Brown Chicken In Instant Pot

First, press Saute button to Sauté More function to heat up the Instant Pot. It will switch to ON on the screen.

Wait until it says HOTon the screen .

*Pro Tip: Make sure Instant Pot is as hot as it can be in order to induce a Maillard reaction.

Add 1 tbsp olive oil in the Instant Pots inner pot, and ensure the whole bottom is coated with olive oil.

Pat dry the chicken thighs with a paper towel. Season one side of the chicken thighs with kosher salt and black pepper. Place the chicken thighs in Instant Pot , then brown for 3 minutes and 30 seconds. Season the other side with salt and black pepper, then brown this side for 3 minutes.

*Note: We are overcrowding the chicken in Instant Pot, but it will work fine for this recipe.

How To Make Instant Pot White Chicken Chili:

  • Press the SAUTE button. Add olive oil to hot pot. Add in chicken, onion and garlic powder and cook for 4-5 minutes or until onions are translucent and the chicken starts to brown .
  • Stir in beans, broth, chilies and seasonings. Place the lid on the top of the Instant Pot. Move the valve to SEALING .
  • Press the MANUAL button and set timer for 7 minutes.
  • When the timer is finished, move the valve to VENTING and do a QUICK RELEASE with the pressure .
  • Remove the lid and stir the contents of the pot. Press CANCEL to turn the KEEP WARM feature off.
  • Stir in sour cream and whipping cream, mix well. Scoop into bowls and serve.

  • Dont cook the cream cheese with the chicken chili because dairy tends to curdle when cooked under pressure. Its best to add it at the end and let it melt in the hot soup.
  • To make dairy-free you can leave out the cream cheese, its still delicious!

    How To Make Shredded Chicken In The Instant Pot

    Place the chicken breast in the Instant Pot. No rack needed.

    Sprinkle the Mrs. Dash Seasoning and salt over the top of the chicken breasts.

    Lock the Instant Pot lid into place. Then set on Pressure Cook High for 10 minutes.

    Once the timer goes off, perform a Natural Release and allow the steam to vent for 5 minutes, or until the valve button drops. At this point, it is safe to open the lid.

    Preparing The White Chicken Chili

    • Turn the instant pot to saute, add in 1-2 teaspoons of oil, and allow to heat.
    • Once the oil has heated, add in the minced onionsgreen chiles, oregano, and cumin and saute for 2-3 minutes or until onions begin to soften and spices are toasted.
    • Add in the garlic and toast for 1 minute longer. Turn theInstant Pot OFF.
    • Add in small amount, about ½ cup, of chicken stock and scrape off browned bits on the bottom of the inner pot. Don’t skip this step, or you could end up with a burn notice.
    • Add in the cooked dried beans or canned beans that have been rinsed and drained, and then nestle the chicken into the liquid. Season with a pinch of salt.
    • Seal the Instant Pot and be sure vent knob is pointed to sealed. Cook on HIGH pressure for 15 minutes if using fresh chicken and for 20 minutes if using frozen chicken.
    • Once cook time has elapsed, let the pressure release naturally for at least 15 minutes. This will ensure the chicken stays tender, not to mention prevent hot liquid from sprewing out the vent knob.
    • Once the pressure has been releases, open the Instant Pot and remove the chicken to a bowl or cutting board to shred or chop.
    • Add the shredded chicken back to the chili and mix everything to combine and warm through.

    Then place the lid on and lock it. Use the manual keys to set the Instant Pot to 13 minutes high pressure.

    After the cooking has completed, use the quick release lever to release the pressure.

    Carefully remove the chicken thighs, and use two forks to shred the chicken.
