Get The Most Out Of Your Instant Pot

We cooked chopped pineapple with white grape juice for 10 minutes, then poured the pineapple and juice into four sterilized pint jars. We followed Instant Pot’s directions, which often referred directly to the USDA’s guide to home canning, created with the National Center for Home Food Preservation. After a processing time of 15 minutes and a natural steam release, we removed the cans and the lids popped from the vacuum created inside. A week later, we cracked open a can and found that it was firmly sealed, and the pineapple tasted fine.

Though the pineapple canning appeared to be a success, we wouldn’t issue a blanket recommendation to use the Max for all your canning needs because we couldn’t verify that the internal temperature of the jars reached 240-250 degrees. The Max’s control screen showed that the pot’s internal temperature consistently surpassed 250 degrees, but we hesitate to rely on that reading since there was a discrepancy during the sous vide testing. If you want to use the Max for home canning, it would be wise to either stick with high-acid foods or wait for an official recommendation from the USDA or the National Center for Home Food Preservation.

Whats Different On The New Instant Pot Max

The new Instant Pot Max has some new features that could be genuinely useful when it arrives in June: Faster cooking due to its higher maximum pressure and a more accurate temperature sensor for sous vide cooking are a few highlights. But this doesnt make your current pressure cooker passé. The Max is a high-end addition the Instant Pot lineup that wont replace any existing models. We spoke with Instant Pots CEO, Robert Wang, and vice president of product, Yi Qin, about the Maxs new features and plan to test one as soon as theyre available. In the meantime, heres what you can look forward to.

Use stovetop pressure cooker recipes without modifications

The Instant Pot Max will be the fastest multicooker once it arrives because it will be the first that can cook at 15 psi, a level that was previously achievable only with stovetop pressure cookers. This also means the Max can handle stovetop pressure cooker recipes without any adjustments and can be used for pressure canning. But it will launch in only a 6-quart size, which holds just four pint jars at a time.

  • The steam release valve releases bursts of steam as its coming to pressure. The Max is noisier than other Instant Pots when its coming to pressure. The bursts of steam did make me jump now and again. The steam bursts only occur for a short period of time and are getting rid of unsaturated steam . The liquid loss is minimal, but the bursts of steam do take some getting use to.
  • Dont use the automatic quick release with things that foam.
  • The pulse release takes a long time, so you may want to reduce your cook time if youre using it. With just two cups of water in the inner pot, it took 16 minutes for the pressure to release using the pulse release.
  • You can switch between NR, PR and QR but it isnt as quick as opening and closing the valve manually.
  • Steam Release Valve Doesnt Need to Be Reset you never have to worry about whether your steam release valve is in the open or closed position. However, you do need to remove the steam release valve cover and make sure the steam release valve is properly seated before each use.
  • The Max remembers your last setting so be sure and check pressure and release settings each time you use it.

Can You Air Fry In An Instant Pot

You sure can. Where the Ninja Foodi’s crisping lid once had a leg up is no longer Instant Pot’s blind spot. The fall 2019 collection brought the first Instant Pot Duo Crisp, which opened the door for a collection of other air-frying Instant Pots with Pro, Plus, or both tacked onto the end of the name. There are also multiple dedicated air frying convection ovens by Instant Brands that do not pressure cook.

For folks who already have an Instant Pot and don’t want to replace it just to buy the Duo Crisp, Instant Pot released a standalone air fryer lid that attaches to regular Instant Pots and turns them into an air fryer. This lid works on all existing models with the exception of the Instant Pot Pro Plus, the now- discontinued Duo Evo Plus, Duo SV, Smart WiFi, or Max. This lid is compatible with the Duo Nova, which is also discontinued.

Pressure Canning Jars: Basic Steps

Most importantly: check jars, lids and bands. Examine them carefully to make sure there are no nicks, chips, cracks or sharp edges. Recycle imperfect jars. Use new flat metal lids each time. Wash jars and rings in hot soapy water and rinse with hot water. It is not necessary to sterilize jars for pressure canning.

Most foods may be packed raw in jars. Raw food should be packed tightly because it shrinks during processing. Food may be also preheated or partially cooked and packed hot in jars. Hot food should be packed fairly loosely. Allow headspace between food and jar closure for a good seal. Release trapped air bubbles by using a bubble remover spatula down the sides of the jar. Wipe rim of jars free from seeds, pulp, liquid, etc. Secure lids and process according to canner manufacturer instructions and recipe.

Place jars on rack in a canner containing 1 to 2 inches of water. Leave ample space between jars to permit free circulation of steam.

When processing time is completed, turn off heat. Allow pressure to reduce normally. It takes about 25 minutes for the pressure to drop in a pan filled with jars. Once pressure has dropped, remove the regulator weight / control value and the cover . Lift jars out and sit on several thickness of cloth . Do not tighten screw bands. After 12 hours, remove the screw bands.

