Instant Pot Marinated Pork Chops

My friend, Jill, gave me this recipe for marinated pork chops. Originally the recipe was for the grill . But I wanted to just see what would happen if I cooked them in the Instant Pot. I was super surprised when I threw the frozen pork chops in the pot and came back after I watched an episode of Flip or Flop and they tasted really good.

The flavors were perfect. The only thing I would be nervous about is the possibility of the pork chops getting overcooked. My pork chops were large and thick. I put them in the pot frozen on a trivet for 10 minutes and then a 10 minute natural pressure release. This was the right amount of time for me but if you are using thin and small pork chops I would cut the time down. Remember that thickness of meats is the determining factor on how long to pressure cook. Plus you can always cook longer if they arent done. I like to use a digital thermometer* to determine the doneness of the pork chops. The middle part of the pork chops should be at least 145° F.

I made baked potatoes in my other Instant Pot to serve with the pork chops. And then some raw veggies on the side. It was a super easy and tasty dinner.

Why Are My Instant Pot Pork Chops Tough

The secret to perfect Instant Pot pork chops is to choose the right chops in the first place. Pork chops are normally very lean and will get tough if they are overcooked.

Pick chops that are bone-in as the bone adds more flavor plus shields the meat around it from overcooking. Ask your butcher to cut the chops thick. Thin chops overcook very fast. Also, look for chops that are well marbled with fat, as this will help keep the meat tender and moist.

Here are the 3 most common mistakes that cause Instant Pot pork chops to become tough:

1. Overcooking

  • Save

Pork chops are lean cuts, which means they dont need hours of steaming and cooking. However, if you leave them in the Instant Pot for more than the prescribed time, the chops will turn tough, signaling that they are overcooked.

The pork chops can become tough even with just a few minutes of overcooking. This problem isnt just seen with an Instant Pot overcooked pork chops become tough on the grill or stovetop as well.

With overcooking, the chops will turn dry, chewy, and tough. This is certainly not something your family will find delicious or appealing!

Make sure there is no carry-over cooking time. Remember that even when you take them out of the oven or pot, the chops will continue cooking in the residual heat for a few minutes. This is also why it is best to serve them straight away, rather than keeping them warm.

Why Are My Pork Chops Tough & Dry

The #1 reason is overcooking! Pork chops are usually quite lean and will become tough once they are overcooked.

For best result, you will want to use bone-in pork chops that are well-marbled. The bone will act as a shield for the surrounding meat. A thicker cut of pork chop will work better in the Instant Pot as it is less likely to overcook.

What Pressure Cooker Did You Use?

To make Instant Pot Marinated Pork Chops I used my 6 quart Instant Pot Duo 60 7 in 1*. I love this Instant Pot because it has the yogurt making function which I use almost weekly. It has two pressure settings , and there are also little slots in the handles so that you can rest the lid there instead of putting it down on your counter-top.

Slice It Up And Serve It

Take the pork out of the Instant Pot and let it rest a few minutes. Then slice it into pieces, or serve it on a platter to be sliced at the table.

I like to make gravy from the broth left over in the Instant Pot. You can do that right in the pot no need to use a separate pan. Its incredibly flavorful and makes a really great gravy.

First, check the level of fat in the broth. If theres a large layer of fat on the top of the broth, strain it off first. You dont want greasy gravy! Turn the saute mode back on. Once the liquid is boiling, add a slurry of cornstarch . Whisk it until its thickened.

You can then serve your pork roast with potatoes and carrots, or with mashed potatoes. Pour the gravy over the top to finish the dish.
