Why The Pressure Cooker Works
I’ve actually been sitting on this revelation for a few months now, just because I didn’t trust the evidence I saw with my own eyes: Two eggs or a dozen, fresh eggs or weeks old, white eggs or brown eggs, it didn’t matter. The shells slipped easily off each time, leaving a smooth and pristine hard boiled egg.
There are a few theories for why this is. Some say that, similar to steaming eggs, the pressure cooker forces steam inside the egg’s shell during cooking, causing it to separate from the egg white. Alton Brown’s theory is that it’s more about the rapid temperature change inside the sealed pot.
Whatever the reason, it works! Making hard-cooked eggs in the pressure cooker is the only method I’ve found that has worked for me every single time.

Cooking eggs too long or at too high a temperature causes a reaction between the iron in the yolk and the sulfur in the white, according to the Incredible Egg website. Hence, a green ring forms between the yolk and white. This shouldn’t happen when you use the 5-5-5 method to cook eggs in the Instant Pot.

A great alternative is to crack the eggs into small silicone cups or oven safe dishes and put them on the rack with 1 cup of water in the bottom of the pot.Cook for the 2 minutes and do a quick release. You should have nicely soft cooked eggs !
The bottoms of these cups are rounded, so I use mason jar lid rings to keep them from tipping over.

Why Pressure Cook Eggs
The answer to that is consistent results and ease of peeling!
No more shells sticking to the egg, and absolutely no struggle to remove it. The peel just slides off the egg after pressure cooking.
And once you figure out what cook time works best for you, it turns out perfect every single time. The yolk texture is just right for me- moist and creamy, not dry or crumbly at all.

Do White And Brown Eggs Cook Differently
I was recently asked if there was a difference between cooking eggs that come in a white or a brown shell. I usually work with brown eggs, so I bought a batch of white ones to test how they pressure cook.
Following the directions in the recipe below, I cooked a batch of brown eggs and a batch of white eggs, and found that they both peel easily, and cook in the same amount of time as each other. So, this method should work for whichever variety you have on hand.

How To Cooks Eggs In The Instant Pot
I based my eggs on the popular “5-5-5” method for hard-cooked eggs in the Instant Pot. The idea is to put your eggs into a steamer basket and seal them inside your pressure cooker along with a cup or so of water. It takes about five minutes for the cooker to come up to high pressure, five minutes to cook the eggs, and then five minutes of natural pressure release before removing the eggs from the cookerhence the “5-5-5” method.
I found that this basic formula worked just fine, though it typically takes my pressure cooker closer to 10 minutes before fully pressurizing.
I also decided that I like the texture of 4-minute eggs better than 5-minute eggs. At four minutes, the whites are firm but soft and the yolk is cooked through but still creamy at five minutes, I felt like the whites started to become rubbery and the yolk was a little chalky. Give it a try both ways and see which you prefer.

How To Peel Hard Boiled Eggs
Instant Pot boiled eggs are so easy to peel. To start, I tap the egg several times on the counter, creating cracks all along the equator. You can also roll the egg gently across the countertop or cutting board to create a bunch of small cracks. This helps to detach the membrane from the egg white making for easy-to-peel eggs.
If you are still having a bit of trouble, try peeling the eggs submerged underwater. I usually peel the eggs in the bowl of water left over from the ice bath. So easy!

Can You Stack Eggs In An Instant Pot
I have regularly stacked eggs in my Instant Pot, so yes, you can!
However, do note that it can become a little precarious, the more eggs you add to the stack.
They are a little more likely to crack when there are several stacked together. This doesnt bother me, since Im going to be cracking them afterward anyways.
You can always use an egg rack if you prefer them to not be stacked, or a steamer basket to contain them.

Gently add eggs on top of the trivet. Select manual setting adjust pressure to high, and set time for 3-7 minutes.* When finished cooking, quick-release pressure according to manufacturers directions. Cool eggs in a bowl of ice water for 1 minute. Drain well and peel.
Why Do My Eggs Crack In The Instant Pot
Its best to avoid the high pressure setting when cooking eggs. It creates too much of a volatile environment for the delicate eggs, leaving them prone to cracking or leaking during cooking. Follow this tip: For the best results, keep the pressure cooker set to low when cooking eggs.

Why Did My Eggs Turn Brown In The Instant Pot
This can happen when your eggs are overcooked. Ive never had it happen if I dont cook them longer than 5 minutes, but if it does happen to you, just know that its harmless and you can still enjoy your eggs. If your eggs are too overcooked, it may be best to turn them into an egg salad or deviled eggs.
What Makes Instant Pot Eggs So Good
- The method is super reliable! Once you nail down your perfect cooking time, youll get consistently boiled eggs every single time.
- Boiled eggs are perfect for snacks-on-hand, meal prep, or even if youre doing an egg fast. Refrigerate hard boiled eggs up to 7 days unpeeled or 5 days peeled. Unpeeled soft boiled eggs will keep in the refrigerator up to 2 days.
- The general rule-of-thumb for boiling eggs on the stovetop is that older eggs just work better. That may be true for the stove, but in my experience, the Instant Pot will give you the same results whether your eggs are fresh or older.

How Many Eggs Can You Hard Boil In The Instant Pot
Up to 75 large eggs. Thats right, you can do almost 6 ½ dozen eggs at once and this big batch of eggs will take the same time to cook as if you were only cooking 1 dozen eggs. Ah-mazing!
There are a couple of things to be aware of though before cooking this many eggs. The instant pot will take longer to come to pressure vs a few minutes to come to pressure when cooking a small number of eggs.
You will have a few cracked eggs when you cook a large amount, but thats ok, they will still be cooked. Its worth the few cracked shells because of the number of eggs you just cooked at once!
Always Use Fast Release
Always use fast release immediately after the eggs are done cooking under pressure. If you leave the eggs in the pot, they will continue to cook in the residual heat and your eggs will be overcooked.
To safely release the pressure, use a long spatula or a pair of tongs to move the valve to the release side. Do make sure your hand is not over the valve while doing this.
