How to Cook a Pork Roast in the Instant Pot

Pork roasts generally come tied up or covered with a string netting. This is to keep the meat together in one piece while it cooks. I usually remove all of that, so I can remove the skin and fat cap. Then if the meat isnt in one solid piece, Ill tie it a couple of times with string to keep it together.

I find that pork shoulder is the one that needs to be tied up. Pork leg generally stays in one piece.

In most cases, the roast will come with a large fat cap and the skin left on. I like to remove those when cooking in the Instant Pot. If you were to cook this roast in the oven, it would have time for the fat to render and the skin to crisp up, but that doesnt happen in the Instant Pot.

So grab a large knife and carefully cut the skin and fat away from the meat, trying not to cut into the meat. Its better to leave on a little extra fat, which will help with moistness and flavor.

Instant Pot Pork Roast Frozen

This is a great recipe especially if you buy meat in bulk online or from local farmers like we do every year. Then whether it is fresh, defrosted or rock solid it will come out great every single time.

Without a bone it cooks faster than if you had a pork butt or frozen pork shoulder. I have had success with those as well but this is quick and easy because theres nothing to remove.

Youll need to use the pressure cook button on high if your pot doesnt have the meat/stew function. They are the same except that the latter automatically sets to 35 minutes unless adjusted.

One big tip to remember when figuring out the Instant Pot cooking times for meat is that you need a natural pressure release when done. This is important so that the inside remains tender and doesnt dry out.

Whether youre cooking pork or beef it is important for both. This allows it to become fall apart delicious just like a slow cooker would. It may take 20 minutes to 30 minutes for all the steam to release so you can remove the lid.

Be very careful once its lifted and face it away from you once it is taken off. Dont drain all that wonderful liquid though when you remove the protein, youll want it to make pressure cooker gravy.

Use just a bit of cornstarch whisked into the hot liquid to thicken it up. Push saute and allow it to bubble together for about 2 minutes and then it will be done and ready to enjoy.

Time needed: 55 minutes.

You can make Instant Pot Pork Roast using any of three cuts of meat: a pork butt, a pork shoulder, or a pork shoulder blade roast. You may also see a cut in your grocery store labelled as a boston butt, which works as well.

Simply put, pork butt has nothing to do with the actual butt of a pork. Each of these cuts of meat comes from the shoulder region of the pig: Imagine a pig shoulder, then segment it into an upper and lower segment. The upper segment is the pork butt the lower section is the pork shoulder.

Does Thickness Of Pork Butt Matter

Yes and No. Normally, your meats thickness plays a major role in determining the best pressure cooking time.

With this Pork Roast Instant Pot recipe, since were slicing the pork butt before pressure cooking, your pork butts original thickness wont matter.

This works because were using Pork Butt Meat with nice marbling. So, as long as youre able to cut your pork butt into 0.5-inch thick, youre good to go.

What Is An Instant Pot

Instant Pot is the brand name of a pressure cooking. Unlike traditional pressure cookers, an Instant pot doesn’t require heat from a stove. Instant Pots simply plug into an outlet, like a slow cooker.

As an Instant Pot heats up, the liquid inside creates steam, building up pressure in the pot and cooking food faster.

The high pressure and steam also helps to force liquid into the food, which helps to make tender meat while keeping it nice and juicy!

What’s also great about the Instant Pot, as opposed to traditional pressure cookers or slow cookers, is that they have a sauté feature, which is pretty much like heating a pot/pan over medium-high heat on the stove. This allows you to brown meat and make gravy!

How To Make An Instant Pot Pork Roast

The great thing about making a pork roast in the Instant Pot is that everything can be done in on pot, including making the gravy! Here are step-by-step instructions with tips and tricks.

  • Season the pork butt. This step is crucial. Pork butt needs lots of seasoning, so be sure to generously cover ALL sides of the pork roast, rubbing and patting the seasoning into the roast. I like to mix out my own seasoning blend that’s both sweet and savory. It pairs perfectly with pork!
  • Sear the pork roast. Searing all sides of the pork roast creates a nice brown crust on the exterior of the pork, sealing in the juices and adding lots of flavor. Don’t skip this step! This can all be done in the Instant Pot using the sauté feature. Once the pork is nicely browned on all sides, transfer the pork to a plate and set aside.
  • Add onion and garlic. Continuing to use the sauté feature, you will caramelize onions and sauté some garlic for added flavor.
  • Deglaze the pot. Adding a small amount of liquid to the pot while it’s hot causes the liquid to boil rapidly and deglaze the bottom of the pot. Be sure to use a spoon to scrape the browned bits off the bottom of the pot – this is where the flavor is at!
  • Cook pork on high pressure. Now it’s time to cook the pork roast. Add the pork back into the pot, seal and cook on high pressure until fork tender!
  • Serve! Shred the pork, the drizzle the gravy all over the pork and vegetables. Serve with more gravy on the side for dipping!

    Pressure Cook Pork Roast

    The last step before you pressure cook your pork roast is to put everything back into your pot! Pour the onions and garlic into the wine sauce, stir and then place the Instant Pot metal trivet into the bottom of the pot.

