How To Make Instant Pot Pot Roast

So, here is my basic Instant Pot pot roast recipe . This is an adaptation of my long time favorite low and slow traditional method roast. Its secret ingredients are Montreal Steak Seasoning and a packet of onion soup mix. They give awesome flavor to to the roast!

Coat the beef roast with olive oil and rub a generous amount of Montreal Steak Seasoning on all sides of the roast. Then sear the beef in the pot using the saute function. After searing, remove the beef and add a chopped onion with a small splash of beef broth to deglaze the pot. Once deglazed, pour in the remaining broth and add a trivet.

Place the beef roast on the trivet and pour a package of onion soup mix over it. Set two or three bay leaves on top.

Pressure cook on high pressure at 25 minutes per pound, followed by natural release. Then remove the roast from the pot.

Add vegetables to the pot and pressure cook for 5 minutes. I add baby potatoes, carrots, celery, and onion to mine.

To serve, cut the roast against the grain or cut into chunks and serve with the vegetables and a ladle of the broth. You can also make a gravy by removing the vegetables, then making a cornstarch slurry and adding it to the pot to thicken the broth. But I prefer to serve my roast without gravy, and I include a savory bread, such as my Savory Jalapeno Irish Soda Bread, or a good grainy wheat bread, to use to soak up the broth.

The roast is tender and juicy with lots of flavor.

Can I Use Frozen Beef For This Recipe

You wouldnt think that youd be able to go from freezer to Instant Pot in this recipe, but, just like using frozen chicken breasts, you can also use frozen beef for this recipe. Because the meat cooks with steam and pressure, it will thaw and then cook all at the same time.

The only difference is in the cooking time. Add about 20-30 minutes to your pressure cooking time if going with a frozen roast. No need to sear it either, just rub the spices on the roast and then put the frozen roast in the pot and go to the pressure cooking step.

It seems like every time a person asks in a social media group for an Instant Pot roast beef recipe, a fair number of people chime in telling people not to do it and asserting that the best roast will always come from traditional methods. I think there is a valid basis for that in that I personally believe that a good roast cooked low and slow for many hours will always be the superior product. BUT Instant Pot pot roast can be nearly the same and done in less time. For a person without access to an oven or who wants a quicker version, the Instant Pot is a great way to make roast beef.

What Kind Of Roast Should I Use In The Instant Pot Or Crockpot

The type of roast that Ive had the most consistent success with in the Instant Pot and Crockpot is the chuck roast. It has even marbling and turns out great every time. Make sure to let the chuck roast cook long enough. If its not tender, it hasnt cooked long enough. Also make sure to use a natural pressure release with roastor else it wont be tender. I often wait until chuck roast is on sale and then stock up and freeze. It makes great stew meat as welljust cut it into cubes and use in beef stew.

A pot roast is such a wonderful dinner to make. You get delicious tender veggies along with some juicy chunks of shredded beef. This is fantastic for a Sunday dinner with the family. Many sides can go with this, because you are pairing this up with a delicious gravy. Doing this in the slow cooker or instant pot, really makes this recipe easy with little clean up.

Ingredients:

2 – 3lb chuck roast or chuck tender roast

1lb Red potatoes whole

3 large carrots chopped in big portions

3 Celery stalks chopped in big portions

½ onion chopped

¼ cup of all-purpose flour

½ stick of unsalted butter

Cooking Instructions:

Take the beef roast and season with salt and pepper, and let sit in room temperature for 30 minutes to an hour.

Set the instant pot on sear, sear both sides of the roast for 4 minutes each. Once you have a nice sear on both sides remove the roast.

Add in the chopped onions, and allow the onions to deglaze the bottom of the instant pot. Stir scraping the bottom occasionally.

Once the bottom is deglazed, turn off the instant pot.

Add in the beef broth, vegetables, garlic, thyme, and a couple of pinches of salt and pepper.

Add in the roast, place the lid on the instant pot with the vent open.

Select slow cook, and set to high heat for 4 5 hours. Depending how thick your roast is, you may need an additional time. Chuck roasts should be ok for 4 hours.

In the instant pot on sauté with less heat or pan over medium low heat, add in your butter to start melting it.

Its made with dry onion soup mix and youre only putting four ingredients into the Instant Pot so it is truly the easiest pot roast you will ever make and so fall-apart tender. When the roast is done, you pull out the potatoes and mash them with sour cream, salt, pepper, and garlic and top them with savory beef broth gravy right from the Instant Pot!

    Gravy Made With Cornstarch

    Gravy made with cornstarch will be clearer, and will have a more gelatinous texture than when made with a roux. When using cornstarch, its more about thickening the sauce more than making a legitimate gravy.

    However, when youre in a pinch and dont want to go through the trouble of making a roux, this is an easy way to thicken ANY sauce!

    • Remove the meat from the Instant Pot and place on a serving platter.
    • Remove all but 2 cups of the roast juices from the Instant Pot . Try to skim any fat off the top of the broth and get just the broth. You can use a turkey baster to suction just the broth from the pot, or use a gravy fat separator.
    • I usually just take two cups and blend it in the blender or with an immersion blender.
    • Taste this liquid. If its too salty, add about 1/4-1/2 cup water, milk, half and half, or cream to dilute.
    • Turn on the SAUTE feature on high. Wait for it to come to a boil.
    • In a separate dish, add 3-4 tablespoons of cornstarch with 3-4 tablespoons COLD water. Adding more cornstarch will make the gravy thicker.
    • When the liquid comes to a boil, slowly add the cornstarch slurry while whisking. Keep whisking and adding until it is completely incorporated and whisk while boiling for one minute or until thick.
    • Taste the gravy. If its weak in flavor, add half a tablespoon of Better than Bouillon or beef bouillon. You can also add salt and pepper to taste.
    • Turn off the heat and serve immediately. You can add heavy cream or sour cream at the end to make it creamy.

    Instant Pot Pot Roast:

    Cut roast in half. Season as directed. Using the sauté setting, sear the roast in the Instant Pot with oil on all sides. Take meat out, deglaze the pot, add 1 cup of beef broth, and return the roast. Pour sauce mixture on top and cook on high pressure for 60-80 minutes , or until tender. Allow a 15 minute natural pressure release.
