racks worth.
  • Apple Juice ;We need some liquid in our pressure cooker to ensure it actually works. Dont worry about the juice washing off your dry rub!
  • Apple Cider Vinegar ;We need some tang to our ribs and apple cider vinegar is the best thing for it. It will also chemically tenderize your meat while it cooks. If white vinegar is all you have that is more than fine as a substitute.
  • Liquid smoke ;This ingredient is optional if you cant find any at your supermarket, but I definitely recommend it in terms of achieving that smokey flavor that all good BBQ has.
Dry Rub
  • Sugar ;We want to be sure our rub has a bit of sweetness, and that complex molasses flavor that we get from brown sugar is what we want most of all.
  • Seasoning ;Salt and pepper! Savory and rubbed in well.
  • Spices Dry mustard, onion powder, cumin, smoked paprika, garlic powder, and cayenne pepper all mixed up well. These ingredients are key to achieving our scrumptious flavor so do your best to hunt them down!

The dry rub is what will add flavor to the ribs. I absolutely love my homemade dry rub recipe, its perfectly balanced when it comes to sweet and spicy. Pressure Cook The Ribs

You always need at least 1 cup of liquid in your Instant Pot for pressure cooking. Before putting the ribs in your Instant Pot, pour 1 cup of water into the bottom of the pot. I prefer to use water rather than apple juice in this recipe because I like to let the flavor of the ribs and dry rub shine through without adding apple flavor into the mix.

Next put the metal trivet that came with your Instant Pot in the bottom of the pot. Youre going to cook the ribs on the trivet to keep them from sitting in the water.

Stand the ribs up on the trivet so that the rib bones are going up and down. You can lean the ribs against the side of the Instant Pot and against each other. You can fit at least two racks of baby back ribs in a 6 quart Instant Pot, and likely three racks if you are feeding a crowd.

Youll pressure cook baby back ribs for 25 minutes at high pressure, followed by a 15 minute natural release. If youre cooking spareribs, they will need to pressure cook for 35 minutes plus a full natural release.
