Tips For Instant Pot Beef Stew
- Cut your carrots and potatoes into large pieces so that they dont get mushy in the stew after cooking.
- I like to use halved baby yellow potatoes. You can also use larger Russet or Yukon Gold potatoes that have been cut into 1 1/2 inch cubes.
- This recipe can be stored in the refrigerator for up to 3 days, or in the freezer for up to 2 months.
- Want to amp up your beef stew to a new level? Sprinkle some cooked, crumbled bacon over the top before serving.
- You can add other vegetables to your stew such as a can of tomatoes or halved fresh mushrooms.

Instant Pot Mississippi Pot Roast
Wondering what the difference is between regular pot roast and Mississippi pot roast? Well, for one, there are no carrots and potatoes in the dish. The seasoning is also quite different youll find au jus, ranch, and beef broth combined to make the gravy.
You may be surprised to find out that pepperoncini peppers are included for heat and flavor.
If youve never tried these peppers, theyre both spicy and sour. For those who cant handle spicy dishes, use banana peppers instead for a similar taste without the spiciness.
Cooking Tips For Pressure Cooker Beef Stew
- Brown the beef using your Instant Pots sauté mode for maximum flavor. Let the beef brown, without moving the pieces, for about 4 minutes per side. Youll know that the beef has developed the perfect golden crust and is ready to flip when it releases easily from the bottom of the pot. I use these kitchen tongs to easily turn the pieces of meat.
- You can save prep time by peeling and chopping the carrots while the beef browns. Scrub and chop your potatoes while you sauté the onion.
- Try adding other veggies, such as sweet potato, parsnips or peas to your stew. Sweet potato and parsnips should be cut into large chunks and added before pressure cooking. Stir peas in after pressure cooking, when you thicken the broth.

So my routine hasnt changed at all.
Im still in my no-shame sweatpants with a cozy bowl of comfort here.

How To Cook The Best Beef Stew In The Instant Pot
Cooking great beef stew in the Instant Pot is a two step process.
- First pressure cook the meat.
- Second, add the vegetables and pressure cook a few more minutes.
The vegetables cook more quickly than the beef, so this two step process means that the meat is perfectly cooked without the veggies getting mushy.
Keep in mind that after pressure cooking the meat, you can leave the Instant Pot on the “Keep Warm” setting for up to 10 hours and continue with the recipe when you’re ready. The beef will become more tender the longer it sits.
How To Make Beef Stew In The Instant Pot
Cut your cooking time in half by opting to make this beef stew in an Instant Pot. Follow my easy recipe steps and have a hearty meal prepared in 1 hour!
Step 1: Heat the Oil and Brown the Beef
Set the Instant Pot to sauté and add the oil, allowing the oil to get hot before adding the meat. Once your meat is added to the hot oil, sauté for 5 minutes to brown the outside of the meat.
Step 2: Add Garlic and Onion
When the meat has browned, add in the minced garlic and diced onion. Sauté for another 3 minutes. The garlic onion adds incredible flavor to the meat and provides the foundation of the stews flavor profile.
Step 3: Add the Remaining Ingredients to the Instant Pot
Add the broth to the pot to deglaze the Instant Pot liner from anything that might have stuck during the browning of the meat and the sauteeing of the onions and garlic. If you dont deglaze the pot, you could end up with a BURN alert.
Once youve deglazed the bottom of the pot, add the cubed potatoes, carrots, tomato paste, and spices. Close the lid, seal the pressure valve and cook on high for 30 minutes.
Step 4: Natural Pressure Release
Once the 30 minutes of cooking are done, choose the natural release pressure which will decrease the pressure in the Instant Pot slowly.
Step 5: Thicken the Beef Stew

What To Do If The Meat Isnt Tender Enough
The meat in Pressure Cooker Beef Stew should be cooked tender by the time the first 10-minute cook time ends. If you like a fork-tender beef, you may want to add a few extra minutes to the cook time.
I recommend tasting the beef to ensure its cooked as tender as you like it.
If your meat seems a little chewy after pressure cooking, return the lid and cook at High Pressure for another 3 to 5 minutes before adding the vegetables.
This Instant Pot Beef Stew Is Rich Hearty And Ready In 45 Minutes
Do you ever give yourself kitchen challenges? Every now and again I impose a set of parameters on myself to see if I can bring a meal in at a certain cost, with a specified number of ingredients or within an allotted amount of time.
For the Dinner in Minutes column, I strive to find recipes that can be made in 30 minutes 45 minutes, max. That can be a challenge, especially when it comes to beef stew, a dish I crave when the temperature dips in autumn.
I was eager to dig into tender meat and just-softened vegetables all piled into a bowl with brown gravy and served with a warmed, crusty loaf.
The challenge: Even in a multicooker, just about every recipe I have tried came in at over an hour. Certain fundamental elements contributed to this: The meat must be browned, the vegetables must be chopped, the multicooker takes at least 10 minutes to come up to pressure, and the stew itself must cook under pressure for at least 25 minutes to bring the flavors together.
Scale and get a printer-friendly version of the recipe here.
The only time-saving measure I could find that did not affect the flavor was to turn to convenience foods. I selected precut stew meat, baby new potatoes , baby carrots and frozen peas and pearl onions. I also relied on minced garlic and onion rather than fresh for the seasoning. This eliminated chopping altogether.

