Yes, the Instant Pot is handy in the kitchen as you can use it even for frozen meat without the need to fully thaw it. Therefore you can make this recipe using frozen meat, however, you will have to break it apart at least so its not a big block of frozen meat pieces.

My family and I love black beans in this pressure cooker pork stew and that is what I almost always use. I have also made it with Pinto beans, which is tasty too.

I havent tried kidney beans, but I am sure that would taste good too. Basically any kind of beans that goes well with Mexican cooking would be appropriate for this recipe.

How Do You Make Pork Stew

  • Blend. Blend together onion, garlic, and Ro-tel. If you don’t have Ro-tel, use a 14 oz can of tomatoes and a 5 oz can of green chilis
  • Add mixture to pot. Pour into the Instant Pot, add the Tony Chachere or other Cajun Seasoning mix.
  • Add meat. Add in the pork/beef cubes and stir well.
  • Cook. Close the pot and seal. Cook on MEAT setting for 20 minutes. Allow it to release pressure naturally for 10 minutes and then release all remaining pressure.
  • Sauté. Turn the Instant Pot to Sauté. When the stew begins to boil, add the cream and stir well.
  • Serve. Then add the spinach leaves, cook until wilted and serve.

So when I made this stew, I wasn’t sure what I thought about it, because it’s quite different from some of the other things I’ve made. I posted it in my Facebook group and asked for testers. We all concluded that pork stews do best with a fattier rather than leaner cut of meat.

I tried this with stew meat–it was fine but the texture of the meat was okay, not great. Then I tried it with a fattier cut of pork shoulder–much better. So even if you don’t eat pork and use beef or chicken, I’d suggest a well-marbled piece of meat or one with some collagen in it to make this Pork Stew recipe.

Lets Make Some Instant Pot Vietnamese Pork Stew

Serves 8

Instructions:

Turn on the sauté function of the Instant Pot and add the coconut oil or your fat of choice when the metal insert is hot.

Toss in the shallots and shiitake mushrooms

and cook until the shallots are softened and the mushrooms are cooked, about 3 to 5 minutes.

Stir in the ginger and garlic and cook until fragrant. Add the pork cubes and stir well.

Pour in the coconut water and the fish sauce.

Stir well, scraping any browned bits from the bottom of the Instant Pot.

Cancel the sauté function. Lock the lid of the Instant Pot and program it to cook for 40 minutes under high pressure.

When the stew is finished cooking, allow the pressure to drop naturally. If youre impatient, wait 15 minutes and then manually release the pressure.

Check that the pork pieces are fork tender. Taste and adjust the seasoning of the sauce with more fish sauce or salt if needed. Use a slotted spoon to transfer the pork to a serving platter. Cover to keep warm.

Carefully add the cut carrots to the cooking liquid and cook for 2 minutes under high pressure.

Release pressure manually and remove the lid when the contents have depressurized.

Spoon the carrots and cooking liquid onto the pork

and garnish the stew with sliced scallion or cilantro.

Add 1 tbsp regular soy sauce and ½ tsp table salt in Instant Pot, then give it a quick mix.

Then, place the pork shoulder into the cooking liquid.

*Pro Tip: If there is any meat juice, add that back in too!

With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position.

  • Pressure Cooking Method: Pressure Cook at High Pressure for 60 minutes, then 15 minutes Natural Release

*Note: If you think 1 hour is too long, you can cut the pork shoulder into 2 inches cubes and reduce the cooking time to Pressure Cook at High Pressure for 40 minutes + 15 minutes natural release.

After 15 minutes, release the remaining pressure by turning the Venting Knob to Venting position.

Remove the lid carefully.

  • 1 large onion, thinly sliced
  • 6 garlic cloves, peeled and smashed
  • 3½ pounds pork shoulder, cut into 1½-inch cubes
  • 1 teaspoon Red Boat fish sauce
  • 1 cup marinara sauce
  • 3 carrots, cut into chunks
  • 1 small cabbage, cut into 8 wedges
  • 1 tablespoon aged balsamic vinegar
  • Diamond Crystal kosher salt
  • ¼ cup finely chopped Italian parsley

Method:

Turn on the sauté function on your Instant Pot. When the metal insert is hot, swirl in olive oil or your favorite cooking fat.

Toss in the onions and cook until slightly softened.

Add the garlic and stir until fragrant, about 30 seconds. Dont burn it!

Plop in the cubed pork and add the Magic Mushroom Powder and fish sauce.

Stir well to distribute the seasonings.

Pour marinara sauce on top of the pork, but dont stir it.

Turn off the sauté function. Lock the lid on the pressure cooker and program it to cook for 35 minutes under high pressure.

When the pork is finished cooking, release the pressure manually.

Add the carrots and cabbage to the stew and cook under high pressure for 3 minutes.

How To Make Whole Chicken In An Instant Pot

Important note: A frozen chicken should never be added to hot oil. If you are cooking a frozen chicken, skip steps 3 and 4 and increase your cooking time to 14 minutes per pound.

  • Prepare the chicken. Remove the innards of the chicken, and either set them off to the side for making gravy or stock, or discard. Then pat the chicken dry. Be sure to be thorough to avoid splashes when it’s added to the Instant Pot.
  • Season the chicken. Spread a spice blend – such as poultry, cajun, or creole seasoning – on the outside of the chicken and inside the chicken cavity. Seasoning the inside and outside will give the meat even more flavor. Add a lemon to the chicken cavity to season the meat and add moisture.

Once it’s browned, remove the chicken and set it aside. If you’re cooking a whole chicken, this step should also be skipped.
  • Release the pressure naturally. This should take about 25 minutes. Then let the chicken stand out for ten minutes.
