Like I said earlier, it doesnt matter what brand you have at home. They all work the same, some just have a few more buttons. Use high pressure cook setting, or you can press the meat button and adjust the time to about 60 minutes.

  • Of course timing will vary slightly depending on how large your piece is. This was just shy of 4 lbs.
  • If yours was substantially smaller you could get away with 40 minutes to 45 minutes probably.

Why dont I sear the meat first? You could. If you wanted a bit more texture on your cuts of pork you could start with saute and some olive oil.

Brown just the outsides when cooking pork at the beginning. Remove, deglaze with wooden spoon to remove stuck on pieces off the bottom of the pot.

Shredding The Pulled Pork

Its best to shred the pork shoulder while its still hot. It will go a lot faster and will literally fall apart/of the bone. Lift the cooked pork shoulder out of the instant pot and use two forks or a pair of shredding claws to easily pull apart /shred the meat.

Chefs Tip: If you used a bone-in pork shoulder you can save and freeze the bone to make stock once you have a few bones saved, or simply toss the bone out at this point.

By now you should have a pile of deliciously tender pulled pork and a bunch of liquid in your instant pot. Well use this liquid to make a tasty sauce for the meat! The liquid should have naturally thickened while it was cooking with the pork shoulder, but if you feel it is a little thin, just use a cornstarch slurry to thicken it.

Instant Pot Vs Crock Pot/slow Cooker

This recipe will work just fine in an Instant Pot, another brand of pressure cooker, or a slow cooker/crock pot.

I personally find that the Instant Pot keeps meat even more tender and juicy than a crock pot/slow cooker. The Instant Pot locks in the juices during the pressure-cooking, unlike the crock pot/slow cooker, where some of the juices escape and evaporate while cooking.

If youve been on the fence about buying an Instant Pot, just do it. I promise you wont be sorry!

Instant Pot Pulled Pork Recipe:

As far as meat, I typically use a pork loin roast. You can also use a pork shoulder if that is your preference. A lot of people worry about a pork roast becoming tender enough. As long as you use the right method and ingredients, it turns out absolutely perfect every time!

My general method has always been to slow cook pulled pork, like in the recipe I linked to above. But, since I’ve become a huge fan of my instant pot, I wanted to try cooking it that way. Happy to say it turned out great!

If you have time you will add your rub to your cubed pork roast, seal it in a bag, and let it marinate for a good 30-60 minutes before cooking for maximum flavor. When I make pulled pork in my crockpot, I find that marinating isn’t necessary because all of those flavors slow cook together for hours. However, for instant pot pulled pork, marinating really is the way to go.

Next, you will heat up your oil right in your pot, sear the meat in batches until browned on all sides. It won’t need to be cooked through at that point.

Then, you will want to use a small amount of beef broth to deglaze the bottom of your pot. If you don’t you may end up with that dreaded “burn” warning during cooking.

To deglaze, you’ll simply pour the broth right into the bottom of the instant pot and use a wooden spoon to scrape all of those brown bits off. This also adds great flavor to continue seasoning your meat as it cooks.

Does The Thickness Of The Pork Shoulder/pork Butt Matter

Yes and No. Normally, the thickness of the meat you buy plays a major role in determining the pressure cooking time. But it doesnt really matter in this recipe.

With this quick & easy recipe, we decide to cut short the cooking time by slicing the meat into 0.5 thick slices in Step 3.

This works because were using fatty Pork Butt Meat. Hence, as long as youre able to cut the pork shoulder meat into 0.5 thick, then youre good to go.

Ingredients For Instant Pot Pork Butt

Pork you can use a shoulder cut or a Boston butt

Chickenbroth if you dont have chicken broth you can use veggie or beef

Applecidervinegar dont skip this ingredient, it brightens up the flavor

Oil to sear the pork before pressure cooking. Searing the meat seals in the flavor and browns the meat.

How To Make Pulled Pork In The Instant Pot

We are going to start by trimming the pork butt. Since we are not cooking low and slow, like in smoking, the fat will not render all the way down. The last thing you want in your pulled pork is a big chunk of jiggly fat. Gross.

Trim as much of the white fat that you can from the outside of the butt. Then cut the meat down into 3 inch chunks. If you come across more fat or connective tissue within the meat, cut that out as well.

In a small bowl mix together your dry rub seasoning. Coat the pork butt pieces completely with all of the seasoning.

Pour 1 cup water, 1 tbsp Worcestershire sauce, and 1 tbsp apple cider vinegar into the Instant Pot. Place the metal trivet over the liquid. Put the seasoned pork pieces on the trivet.

Close the pot and set to cook for 15 minutes per pound. I had a 4.5 lb pork butt, minus about ½ lb in fat, so I set my Instant Pot to cook for 60 minutes.

Do a natural release for 10 minutes, then quick release the remaining pressure.

Now its time to get the flavors flowing. In this step, you are going to build your base of flavor for the whole dish . You want to saute your veggies first. Add your olive oil to the Instant Pot and when it is fragrant, add your veggies. Saute them up for about 2-3 minutes or until your onion is translucent.

Remove your veggies, add more olive oil, and then sear your pork roast for 2-3 minutes on each side. When you are searing meat in the Instant Pot it is pretty common that you will get the HOT or BURN notice. Dont panic. You want your meat to brown and you want the brown crispies to form in the bottom of your Instant Pot. It will just add a ton of flavor to your sauce-y sauce.

How To Make Instant Pot Pork Roast

Making pork roast in the instant pot is so easy! It takes just 20 minutes or so of hands-on time and cooks so much faster than the oven or slow cooker!

  • Prepare the rub. Mix together the brown sugar and seasonings. Rub all over the pork roast and set aside.
  • Saute the roast. Use the saute setting to sear the roast for 2 minutes on each side.
  • Cook the roast. Deglaze the instant pot with red wine and add the onion, garlic, broth and rosemary. Place the roast on the metal trivet in the instant pot. Seal and cook on high for 65 minutes.
  • Add the vegetables. Do a quick release and add the potatoes and carrots around the roast. Cook for another 5 minutes.
  • Make the balsamic sauce. Arrange the roast and vegetables on a serving platter. Remove the trivet and the rosemary sprigs and add the balsamic vinegar and cornstarch. Saute and stir until the sauce thickens.
  • Serve. Drizzle the balsamic sauce over the shredded pork and serve with the carrots and potatoes.
  • Tips For Making Pulled Pork

    • Be sure to deglaze the inner pot to loosen any stuck on bits. This helps you avoid the dreaded burn notice.
    • Use the Natural release after cooking to keep the meat juicy and flavorful.
    • If youre not eating right away, place the pork back in the inner pot to keep it warm until ready to serve.
    • Keep your Instant Pot away from cabinets when releasing the pressure so the steam doesnt ruin them.
