How to Cook Chickpeas in an Instant Pot

Before prepping chickpeas, give chickpeas a rinse and remove any dirt or debris, if any. How much water you use to soak chickpeas will depend on the amount of chickpeas youre using. If youre using 1 cup of chickpeas, use 3 cups of water.

You need to cover the chickpeas in water by at least 2 inches or 3 inches over the chickpeas. If youre concerned to leave it without watching for hours like me I go for the 3 inches. When quick soaking you can also add 1 teaspoon of baking soda. Doing so helps soften the chickpeas and allows them to absorb more water.

  • QUICK SOAK CHICKPEAS STOVETOP Pour chickpeas into a saucepan and cover with 2 inches of water. Cook on high heat and allow it to come to a boil for 1 minute. Remove the saucepan from the heat and allow chickpeas to soak in the hot water covered for 1 hour.
  • QUICK SOAK INSTANT POT You could also try the instant pot chickpeas quick soak method. Start by placing the chickpeas into the instant pot and cooking on saute function. Bring to a boil and allow the chickpeas to boil for 1 minute. Turn off the saute function, cover the chickpeas and allow them to soak in the hot water for 1 hour.
  • TRADITIONAL SOAK CHICKPEAS Place chickpeas into a bowl and cover with 3 inches of water. Allow chickpeas to soak 6-8 hours or even soak overnight.

Soaking too long or in a warm area can cause the chickpeas to ferment. If your home is warmer than usual, you should place the chickpeas in the refrigerator to soak.

Im constantly cooking with chickpeas. Sometimes Im even not cooking with chickpeas. Meaning that I can open up a can of them, drizzle on some Italian dressing, and call it lunch. That brings me back to my college days when I wasnt much of a cook, and I didnt have much money

How times have progressed.

In todays modern world, with the Instant Pot revolution upon us, I thought why not upgrade my routine a bit and try my hand at making chickpeas in the pressure cooker? I mean, I make a lot of my staples in the Instant Pot rice, quinoa, baked potatoes, chicken breasts. It was definitely time to try out some beans.

Try and try I did, and I finally developed a recipe to make perfect chickpeas in the Instant Pot.

Tips For Buying And Cooking Beans

  • Look in bulk: The bulk section of a grocery store is anyones gold mine. Thats where youll find the same food that comes in a package but without paying for the cost of extra packaging. You can also find them in bulk food stores that specifically cater to only buying in bulk, as well as health food stores that have a bulk food section.
  • Buy organic: If you can afford it, buy organic beans and legumes. Non-organic legumes are sprayed in a field with harmful pesticides that we end up putting into our bodies. Unfortunately, these days, there is still a lot of cross-contamination, even with organic produce, but if we can minimize the effects, weve got to try. Plus, organic beans do not cost much more than conventional.
  • Fresh is best: There is such thing as old beans and rice. They take longer to cook. So once you find a reliable source of beans and my recipes work for you, stick to those beans haha.

Be mindful of the age of your chickpeas. Old beans may take longer to cook!

  • Dont add salt: Salt can prolong the cooking time. We dont need more sodium anyways.

Optional Step Soak Chickpeas Overnight

How to cook Chickpeas in the Instant Pot

*Note: Proceed with this step if you prefer super soft and creamy chickpeas.

Place 1 cup dried chickpeas and 1 tbsp fine table salt in a large container.

Pour 4 cups cold water in the large container, then give it a few stirs.

Allow chickpeas to soak overnight for at least 8 16 hours.

*Pro Tip: If your house is very warm, place the large container in the fridge to avoid fermentation.

How To Cook Soaked Chickpeas In Instant Pot

Soaking chickpeas for 6-8 hours or even overnight helps cook the chickpeas faster compared to the dried ones. Discard all the water used for soaking and then put the chickpeas in the instant pot liner.

Fill the liner with water, just about half an inch over the level of the chickpeas. I usually add 2 cups of water per dried cup of chickpeas when using the soaked method.

Lock the lid and cook on high pressure mode for 18 minutes followed by a natural pressure release.

When The Cooking Cycle Is Finished

The Instant Pot beeps to let you know that the cooking cycle is finished. It depressurizes naturally after that beep, which takes about 20 minutes. Or you can speed things up a bit by opening the valve manually. I throw a towel over the top of the valve because some liquid spits out along with the steam. Simply turn the valve to Venting to open it.

Once the pot has depressurized, remove the lid and carefully lift the pot out. Use oven mitts or a towel to lift it out the pot is HOT! Strain your chickpeas, and theyre ready to eat!

Important Measurements And Info

Sometimes you’ll want to cook a lot of of chickpeas, sometimes a little. Here’s a helpful guide on measurements.

