Yes. Ive personally never tried it, but it is possible.

The thing to keep in mind is that you cant sear the meat, so youd miss out on forming extra flavor through the Maillard reaction. Also, the roast will take 1/3 of the time longer to cook, plus the pot will take a lot longer to come to pressure.

Thats being said, I HAVE cooked frozen ground beef in the instant pot before and it worked out well. Im suspecting any difference between them is that one is ground and the other is whole muscle fibers and it might create a difference in the texture of the roast if cooked from frozen.

Its also not recommended to cook a whole muscle roast from frozen in the slow cooker because the meat will be left at an unsafe temperature for too long.

How Do You Store Mississippi Pot Roast Leftovers

I like to shred the pot roast leftovers and store them in the refrigerator on top of mashed potatoes, gravy and all. That remaining cooking juices give the mashed potatoes an extra pop of flavor!

Ive always made Mississippi Pot Roast in my Crock Pot but I really wanted to try it using the slow cook function on my 6qt Instant Pot Duo60. So thats what I set out to do.

The original recipe that I used had a bunch of seasoning packets that contained off plan ingredients for my Trim Healthy Mama journey.

Because they were off plan I replaced that store bought ranch packet with one of my own Homemade Ranch Seasoning Packets.

How to replace the au ju packet was another stumbling block, but hey we have to think outside the package sometimes.

Can You Freeze Leftover Mississippi Pot Roast

You absolutely can. Just be sure to freeze it in a freezer-safe container with the meat and gravy together. Remember to allow a small amount of room for expansion while it freezes.

To thaw, remove from the freezer and keep in the fridge overnight.

Also, leftovers will stay fine in the fridge for up to 4 days in an air-tight container.

I just love a good pot roast. Theres something so tasty about meat thats perfectly seared to lock in the flavor, then slow roasted until soft and tender. Today were making the juiciest, sauciest, and possibly easiest beef roast in blogosphere history: the Mississippi roast. And were speeding things up with one of my favorite methods: the Instant Pot.

Ive come to realize that anything a slow cooker can do, an Instant Pot can do just as hands-free, and quicker! Without sacrificing tenderness or flavor, which is key. This Instant Pot pot roast is just one of many go-to beef recipes that literally comes apart after a stint in the pressure cooker.

My Mississippi pot roast is deliciously saucy, perfect to make as an easy beef dinner any night of the week. Its smothered in the flavors of zesty ranch mix and savory gravy, plus the sweet, mild heat of pepperoncini chili peppers. How To Make Instant Pot Mississippi Roast

Sear the beef. You can do this in the Instant Pot itself or you can do it on and transfer the roast to the instant pot. I prefer to do it on the stove because theres more space in my pan, but do what works for you.

Once you have the chuck roast in the Instant Pot, add the remaining ingredients and close the lid with a sealing position.

Pressure cook it. Set your pressure cooker to high pressure for 25 min per pound. I did an hour and 15 minutes for our 3 pound roast. Natural release for about 15 minutes, and then use the valve to release any remaining pressure.

If youre cooking from frozen, add about 10 minutes per pound, which would be about an hour and a half for 3 pounds.

Shred the meat and return to the pot to let it fully absorb the flavor of the cooking liquid before serving.

What Kind Of Meat Can You Use For This Recipe

I prefer using a beef chuck roast, but you can also rump roast. Another option for Mississippi Roast is a pork roast . Really any larger cut of meat works!

Instant Pot Healthy Mississippi Pot Roast Recipe:

Time needed: 1 hour and 5 minutes.

This is an Instant Pot recipe, but you can also make it in the Ninja Foodi, or any other electric pressure cooker you have!

  • Make your homemade ranch dry mix

    Mix parsley, garlic powder, onion powder, and dill together in a small bowl. Sprinkle both sides of your chuck roast with ranch mixture, and press it into the meat.

  • Prepare your pot

    Set your Instant Pot to sauté and add olive oil to the bottom.

  • Sear and add liquids

    Once your Instant Pot is hot, add your roast and sear for a minute on each side on medium-high heat. Place the pepperoncini peppers on top of your roast and add the liquid from your pepperoncini peppers, Worcestershire sauce, and beef broth.

  • Pressure Cook

    Close and lock the lid and turn the pressure release handle to sealing. Select Pressure Cook and set cook time for 60 minutes.

  • Natural Pressure Release

    Allow pressure to release naturally, which means dont touch your pressure valve until it drops on its own. If this takes more than 15 minutes or so, you can release the pressure my moving the valve to Vent. Remove the lid of your pressure cooker and carefully transfer the roast and peppers to a plate.

  • This recipe makes about 12 servings, depending on the fat that needs to be trimmed after cooking and how much the roast shrinks during the cooking process.

    What To Serve With Mississippi Pot Roast

    This one-pot recipe is plenty to feed your family! I often only make this and a simple side of roasted potatoes.

    Make it heartier with carrots, whole potatoes, and onions. You can roast them in the oven or throw them into the pressure cooker with your roast! Put them under the beef for the best cook.

    Place your roast in the bottom of your instant pot.

    Sprinkle the ranch mix over the roast.

    Place the stick of butter on top and pour the Peppercinis over it.

    Pour water around the roast.

    Add the lid and make sure it is turned to sealing. Click the manual button and cook on high pressure for 90 minutes.

    After the cook time, do a natural release on the Instant Pot.

    Then shred the beef and serve.

    Recipe Notes And Tips

    • Youll want to use butter when making this recipe and not margarine, which is mostly oil. The butter brings a key flavor to the mix.
    • Dont add any extra liquid to the Instant Pot! The meat will not be fully covered, but the butter on top will aid in flavor as well as cooking the beef. The beef will also release its own juices while cooking.
    • When ready to serve use a slotted spoon and carefully remove the pieces of meat so the pepperoncini dont fall apart. Then use a ladle to scoop up the juices and spoon them on top of each plate.
    • To thicken the gravy: When youre done cooking the roast if the gravy is not thick enough use a slotted spoon to remove the meat and peppers. Then mix together 2 tablespoons of cornstarch with ¼ cup of cold water and stir it into the gravy in the bottom of the Instant Pot. Turn the pot on sauté and let the gravy heat for an additional 5 minutes while it thickens.

    I am a bit old-school, which is why I like to make my keto pot roast in the oven. If you choose to do it the same way as I did, then you also need an oven bag. You can find them in almost any store, and they come in different sizes, so make sure to choose a larger one for your chuck roast.

    Once you’ve prepared everything, you should do the following to cook your keto Mississippi pot roast:

    • Preheat your oven. Once you’re ready to bake the chuck roast, you should preheat your oven to 375°F.
    • Cook the pot roast. Now all you need to do is place the marinated beef cut in an oven bag and then put the oven bag on a baking tray. Be sure to tightly close your oven bag to make sure that air doesn’t come out of it. You should cook your keto Mississippi pot roast in the oven for about two hours.

    Remember that it’s dangerous to cut open that oven bag as soon as it’s out of the oven. It keeps extremely hot air inside, and if you open it right away, you can get burned. So it’s always better when the pot roast is fully cooked. Just turn off your oven and keep it inside until it’s completely cool.
