What Is Trinity Mix In Cooking
The trinity mix consists of onion, celery, and bell peppers. It is super important in cajun and creole cooking. This combination is the base of most savory dishes! More often than not, it is added to a roux as the beginning of stew, soup, sauce, jambalaya, sauce piquant or almost any other Cajun or Creole main dish. The combination of the three flavors is such a good base for so many recipes!
What Cut Of Pork Is Best For Stew
So when I made this stew, I wasn’t sure what I thought about it, because it’s quite different from some of the other things I’ve made. I posted it in my Facebook group and asked for testers. We all concluded that pork stews do best with a fattier rather than leaner cut of meat.
I tried this with stew meat–it was fine but the texture of the meat was okay, not great. Then I tried it with a fattier cut of pork shoulder–much better. So even if you don’t eat pork and use beef or chicken, I’d suggest a well-marbled piece of meat or one with some collagen in it to make this Pork Stew recipe.

Turn on the sauté function of the Instant Pot and add the coconut oil or your fat of choice when the metal insert is hot.
Toss in the shallots and shiitake mushrooms
and cook until the shallots are softened and the mushrooms are cooked, about 3 to 5 minutes.
Stir in the ginger and garlic and cook until fragrant. Add the pork cubes and stir well.
Pour in the coconut water and the fish sauce.
Stir well, scraping any browned bits from the bottom of the Instant Pot.
Cancel the sauté function. Lock the lid of the Instant Pot and program it to cook for 40 minutes under high pressure.
When the stew is finished cooking, allow the pressure to drop naturally. If youre impatient, wait 15 minutes and then manually release the pressure.
Check that the pork pieces are fork tender. Taste and adjust the seasoning of the sauce with more fish sauce or salt if needed. Use a slotted spoon to transfer the pork to a serving platter. Cover to keep warm.
Carefully add the cut carrots to the cooking liquid and cook for 2 minutes under high pressure.
Release pressure manually and remove the lid when the contents have depressurized.
Spoon the carrots and cooking liquid onto the pork
and garnish the stew with sliced scallion or cilantro.

How Do I Keep The Potatoes From Getting Mushy
I recommend using a waxy potato variety that holds its shapesuch as Yukon gold potatoes. These wont get as mushy as starchy russet potatoes, for example.
Cooking the potatoes for 40 minutes may seem like a long time. However, we do actually want the potatoes to break down a little bit. When this happens, they release starch into the stew which helps to thicken it up a little bit, and the result is an amazing texture!

What Spices Are In Creole Seasoning
A lot of the times, creole and cajun cooking terms are used interchangeably. However, there is a subtle difference between the two. Cajun seasoning is a basic blend mix of garlic powder, onion, black pepper, and cayenne pepper. Creole seasoning goes a bit further than these basic spices with more herbs ranging from oregano to basil and paprika. Creole tends to be a more powerful blend in our opinion, but offers such a great bold flavor!
What Are Your Best Tips For Using An Instant Pot
- Lock the lid tightly: Before cooking, make sure the ring is pressed down all the way around the inside cover of your Instant Pot. Then after the machine starts counting down, check that the pressure indicator at the top is firmly in its locked position .
- Salt your beans: I love making chickpeas from scratch in the Instant Pottheyll taste so much better than canned. To get the best, most even flavor on dried beans, add salt at the beginning of cooking.
- Mind your temperatures: The colder the ingredients are when they go into your pot, the longer it will take to reach pressure. Defrosting liquids like broth in the microwave can speed things up. Or if youre adding water and have an electric kettle, you can heat the water while prepping your other ingredients.
- The fuller the instant pot is, the longer it will take to reach pressure. Always add at least 10 to 40 minutes onto the timing to account for this.
- Dont open the steam valve with your bare hands. Use potholders, or cover the vent with a kitchen towel.
