If you use the correct canning method for the type of food you want to preserve, you will happily and safely preserve jars of delicious food for your pantry. However, if you mismatch the food and the canning method things could get scary . Fortunately, it’s really easy to get this right and dive into totally safe, worry-free canning…once you understand two simple things.

The first thing to understand is that there are two different kinds of canning. One is boiling water bath canning, which requires no special equipment beyond the canning jars. The other is pressure canning, which requires a very specialized piece of equipment called a pressure canner .

If you love to can veggies or other foods, and you own an Instant Pot, you may be wondering if you can do canning in an Instant Pot.

The answer is you can, but it is limited, and not all types of canning processes can be done in an Instant Pot.

There are two ways to can foods. One is called water bath canning, and the other is called pressure canning.

The pressure canning is the type used most often for foods with low acid levels, and water bath canning works the best with food that has a high acid level.

Thats because high acid foods will be able to kill any bacteria so you wont get food poisoning. Meanwhile, low acid foods cant do that unless you mix the two types of food together. That can be done by adding in things like vinegar or lemon juice.

So, how can these methods be modified to be safe if you want to can using your Instant Pot? Here are some ways to do that:

Water Bath Canning

Firstly, you have to make sure your canning jars are sterilized, which can be done in an Instant Pot.

Put some water and vinegar into your Instant Pot, then put the number of jars that will fit onto a rack and put it inside the Instant Pot and close the lid. Then run the Instant Pot steam cycle for at least a full minute.

Next, pour in more water and vinegar into the Instant Pot, then pour the food into the hot jars and be sure to leave at least a quarter-inch of headspace in the jars.

How Long Does It Take To Cook Steak In An Instant Pot

First, we have the shape of the steak. Are you cooking an entire piece or will you cube/shred the meat?

If youre cooking an entire piece , you should also decide on the result youre aiming for . Still, regardless of the case, you shouldnt use thick pieces the heat must be able to penetrate the meat from top to bottom.

For a rare steak, you only need to use the saute function. For medium and well-done you will need to top the sauteing with some pressure cooking.

I like my steak well-done so I usually leave it in the Instant Pot for about 15 minutes, but you should also adjust the time and temperature according to the size of the steak.

Unlike other rib cooking methods, which take hours and require active tending, making ribs in the Instant Pot is hands free and comparably fast. The Instant Pot locks in moisture and makes the ribs tender in a fraction of the time.

In addition to the use of the Instant Pot itself, I have a few key tips to ensure your Instant Pot rib efforts are richly rewarded.

  • Use a Dry Rub. To start your ribs on a delicious note, cover them generously with a delicious dry rub.

The rib rub recipe Ive included here uses basic pantry staples you probably already have, like chili powder, garlic powder, and cayenne, to give the ribs loads of flavor. If youd like to make the ribs more spicy, feel free to bump up the amount of cayenne.

To balance the spice, I also add brown sugar to my Instant Pot Ribs rub. I grew up loving the brown sugar/molasses flavor of Kansas City BBQ, and the brown sugar reminds me of some of my favorite KC BBQ joints.

Can You Cook In A Pressure Canner

The answer is: Yes, sometimes.

It really depends upon the food you want to cook and the brand/size of pressure canner you have.

  • First, you must check the manual of your particular brand and model size to verify it is okay to pressure COOK in your canner. Some brands vary as I describe below.
  • You should avoid cooking things that bubble up or foam because they can potentially clog and block the steam vent of the canner. A blocked vent would cause the pressure to build in the canner which would be dangerous.
  • There are two main brands of pressure canners here in the United States: All American and Presto. And there are different sizes/models of each.

    Note: To make things just a little more confusing, Presto also makes cookers and they call their canner a canner/cooker.

    The All American Pressure Canning manual states that you should NEVER cook the following foods in the canner: rice, applesauce, beans, cranberries, rhubarb or spaghetti plus any other food you think might foam up.

    However, the Presto Pressure Canning manual states that you CAN cook these items IF you only fill the canner half way so that the food can not foam up to the lid.

    So to cook in your pressure canner, you must find or look up the manual for your brand and model and verify its use.

    Pressure Canning Times For Comparison:

    • 15 minutes to get it boiling
    • 10 minutes of venting
    • 20 minutes to bring it up to pressure

    So thats 45 minutes of the burner on high, right there before you even get started.

    Then finally you have the actual processing time, during which the burner is lower, on about medium.

    So 45 minutes plus the actual processing time. Energy is being used during that time.

    Then about 30 minutes, when the burner is off, while you wait for full and proper cool down before you can take the lid off . No energy, however, is being used during this time.

    When it has cooled, then you give it 10 minutes with the weight off, and then a final 10 minutes with the lid off, before you remove the jars.

    That 10 minutes processing time at sea level can up being 110 minutes, 55 minutes of that is active energy usage time.

    If you have your Instant Pot near cabinets, be mindful when you do a quick releaseit can get a lot of condensation on your cabinets, which can damage them over time.
