How To Make Instant Pot Chickpeas
For this recipe, Ive used this Instant Pot . After many trials, these are the best times for pressure cooked Chickpeas. If using another model or brand, you may need to make slight adjustments.
- Unsoaked: When using un-soaked chickpeas, cook on Manual at HIGH pressure for 45 minutes with 15 minute natural release. You will use 5 cups of liquids.
- Soaked: Chickpeas that have been soaked overnight can be pressured cooked on Manual at HIGH pressure for 5 minutes and allowing 15 minute natural release. Filling the insert with at least 4 cups of water.
Cooking Instant Pot Chickpeas Using a Basket Insert
You may like to use the basket insert when cooking the chickpeas.
Not only is the basket helpful when soaking the chickpeas, making it easy to drain and rinse after soaking. Its helpful when during pressure cooking and only needs the water to be adjusted.
- Adjusting water amounts when using a basket insert. When using an Instant Pot basket insert, use 9 10 cups of water. You want to be sure to cover the chickpeas with at least 2 inches of water.

Tips For Buying And Cooking Beans
- Look in bulk: The bulk section of a grocery store is anyones gold mine. Thats where youll find the same food that comes in a package but without paying for the cost of extra packaging. You can also find them in bulk food stores that specifically cater to only buying in bulk, as well as health food stores that have a bulk food section.
- Buy organic: If you can afford it, buy organic beans and legumes. Non-organic legumes are sprayed in a field with harmful pesticides that we end up putting into our bodies. Unfortunately, these days, there is still a lot of cross-contamination, even with organic produce, but if we can minimize the effects, weve got to try. Plus, organic beans do not cost much more than conventional.
- Fresh is best: There is such thing as old beans and rice. They take longer to cook. So once you find a reliable source of beans and my recipes work for you, stick to those beans haha.
- Dont add salt: Salt can prolong the cooking time. We dont need more sodium anyways.

Remove & discard onions and bay leaves.

Why You Might Still Want To Soak Your Beans
This said, you do make a few concessions when you skip the soak. The biggest one is the beans’ appearance: You tend to get more split skins and “blow-out” beans when they’re not pre-soaked.
For my everyday cooking, I’m fine with beans that are a bit rough around the edges. If you’re preparing a bean dish for your in-laws or the Pope, however, you might want to plan ahead and set aside the time for a long, careful soak.
Secondly, some people feel that soaking their beans helps makes them easier to digest . Personally, I haven’t noticed a huge difference with my own digestion between soaked or un-soaked beans, but if you find soaking helpful in this regard, then by all means carry on.
If you’d like to soak your beans , then go for it! The pressure cooking time is generally about half the time as unsoaked.
How Long Does It Take To Cook Beans In The Instant Pot
When it comes to actually cooking your beans in the instant pot, the time varies by bean type. Chickpeas, for example, can take upwards of 40 minutes to cook, whereas lentils take less than 10.

Another option is to cook them in a slow cooker. The benefit of this is there is no soaking step everything is added to the slow cooker you turn it on and walk away. Pretty easy.
Add 1 pound of dried chickpeas and 7 cups of water to a slow cooker. Cook on high for 3 to 4 hours or on low for 6 to 8 hours. Note that some of our readers have found this method to make very soft beans, so if you are looking for firmer beans, keep an eye on them towards the end of cooking.

It depends on the size of your Instant Pot, but for 2 cups of dried beans, you will make 6 cups of cooked beans. A 6-quart Instant Pot will hold up to 24 cups of cooked beans at maximum.
Why are my beans taking so long to cook?
Dried unsoaked beans take much longer to cook versus soaked beans. Sometimes, if the beans are too old, they take longer to become tender. In that case, it is better to toss those beans.

How To Cook Chickpeas On Stovetop
I recommend pre-soaking the beans overnight before cooking on the stovetop. Otherwise, it just takes way too much time to cook them. Drain the soaked chickpeas. Simmer in water until they reach your desired texture. The cooking time on the stovetop can vary quite a bit – start checking the beans at 25 minutes, but don’t be surprised if they take over an hour to reach a texture you like.
Tip: To make the chickpeas very tender and help them cook faster, use baking soda to tenderize the dried beans. After soaking overnight, drain the beans. Then combine 1 teaspoon of baking soda with every 8 ounces of dried beans in a sauce pan. Cook for about 3 minutes over medium-high, stirring constantly. Then add enough water to cook the dried beans and bring to a simmer. Skim off any foam and skins that rise to the top of the pot as the beans cook.

