Start by marinating your London broil. It should be marinated in seasonings for about three hours. You can let it marinate for longer, and many people will allow theirs to marinate overnight, but I would peg three hours as the minimum marination time.

The marinade you use is up to you, but I like a tomato and vinegar-based marinade, with a few herbs to season it, such as parsley, thyme, and garlic.

When you take it out of the fridge and the marinade container, you should pat the meat dry. You dont want it overly wet when you go to sear it. You can sear it in the Instant Pot by first adding a bit of oil to the pot and heating it up. Once the pot is hot, you can add your beef to it.

Be sure to sear the beef on all sides as it cooks in the Instant Pot. You want an even searing for an even texture. After the meat has been seared, you can add in the rest of the marinade as well as some extra liquid like stock or sauce to broil your meat in. Lock the lid down and then cook on high pressure.   • Saute – As noted you’ll want to saute the veggies before searing the meat. To do this set your Instant Pot to Saute mode and allow it to preheat. Add 1 Tablespoon of olive oil and 1 tablespoon of butter then add in the sliced mushrooms and onions.cook for 6-7 minutes until the excess moisture from the mushrooms has cooked off and the veggies are starting to brown. There are a few different cuts of meat that will typically be labeled as London Broil at your grocery store or market. These cuts include cuts such as flank steak, top round steak, or chuck steak.

Instant Pot London Broil Cook Time

The next day, remove the beef from the marinade and pat it dry. Set your Instant Pot to high sauté and add butter and avocado oil. Once the butter melts, add the onions and let them soften.

Push the onions to one side of the pot and add your beef. Allow the beef to brown for a couple of minutes on all sides. You just want a quick sear youre not cooking it through yet.

Next, turn the pot off and pour the marinade from the bag into the pot. The liquid level should reach the minimum required for pressure cooking by the Instant Pot. Put the lid on the pot and close the vent.

Set the pot to high pressure on the bean/chili setting and set it to pressure cook for 5 minutes. This is the lowest cooking time my multi-cooker allows. The meat setting does not allow a 5-minute cooking time, which is why were using the setting for beans.

You may have to play with the settings on your Instant Pot to find the one that permits the lowest pressure cooking time. This cook time will get your London broil cooked to medium, with a pink center.

At the end of the cook time, quick release the pressure and use tongs to lift the London broil out of the liquid. Check the temperature of the thickest part of the beef. It should have reached a safe minimum internal temperature of 145 degrees Fahrenheit. Let the beef rest for 10 minutes while you make the gravy.

How well do you like your beef roast cooked is what you should be asking. Cooking any meat in the pressure cooker can be tricky.

You may have to experiment a few times before you get it just right, the way you like a beef roast cooked.

I like my beef cooked well done but if you like your beef medium or rare you will not need to pressure cook it more than 15 or 20 minutes.

Because of the high pressure that builds up inside a pressure cooker beef roasts can be cooked very quickly.

Overcooking a beef roast in the Instant Pot is possible. A lot depends on how thick the piece of meat is.

Making sure the London broil comes out right can be tricky. It may take some trial and error, and I recommend that you take your time with each step and follow the directions carefully your first time through. Try to focus on the London broil as much as possible and not get distracted by trying to make other foods at the same time. Thats a good idea for any food you are making for the first time. Its best to pay close attention to the new dish you are trying to make and not have your attention diverted.

If you find that the meat is not very flavorful when it is done cooking, you can add some salt and pepper or a dry rub to it. Your mistake is probably in the marinade, though.