Max Should Back Off Sous Vide

The Max provides a new function that lets you sous vide . With this method you vacuum-seal your food in a plastic bag and let it cook in a temperature-controlled water bath. The water circulates and cooks the food that’s in the bag. Sous vide is known for being a precise and consistent way to cook your meals in theory, you can cook steaks at the same water temperature multiple times, and the steaks will come out with the same level of doneness each time.

Unfortunately, the Max isn’t reliable enough to be trusted with sous vide. The Max failed to heat the water to the intended temperature during multiple tests, which left food undercooked. For example, we set the sous vide temperature to reach 140 degrees Fahrenheit to cook a steak. After about 43 minutes, the Max indicated that it had reached the set temperature and started the cook timer. However, a temperature probe we inserted in the Max showed that the temperature of the water inside had reached only 120 degrees Fahrenheit.

The sous vide cooking feature wasn’t a reliable way to cook with a water bath.

Instant Pot would have been better off leaving this cooking method to companies that have made water bath cooking their business. We can’t recommend the Max for sous vide until it address its temperature inaccuracies.

Why This New Instant Pot Has Us Impressed

The Instant Pot Max claims to be the first electric pressure cooker to maintain a steady 15 pound per square inch of pressure, which should keep foods at 240°F or higher and make it a great convenience for home canners, says Sharon Franke, a writer for Kitchn who spent more than 30 years testing and reporting on gadgets and appliances at the Good Housekeeping Institute.

However, Franke cautions, the USDA and the National Center for Home Food Preservation warn against the use of electric pressure cookers for canning even when the appliance has a canning function. Thats because the temperature in the water and the jars during the heating-up and cooling-down periods is really important when it comes to safety.

Were told that the Instant Pot is waiting for approval from the USDA. If it gets the good word, then this will be the first electric pressure cooker thats approved for canning. Thats a huge deal! Until then, however, our advice is to not use the Max for home canning.

High-acid items like fruits, pickles, and jams and jellies can be safely canned in a boiling water bath on the stovetop, but low-acid foods like vegetables, stock, soup, and meats must be processed at 240°F to 250°F to eliminate the risk of spoilage from the bacteria Clostridium botulium and the spread of its spores, explains Kelli Foster, Kitchns associate food editor. But is that a problem? Not necessarily! As we showed earlier, converting recipes which are intended for the standard of 15 psi to whatever the operating pressure of your electric pressure cooker happens to be is extremely quick, easy, and still provides a great deal of efficiency!

In fact, given that an electric pressure cooker only adds to the already fantastic convenience provided by a non-electric pressure cooker over more traditional cooking techniques, this is just one factor which you should take into consideration, and by no means should you think of it as a deal-breaker!

Is The Max Worth Its Higher Price Tag

Comparing the Presto Digital and Instant Pot Max for Pressure Canning

The Max is probably one of the most user-friendly Instant Pots, and its certainly a quality device. I think it tries to be too much, but it doesnt capture the same magic as the Duo. It also feels a bit disjointed. On one hand, the Max feels like its for the advanced cook, providing extra controls, more temperature settings, and features like canning. But on the other hand, it feels like its for a novice, with features like button-controlled pressure release and indicator icons that walk you through everything.

I feel like Instant Pot could have left out some features, like pulse release and even the Sous Vide mode, and instead given the Max Wi-Fi capabilities like the Instant Pot Smart. Or, Instant Pot could have left these features out altogether and given the product a lower price tag. The Max typically sells for around $200, which feels exceptionally high.

Pressure Cook Can Sous Vide And More

The Max has eight primary button programs surrounding the display: Pressure cook, sauté, rice, sous vide, slow cook, soup broth, canning, and yogurt. But, you can access a variety of options and specifications within these main programs.

When I pressure cooked bone-in chicken breast, I could choose between low, high, or max pressure. I could also choose to have the pressure naturally release, quick release, or pulse release. Pulse release lets go of the pressure in quick bursts. However, after trying the pulse release feature a few times, I decided I was going to forgo using it again because it took way too long to fully release the pressure. By the time it finished, I wasnt really all that hungry anymore .

The sous vide function works well, and it maintains an even temperature in the water bath. However, given the size of the inner pot, I could only fit four small steaks in the pot. I also didnt like the fact that I had to keep the lid closed on the Max, and this means I couldnt see inside the pot while sous vide cooking since the lid isnt transparent. The steak still came out excellent, as if I prepared them using a good immersion circulator.

I used the canning function to can fresh jalapeño peppers. I just sterilized the jars and lids, filled the sterilized jars with peppers and a bit of water, placed them on the steaming rack, added water to the pot, and pressed canning. The process was extremely easy and the peppers came out edible.