How To Cook Dry Beans In The Instant Pot
My goal for the next few months is to share 1-2 Instant Pot recipes a month. Many reader friends are new Instant Pot owners, and I want to help you feel confident using your new appliance.
For many meals, the Instant Pot isnt necessarily a faster way to cook . The appeal of the Instant Pot for these meals is the hands-off time it provides the cook.
Now there are a number of recipes that shorten the overall cooking time when you make them in the Instant Pot. Beans are another great example of a meal that can be made quickly in the Instant Pot.
Dry beans are a very time-consuming ingredient to prepare and cook. First, theres the soaking step, which does help with digestion . Then, after about 12 hours of soaking, the beans are ready to be cooked for hours in the slow-cooker or on the stove-top. The Instant Pot just laughs at this laborious task and says, Let me show you just how quick and easy it can be to cook dry beans.
How To Cook Chickpeas In The Pressure Cooker Soaked Method
The soaked method is ways faster once you have soaked the dried chickpeas overnight because it only required 15 minutes of pressure cooking.
Step 1. Pick out any bad chickpeas or stones.
Step 2. Add the dried chickpeas into a large bowl and cover the chickpeas with water, let them soak overnight or a least 8 hours.
Step 3. Drain the chickpeas, add the soak chickpeas and the water to your instant pot’s inner pot.
Step 4. Place the lid on the pot and lock it in place. Press the manual/pressure cook button and choose 15 minutes on high pressure.
Step 5. When the cooking cycle has finished, let the pot sit undisturbed until naturally release all the pressure and the metal pin drop.
Step 6. Open the lid facing away from you. Test the chickpeas for doneness. Use the cook chickpeas right away or store them in the fridge or freezer in 1 ½ cups portions to use in recipes as a replacement for a can of chickpeas.

Theres more than one way to deal with dried chickpeas. Im going to show you how to cook chickpeas on the stove, in a slow cooker or crockpot, and in a pressure cooker .
Here are three methods we use in our kitchen. All three methods work really well and depending on your day you may find one that makes more sense for you.
After sharing the recipe, many of our readers asked about using a pressure cooker to cook chickpeas. Ive added tips for pressure cooker chickpeas below.

Dont Add Salt To Dry Beans
This recipe is specifically for cooking plain chickpeas that would replace a can of chickpeas in any recipe. Do not add salt to your cooking water until AFTER the beans are totally tender, as salt can interfere with the cooking process. In my experience, sometimes salting the water can prevent dry beans from becoming tender at all. If youd like to make seasoned chickpeas, please cook them until they are tender, then add any seasoning you like.

Canned Vs Dried Garbanzos
Why cook chickpeas from dry instead of using canned chickpeas? Yes, canned garbanzos are convenient. But they also have preservatives and they tend to be a tad overcooked and mushy. By pressure cooking the garbanzos, you can tailor the cooking time to cook them to the right amount of doneness.
Another reason to make Instant Pot garbanzo beans is that you can adjust the sodium level. Many canned goods are high in sodium.
How do you substitute dry chickpeas for canned chickpeas? If your recipe calls for a can of chickpeas, thats equivalent to 1 1/2 cups cooked chickpeas. 1/2 cup dried chickpeas make 1 1/2 cups cooked chickpeas.

How To Cook Beans On The Stovetop:
- Soak the beans overnight: As instructed before, try to soak the beans a night before. Use either the hot soak or the traditional one for the best results. Before soaking, make sure to wash and rinse the beans thoroughly. Use filtered water to soak the beans and you can use the same water to cook the beans as well.
- If using the stovetop method, transfer the beans to a Dutch oven or large, heavy-bottom saucepan. Add the herbs and spices, if using and add enough water so that water is about an inch above the beans. Bring the mixture to a boil over medium-high heat.

Do You Recommend Soaking Chickpeas
This is a personal preference. That being said, when you soak chickpeas it makes them easier to digest and can help reduce any gas and bloating. Not only does it soften them, but it also helps them cook much more quickly. Chickpeas also contain phytic acid like other legumes.
This anti-nutrient can not only cause digestive issues but can also cause nutrient absorption issues. When you soak chickpeas and other legumes you reduce the phytic acid content when you drain them from the water and rinse them off. This helps improve the absorption of essential nutrients like iron, zinc, and calcium.
Why Are My Beans Still Hard After Cooking
If you’ve cooked your beans for the recommended amount of time and they are still hard and undercooked, there are several reasons why this might happen.
First, keep in mind that there is rarely an exact cooking time that works perfectly for everyone. The freshness of the beans and the size of the beans can vary. I’ve noticed that some brands of dried chickpeas are smaller than other other brands. So your garbanzo beans might take longer or shorter to cook than my garbanzo beans.
In addition to the size and age of the beans , other things that can affect the cooking time:
Acidic ingredients: Tomatoes are often the culprit, but other acidic ingredients like wine, lemon and vinegar can prevent beans from getting soft.Hard water: The more minerals in your tap water, the longer the beans will take to cook.Liquid level: It’s better to error on the side of adding more water, because beans that aren’t completely submerged in water won’t cook evenly.