  • 1lb dried chickpeas = about 6 cups cooked, which is about four 15oz cans
  • For every 1 cup of beans, 3 cups of water is enough for cooking
  • 8oz dried beans will yield about 3 cups cooked, that could serve 3-4 people.
  • Raw chickpeas takes 50 minutes to cook with a 10 minute natural release.
  • Chickpeas that were soaked overnight or 6+ hours take 25-30 minutes on high pressure.

Cooking chickpeas in an Instant Pot could not be easier. Best of all, there is no soaking needed.

Begin by peeling a head of garlic and smashing the cloves. I use pretty much the whole head unless it is huge – around 10 – 12 cloves. Then slice an onion in half and remove the peel.

Now, add the chickpeas, water, bay leaves, kosher salt, garlic cloves, and onion to the Instant Pot.

Give it a quick stir to mix everything together then, put the lid on and turn the vent to sealing,

Next, set the Instant Pot to Manual Mode at High Pressure for 45 minutes.

When the cooking cycle is complete, let the pressure Naturally Release for 20 minutes. When 20 minutes is up, carefully release any remaining pressure.

Once the pin has dropped, carefully open the lid. There will be some extra liquid – that’s fine. Strain the chickpeas to remove them from the liquid, then pick out the bay leaves, garlic, and onion. If you are not going to use the chickpeas right away, save some of the liquid for storing.

Let the chickpeas cool, then use them for hummus, your favorite dinner, or save them in the refrigerator for up to a week to use on salads or in other meals!

Say goodbye to soaking dried chickpeas for hours. These Instant Pot chickpeas are tender, flavorful, and ready for making hummus or your favorite dinner in just about an hour.

  • 10 – 12garlic clovesI usually just use one small head of garlic, then peel and smash the cloves to extract the flavor.

Storing: Cooked beans refrigerate well for up to 5 days.

Freezing: I like to freeze chickpeas and use them instead of grabbing a can. Transfer the beans, using a slotted spoon, to a large colander placed in a sink and drain. Then measure 1.5 cups into freezer-friendly sandwich bags, let the air out, seal, and freeze for up to 6 months.

To thaw: Place them on a counter for a few hours or in the fridge overnight. I wash, dry and re-use bags for next batch.

TIP: To thaw quickly, place them in a bowl with hot water for 5 minutes and then drain! Easy-peasy.

Save broth: Do not discard the liquid. Use as a base for making any soup. Especially, bean mushroom soup. Its a much healthier version than the liquid youll find in canned beans, but it acts the same way.

What Is Quick Pressure Release

Quick-release is the process of releasing the steam after cooking. To quick pressure release, carefully turn the valve from STEAMING to VENTING position. This will result in a strong jet of steam coming from the pressure release valve . Once the steam has released completely from the valve, the float valve will drop into the lid when the cooker has depressurised.

It is now safe to open the Instant Pot lid.

Cooking Beans Without Soaking

Rinse the dry uncooked chickpeas in a colander under water and remove any bad ones found.

Place 1 pound of chickpeas into your Instant Pot and cover with water by about 1 inch.

Lock the lid and place the pressure release handle in the SEALING position.

Press the PRESSURE COOK button making sure it is set to HIGH and set the timer for 35 minutes.

After the Instant Pot beeps to signal that cooking has finished, wait another 20 minutes to allow it to naturally release. Once the 20 minutes is up, slide the release handle to VENTING to release any additional pressure.

Once all of the pressure has been released, open the lid and taste-test one chickpea to make sure they are nice and tender.

If they need any additional cooking, cook another 10 minutes and give them another try.

When finished, drain liquid and use immediately or store in an airtight container in the refrigerator or freeze.

Dont throw that bean broth out though! Believe it or not, its a very valuable byproduct called aquafaba that has many amazing uses including an egg binder and even whipped topping for desserts.

Freeze in measurements of 1.5 cups to make using in recipes easier, as canned beans are 15 oz, which equals 1.5 cups.

    Do You Need To Soak The Garbanzo Beans Before Cooking

    Soaking dried chickpeas helps to reduce the indigestible sugar that causes gas and bloating, so probably this method works better for you if you have any digestive discomfort.

    If you don’t have any problem with beans, there is no need to presoak the chickpeas before pressure cooking.

    This recipe helps you substitute canned chickpeas and make your chickpeas at home without any preservatives or salt. It is an excellent recipe for those who have to follow a low sodium diet.

    How To Use Or Store Chickpeas After Cooking

    After beans are cooked, strain it and if you’d like, reserve the liquid. Water you’ve cooked beans in is known as aquafaba. There are many amazing recipes you can make from aquafaba. It’s actually a great egg replacer. Check out this list from Vegan Society for more ideas.

    Use chickpeas straight from the instant pot in whatever dish you’re cooking, or wait for them to cool off and parcel into freezer bags. Alternatively, you may refrigerate in an airtight container for up to 3-5 days.