    Add in your sprigs of rosemary and place the pork roast on to your metal trivet. Thats IT! Cover your Instant Pot, seal it, and cook on high pressure for 70 minutes.

    Make Sure Its Pork Tenderloin And Not Pork Loin Roast

    Easy Instant Pot Pot Roast (Tender and Juicy)

    Both cuts of meat can be right next to each other at the grocery store, but be aware that they are very different cuts of meat. Make sure the package clearly says pork tenderloin. It will be long and narrow, usually about 1.5 to 2.5 inches in diameter. I like to use the vacuum sealed packages that will say if the tenderloin contains a solution. This solution is the brine and is a big step saver and helps to keep the meat tender and juicy. So always keep an eye out for it its the best buy.

    How Long To Cook Pork Tenderloin In An Instant Pot

    Times may vary slightly but I always cook 1lb tenderloins for 5 minutes on high pressure and then naturally release the heat for another 10.

    Before serving make sure the internal temperature of the pork loin is at 145°F at its thickest point then allow it to rest for 5 minutes before slicing and serving. While the pork is resting, make the sauce.

    How To Make Pressure Cooked Pork Roast

    Start by adding brown sugar, salt, pepper, and cayenne pepper to a dish or large zip-able plastic bag. Add in pork shoulder and rub to coat the pork well.

    Next, set your Instant Pot to the saute function.

    When its hot, pour in a splash of olive oil, then add the pork. Sear for 3 minutes on each side, until golden brown. Set aside on a plate for later.

    In the Instant Pot, add the onion, garlic, rosemary and thyme. Cook until fragrant, about 2-3 minutes.

    Then, add in the tomato paste and stir until well-mixed. Pour in the balsamic vinegar and chicken broth.

    Quick tip: At this point, make sure to scrape any browned bits that are stuck to the bottom of the pot. Otherwise, the Instant Pot might give you a burn warning!

    If you have one, place a metal or silicone trivet at the bottom of the Instant Pot. .

    Next, place the seared pork in the Instant Pot. Put on the lid and set the valve to seal, then select the meat/stew setting for 70 minutes.

    Once the timer goes off, wait 10 minutes to allow some pressure to release naturally. Then turn the valve to vent and release any remaining pressure.

    Take the roasted pork out of the Instant Pot, and its ready to serve!

    TIME SAVER: Make a large batch of this spice combination & keep in a sealed container. Then, it will be ready to go anytime you need a flavorful seasoning for a recipe.

    Once all of the seasonings have been added, place the lid on the base and secure.

    Since each instant pot and pressure cooker is a bit different, check the instructions for your model to determine the necessary cooking time. For example, I set my Instant Pot for 2 hours to cook 6 lbs of meat.

    COOKING TIP: For faster cooking time, cut the pork roast into large chunks. This will cut the cooking time to ~1.5 hours for 6 lbs of meat and ~45 minutes for 3 lbs of meat.

    After the pressure has been released and the lid unlocks, remove the lid & shred the meat using two forks.

    How Long Does Instant Pot Pork Roast Last

    After your roast has cooled, store it in an airtight container in the fridge for up to four days. You can use a glass or plastic container or set it on a plate and wrap it in several layers of aluminum foil or plastic wrap.

    If you cooked up a large roast and want to store it in the freezer, we recommend pre-slicing it so it takes up less freezer space. Allow pork to cool completely before moving to a freezer bag or container. Frozen pork roast will last for up to three months.

    Tips On Cooking A Juicy Instant Pot Pork Loin Roast

    Do not start cooking until your meat is at room temperature. Your meat should be at an even temperature throughout. This ensures that the whole pork loin cooks evenly at the same time. Overcooking will dry the pork loin.

    Do not over poke the pork. When rotating the pork loin to sear or to remove the netting, be mindful about poking. Over poking will cause the juices to drain. Therefore, causing a dryer cut of meat.

    Use the quick release on the Instant Pot. Your pork loin will continue cooking if you dont release the pressure. You want to avoid that since overcooking means a dry meat.

    Be patient. Allow your cooked pork loin to rest on the cutting board before serving. The 15 minutes natural release method will moisturize the meat again and brings out the juices and flavors.

    Garnishes. You can also add garnishes such as orange slices, rosemary, cranberry, apple, and more.

    Can You Use Frozen Pork Tenderloin

    You can use a frozen pork tenderloin in this recipe. You will skip the browning step because frozen meat will not sear well. Put the frozen pork tenderloin and sauce ingredients in the Instant Pot. Pressure cook on high pressure for 13 minutes and then allow the pressure to release naturally for 10 minutes.

    Alternatively, you can partially thaw the pork tenderloin by placing it in cool water for 10-15 minutes. Once the outside of the pork is thawed you can brown it on sauté in the Instant Pot. Then pressure cook for about 10 minutes on high pressure, followed by a 10 minute natural release. The exact cook time will depend on how frozen the pork is.
