Pork chops are one of my favorite meals! Somehow they combine a down-home comfort food flavor with the appeal of a good steak, you know? And, if you add a creamy mushroom sauce? Oh. My. Goodness. Serious grub.

This all-in-one meal is a breeze to prepare and cook in the Instant Pot pressure cooker. A simple combination of herbs and garlic season the pork chops and potatoes perfectly, making for a flavorful and satisfying dish. These Instant Pot pork chops require minimal hands-on work the chops are just briefly seared right in the Instant Pot, so you won’t have to dirty another pan. This recipe calls for thick boneless pork chops, but you can use bone-injust double the cooking time.

How And Why To Slice Across The Grain

In the context of meat, the grain refers to the direction that the muscle fibers are aligned.

In the photo of flank steak above, you can see that the fibers run horizontally from side to side. The cut of meat isnt the only determinate in how tender it is, its also HOW you cut the meat. When you cut against the grain you cut through the fibers and shorten them. This makes the meat easier to chew.

Slice It Up And Serve It

Take the pork out of the Instant Pot and let it rest a few minutes. Then slice it into pieces, or serve it on a platter to be sliced at the table.

I like to make gravy from the broth left over in the Instant Pot. You can do that right in the pot no need to use a separate pan. Its incredibly flavorful and makes a really great gravy.

First, check the level of fat in the broth. If theres a large layer of fat on the top of the broth, strain it off first. You dont want greasy gravy! Turn the saute mode back on. Once the liquid is boiling, add a slurry of cornstarch . Whisk it until its thickened.

You can then serve your pork roast with potatoes and carrots, or with mashed potatoes. Pour the gravy over the top to finish the dish.

I have not been using my pressure cooker as much over the last couple of years. Not sure why. That said, my goal is to start using it more often. I made this Instant Pot Pork Chops recipe a few weeks ago, when my parents were visiting, and was reminded of just how good it was.

I usually serve it with rolls or bread of some kind. Pick your favorite!! This recipe is quite versatile, and I have some notes at the end you may want to refer to.

How Long To Cook Pork Chops In Instant Pot

Pork Chops can vary in the pressure cooker based on size, thickness and of course marbling. You will need to vary the cooking time slightly if you have different cuts of pork chops.

I use chops about 3/4 to 1 thick with bone in. Just like roast chicken, bone in meat is tender and has tons of flavor. If you have pork steaks they come out melt in your mouth tender but youll need to add a little bit of time if theyre thick. I personally wouldnt recommend thin cut pork chops in the pressure cooker.

  • Bone-In Center Cut Chops about 15-18 minutes .
  • Boneless Loin Chops I cook to 8-10 minutes.
  • Pork Steaks: Pork steaks 1 thick need about 20 minutes, they come out very tender.

If you have frozen pork chops and are pressed for time, you can make Instant Pot frozen pork chops but youll need to add about 5 minutes or so extra. Skip the searing step. Be aware that the Instant Pot will take longer to come up to pressure when you are starting from frozen.

On busy days, cooking pork chops for dinner has always been my easy solution. But now, these Instant Pot Filipino Pork Chop Steaks, cooked like Pinoy Bistek has been an even easier quick fix for me.

Friends have always asked for my Bistek recipe. There is no secret to it. Can You Freeze Instant Pot Pork Chops

Instant pot pork chops freeze well as long as they are properly wrapped to prevent freezer burn. An airtight plastic container will work well, and for double protection put the container in a Ziploc bag. Or wrap them in freezer paper and then put the freezer paper in a Ziploc bag.

They will stay fresh for 3-4 months. When it comes time to eat the instant pot pork chops, then take them out the night before and thaw them out slowly in the refrigerator. Then follow the heating instructions in the previous subheading.

Why Does Pork Shoulder Do So Well In The Instant Pot

The fundamental advantage of high-pressure cooking is the time it trims off of recipes that would otherwise require hours of low-and-slow cooking. Unlike pork chops or pork tenderloin, pork shoulder is a fatty, tough cut of meat, full of collagen-rich connective tissues and sturdy, well-used muscles. The hot, wet environment of a pressure cooker makes short work of any braise in a third of the time, your pork shoulder will be juicy, falling apart, and fork tender.

Cooking The Pork Roast

There will be some browned bits on the bottom of the pot from searing the pork. You need to get that up by adding liquid to the pot. Dont do this while saute mode is still on. Its very hot and the liquid will steam up immediately. It can be dangerous to stand over the IP when its that hot.

Add the broth and use a whisk to scrape the bits up. This adds great flavor to the broth, which will be used later to make the gravy.

Then put the trivet in the pot. Place the roast on top of the trivet. This is to keep the roast whole and to steam it rather than boil it. If you want, you can leave out the trivet. I just think the roast looks nicer when cooked on the trivet.

Close the Instant Pot and set it to pressure cook . The length of time you need to cook the pork for will vary depending on the size of your roast.

It is recommended that you cook a boneless pork roast for 15 minutes per pound in the Instant Pot. For a 3 lb roast, that would be 45 minutes. Cooking it this long will lead to a sliceable roast, not a fork tender roast.

PRO TIPS

If you want to slice the roast, dont cook for longer than 45 minutes or it can become dry. If youd rather have a fork tender roast that falls apart like shredded pork, you need to cook it for much longer, like 60 to 70 minutes. If shredded pork is what youre after, Id also recommend placing the roast directly into the pot, not on top of the trivet.

If its under, you can turn it back on for 5 or 10 minutes.

  • Ive made this dish a few times since creating the recipe. Occasionally I still get a burn message on my pressure cooker. When this happens, I just give it a few minutes. I dont open the lid, I just wait. After a few minutes, it will begin the cooking countdown and the burn message goes away. So if this happens to you, just be patient.
  • The French Onion Soup can be substituted with a can of Beef Consomme.
  • Also, the cream of chicken soup can be substituted with Cream of Mushroom.

Saute Onion And Garlic

*Note: Your Instant Pots inner pot should look quite brown. Dont worry! Your pot didnt burn, those caramelized brown bits will add yummy flavors to your pork loin.

Add one more tbsp olive oil in Instant Pot.

Then, add in sliced onions, then saute for 3 minutes.

Add in 1 bay leaf, 1 tsp dried oregano, 1 tsp dried rosemary, and minced garlic in Instant Pot. Then, saute for another 30 45 seconds until fragrant.

This Instant Pot Pork Chops recipe is going to be one of your favorites. We use boneless pork loin chops which come out so tender, and juicy. Then after they are cooked we make a very flavorful mushroom and onion gravy to pour over the top of them which just finishes them off to make one of our best instant pot recipes.

They are so easy to make and in less than 30 minutes your family will be asking for seconds.

I love pork chops and I make them so many different ways but my choice is always center cut with a bone and fat around the edges for the best flavor. 9 times out of 10 I will not go for a boneless piece of pork because its very lean and can tend to be dry especially if you overcook it.

However, I finally found a way that I love to make boneless Instant Pot pork chops and I am happy to share this recipe with you. In fact, Stephanie and I fight over who is going to eat the leftovers the next day, so by making extra pork chops in the instant pot we can both enjoy them 2 days in a row!
