This recipe for an instant pot pork roast makes a flavorful, sliceable pork butt roast with a rich onion gravy. It cooks in less than half the time of an oven pork roast with just a few ingredients.

We did lots of research and include tips on timing and variations.

If you are wary about fat in your meat, this recipe is probably not for you. Although the fat adds lots of flavor and most of it cooks off, you might want to try our oven-based boneless pork roast with gravy or sous vide pork roast instead. Both recipes use different pork cuts.

Technically, instant pot pork roast is not really roasted. Its closer to braised. But its quicker, easy and flavorful.

A pork butt usually requires low and slow cooking. The instant pot speeds it up considerably with similar results.

Many recipes on the internet cook a pork roast and shred it for pulled pork. This is an instant pot pork roast recipe for sliced pork and gravy, not shredded pork.

Why We Love This Pressure Cooker Pot Roast

This Instant Pot Roast is so tender it falls apart when you try to take it out. It has such great flavor, that you can even skip the searing if you want .

One thing it is missing? Mushy vegetables.

Vegetables in the Instant Pot cook very quickly, often just a few minutes or less, so its better to leave them out while the roast cooks, and add them later at the end.

You know Im not into any extra unnecessary steps , but the potatoes and carrots will cook in just a few minutes and if you buy small, pre-washed potatoes, you dont even need to chop them.

About The Vegetables In An Instant Pot Beef Roast

One of the big challenges of making a pot roast in the Instant Pot is avoiding mushy vegetables. Many recipes put them in with the roast, which leads to disintegrated onions, mushy carrots, and mashed potatoes. Other recipes wrap the veggies in foil to protect them a bit, but those too get reports of mushy veggies. Plus, I like to have my carrots and potatoes soak up the wonderful flavor of the beef broth and onions. They wont get that wrapped in foil. I also am not the biggest fan of pressure cooking foil with my food, although I do occasionally do so.

My solution is to pressure cook the beef roast first, remove it to a plate and tent it with foil, add the vegetables to the broth, and pressure cook for 5 minutes. Use 2-3 minutes for firmer vegetables and 8-10 for softer. It doesnt hurt the meat to rest a bit like that anyway. I do cook initially with onions as well, but I add more at the end to have some firmer onions in the mix.

How Long To Cook Roast In Instant Pot

Using this recipe, it takes 60 minutes at high pressure to cook a 3-pound pot roast in an Instant Pot. Add to that the time that the pot takes to come to pressure and the time needed to release the pressure, and you’ll need approximately 90 minutes to make a roast in the instant pot.

In the oven, a pot roast cooked low and slow takes from 3-4 hours, and a slow cooker pot roast takes at least 5 hours. Using the Instant Pot to make pot roast is so much quicker!

If your roast is larger than 3 pounds, you should cook it at high pressure for 20 minutes per pound.

How to make Pot Roast in your Instant Pot

It seems like every time a person asks in a social media group for an Instant Pot roast beef recipe, a fair number of people chime in telling people not to do it and asserting that the best roast will always come from traditional methods. I think there is a valid basis for that in that I personally believe that a good roast cooked low and slow for many hours will always be the superior product. BUT Instant Pot pot roast can be nearly the same and done in less time. For a person without access to an oven or who wants a quicker version, the Instant Pot is a great way to make roast beef.

Add The Rest Of The Ingredients

Pour the Worcestershire sauce on top of the roast. Add the onion, potatoes, carrots, rosemary, and remaining 3 cups of broth.

Mix It Up: Add another root vegetable such as parsnips, sweet potatoes or turnips if desired.

Then, place the lid onto the instant pot and turn the valve to the sealing position. Turn to high pressure for 50 minutes. Once the cooking time is up, do a quick release and carefully remove the vegetables and meat. Set aside.

The timing below will vary a bit depending on how pink you want it to remain inside. Most of the time you want to keep some and not leave it until it is well done, typically. We are adding vegetables at the end too so others may say 1 hour but we do 10 minutes less to account for that extra time for the veggies.

    How To Make A Pot Roast In Your Pressure Cooker

    • Cut. Cut the beef chuck roast into several pieces, each the size of your palm. Place the beef into the Instant Pot.
    • Add. Mix together the beef broth, tomato paste, Worcestershire Sauce, dried Rosemary, dried thyme, salt and pepper. Then add the onions to the mixture.
    • Cook. Pour sauce on chuck roast. Close the lid and pressure cook on HIGH pressure for 15 minutes. Immediately release all pressure.
    • Veggies. Add potatoes, cut up carrots or baby carrots, onions, celery, and mushrooms.
    • Finish. Close the lid and cook on high pressure 4 minutes. Allow the pot to rest undisturbed for 10 minutes. Then, release all remaining pressure. Remove beef chuck and shred.
    • Serve. Place on a serving dish. Arrange all the vegetables around the meat. Serve the pot liquid as a sauce or au jus gravy on the side.
    • Optional: You can make a cornstarch slurry to thicken the sauce, but you may not need to.

    Can I Use Frozen Beef

    You might be wondering if you can use frozen beef for pot roast. Technically, the answer is yes, the cook time will just be longer .

    That said, for the best results, we highly recommend following our method which calls for thawed beef thats seasoned with salt and been left on the counter long enough to take the chill off.

    This extra time creates the most flavorful, melt-in-your-mouth pot roast. Using thawed beef also allows us to brown the outside of the meat before braising it, which adds a lot of extra flavor to dish.

    Pressure Cook Pot Roast

    First, add 1 cup unsalted chicken stock, 1 tbsp regular soy sauce, 1 tbsp fish sauce, 1 pinch of dried rosemary, 1 pinch of thyme, and 2 bay leaves in Instant Pot.

    Then, taste the seasoning and add more kosher salt and ground black pepper if desired.

    Now, place the chuck roast and all its meat juice in Instant Pot Pressure Cooker.

    With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position.
