What Is The Best Cut Of Meat For This Recipe

When I make pot roast, I typically go for one of three cuts of meat, a chuck roast, a brisket, or a bottom or top round. Heres why:

  • A chuck roast is tender and falls apart easily when slow cooked. This is due to the chuck roasts amount of marbling that makes it juicy when cooked down. This also makes it easy to shred. A chuck roast is melt-in-your-mouth delicious!
  • A brisket has a lot of connective tissue that makes it tender after a long day of being cooked slowly. However, brisket is a little pricier than a chuck roast so keep that in mind.
  • A bottom or top round cut of beef is what is used when making roast beef that you get sliced at the deli. Coming from the rear of the cow, its leaner than the brisket and chuck roast. Because of this leanness, you might want to add a little extra fat while it cooks so it doesnt dry out. You can do this with oil or butter.

Is Brisket Good For Shredding

What Vegetables To Serve This With

My personal favorite is to serve this with some sauteed Brussels sprouts, but I know potatoes and carrots are a much more popular option.

I think the potatoes and carrots will taste best if you roast them separately in the oven, or you could try making my popular Honey Glazed Carrots!

If you want to cook the potatoes and carrots in the Instant Pot with the roast, youll need to decrease the cooking time by 15 minutes and do a quick release. Then add in halved potatoes and carrots. Cook everything for the remaining 15 minutes and then proceed with the natural release for 30 minutes.

What If My Pot Roast Is Tough

If after cooking the pot roast, it is still tough, all you need to do is cook it longer. If the beef is still tough, it just needs more time for the braise to do its magic and break down the connective tissues in the beef.

This Instant Pot BBQ Rump Roast is absolutely delicious! It is a great flavorful main course! Perfect for Sunday dinner. I have adapted this recipe from a recipe that would take all day to cook in the oven, to a quick and easy Instant Pot recipe! The Instant Pot makes this roast tender and juicy. The sauce is thick and tasty! I love it and I think you will too! Make it with me.

I use a rump roast for this recipe because it is a great cut of meat. I try to always grab one that is between 4 and 5 pounds. For Instant Pot cook time, I say to cook for 12 minutes per pound. I always round up too. You also want to allow the Instant Pot to naturally release for 10 minutes, before quick releasing the pressure. This will allow the sauce and flavors to be incorporated even more.

I love my Instant Pot! I seriously love how easy it makes recipes! This recipe was shared with me by my Grandma B. She made this recipe for my mom all the time and it is one of her favorites. It is definitely a traditional recipe in my family. I hope you enjoy it!

What Is Rump Roast

A rump roast is a cut of beef from the top of the back end of a cow, as far back as you can go before reaching the tail. The entire rump and top of the back leg is called the round, but only the top is rump. Whole, it averages 15 pounds, but the entire rump is most often cut into three or four roasts that are 3 to 4 pounds each. Rump roast comes from a muscle group that gets a lot of exercise therefore, it has little fat and is extra lean. It will be tough unless you cook it correctly.

Ingredients Needed For The Perfect Beef Pot Roast And Gravy:

  • 4 pound beef pot roast 3-4 pounds,
  • 2 Tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic salt
  • 2 cups beef broth, divided
  • 1 onion roughly chopped into large pieces
  • 1 pound baby carrots
  • 3 celery stalks roughly chopped into large pieces
  • 3 garlic cloves minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary leaves

Gravy:

  • 4 cups drippings from slow cooker from the slow cooker after roast is done cooking
  • 4 Tablespoons butter
  • 3 Tablespoons flour

How To Cook A Roast

Pot roast recipes typically call for thawed beef. Since it can take up to a few days to fully thaw a roast, and weve all had those moments where we forgot to take the meat out of the freezer, I decided to find out if you could get incredibly tender roast beef using a frozen roast in the Instant Pot. The answer is a definite yes!

This roast is pull-apart tender and nobody will ever know that you forgot to defrost your roast in advance.

To make it, simply place your trivet in the bottom of the Instant Pot, add the frozen roast, pour the broth over the roast, sprinkle the seasoning over top, add the garlic and onion, cook it, and let it natural release for 30 minutes.

A quick note its important to pour the broth over the frozen roast rather than adding it to the bottom of the pot before adding the roast. The liquid thaws the edge of the roast just enough to allow the seasoning to stick to it. It makes the final result so delicious!

Some Common Mistakes To Avoid

Its not easy to make the perfect roast. Here are some frequent blunders to stay away from:

  • Overcooking your meat: If you cook it for longer than advised, youll end up with a chewy piece of meat. Youll be less likely to overcook your meat if you put it in the slow cooker after searing it than if you placed it in the oven.
  • Cooking meat straight from the refrigerator: Before putting your meat in the oven, bring it to room temperature. If you cook it straight from the fridge, it will suffer from thermal shock, which will affect the taste and tenderness of the flesh.
  • Cutting into your meat right after its finished cooking: For the most part, this guideline applies to roasts. Wrap your meat in tin foil while its still hot after its completed cooking. Allow it to cool completely before slicing it. This crucial step ensures that your meat remains soft, juicy, and flavorful.
  • Cutting your steak with a dull knife: Use your sharpest knife to make thin roast beef slices for dishing. This procedure is significantly safer, and the end result will be more picture-perfect.

    Instant Pot Venison Rump Roast

    To begin I prepared the potatoes by peeling and cutting them into quarters. I also cut up an onion.

    Next I put some olive oil in the Instant Pot, turned it to the saute function and when hot placed the roast in the Pot.

    I browned the roast on both sides before removing it and setting it on a plate.

    Now I removed the roast from the Pot and added a cut up yellow onion and some sliced mushrooms.

    I cooked them on the saute function until the onions were soft.

    Then I poured in 2 1/2 cups of beef broth and deglazed the bottom of the Pot making sure to remove all the brown bits.

    Next I placed the trivet in the Instant Pot and lowered the rump roast on top of it.

    I have a steamer basket for my Instant Pot and I used it for the potatoes and vegetables. I placed the basket on top of the meat.

    Then I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 32 minutes.

    After removing the lid I used oven mitts and carefully removed the potatoes and the roast.

    When the gravy was ready I sliced the rump roast.