Traditional Meatloaf Instant Pot
Have you been searching for the ideal meatloaf recipe one thats not too busy but still tastes divine? Then, look no further!
This traditional meatloaf works well as is, though, of course, you can also spice it up with a bacon wrap.
I dont know about you, but I dont usually add bell peppers to meatloaf.
However, its an excellent way to sneak some veggies into the dish. Instead, try sliced green bean pieces to add the green color and additional nutrients.
Why Is Searing Stew Meat Recommended
- There is this thing called the Maillard reaction that occurs during high heat cooking. Basically, it is the chemical transformation of sugars and amino acids resulting in rich deep color, heightened flavor, and a more palatable texture.
- Even simpler ~ caramelizing intensifies the flavor.
- You really dont want to skip this step. It makes the difference between a so-so stew and an amazingly delicious stew!

The step-by-step photo tutorial is below but be sure to watch the short instructional video at the end of this post.
Lets get cooking!
Set your Instant Pot to SAUTÉ and when the indicator reads HOT add a couple of tablespoons of vegetable oil. Add half of the beef cubes and season with 2 teaspoons of the seasoning mix. Cook, stirring occasionally, until the beef is nicely browned.
Use a slotted spoon to transfer the beef to a dish and repeat this process with the remaining beef and an additional 2 teaspoons of seasoning mix. There will be a little seasoning left and you want to reserve that for later.
Add a little more vegetable oil to the empty pot, if necessary, and add some diced onions, chopped celery, and minced garlic. Cook, stirring, until softened.
Add a few tablespoons of tomato paste and stir it well to combine. Tomato paste adds some oomph to the sauce.
Pour in some low-sodium beef broth, a little red wine , some Worcestershire sauce, the remaining seasoning mix, and a bay leaf.
Time to add the browned beef back to the liquid in the pot and give it a stir. Scatter the potatoes and carrots over the top and do NOT stir the mixture at this point. They should rest on top of the meat and liquid so that they will cook to fork-tender perfection. I use this same method in my Instant Pot Pot Roast and it works like a charm.
Secure the lid and set your Instant Pot to cook at HIGH pressure for 30 minutes.
Just slice the bread and pour the wine and dinner is served.

Stick With Large Veggies
Because this beef stew is made in the Instant Pot and we want everything to cook in the same amount of time, the carrots and potatoes should be cut into large pieces so that they dont overcook and fall apart. Go with chunks that are the same size as the beef cubes, with the exception of the onion and garlic, which can be cut smaller since we want those to cook down as much as possible.

The Best Seasoning For Beef Stew
One of the issues Ive found with countless other beef stew recipes is that the end result is bland. To ensure that homestyle flavor we all crave, Ive created a simple seasoning mix that I also use in my Classic Stovetop Beef Stew recipe.
We do not want to depend on salt and pepper alone! In fact, adding a variety of other spices means you can be a bit conservative with the salt and only add more at the end if you feel it needs it.
This seasoning mix is added to the Instant Pot Beef Stew in layers throughout the cooking process so the flavor is infused throughout both the beef and the sauce.
I just recently upgraded from my older Instant Pot DUO06 to the new 6-Quart Instant Pot Duo Nova. I was thrilled to find some very important differences in this appliance from my older model. First, once you close the lid and set the time it automatically seals and begins to come to pressure with no maneuvering of the steam release valve. If youve ever forgotten this step when cooking in your Instant Pot you know how welcome this new feature is. Theyve also improved the system for releasing the steam with an easy to press button.
Its so slick and so easy to use.

Tips For The Best Instant Pot Beef Stew:
Generally I use beef stew meat for this recipe as its usually the most cost effective. However, you can use a chuck roast or rump roast and cut it into 1 inch pieces before placing it in the pressure cooker.
Make sure that you dice the carrots and the potatoes into large pieces, if theyre diced too small, they will cook too quickly in the instant pot. I have also used sweet potatoes instead of Russet potatoes in this recipe and its delicious.
I usually dont brown my stew meat for this beef stew recipe because Im pretty lazy in the kitchen. However, you can brown the stew meat on the sauté setting with 2 tsp of olive oil if you prefer. Then scrap off the brown bits, add the other ingredients and switch the instant pot to the pressure cooker setting.
Generally, I use water for this beef stew recipe as the beef and other seasoning add a ton of flavor however, you can use beef broth or add a beef bouillon cube to the ingredients to add more beef flavor based on your preference.
After the cook time, if the beef stew is too watery, switch the instant pot the sauté setting and allow for the excess liquid to cook off until the stew is the consistency that you prefer.

Dont Flour Your Beef Before Cooking
In traditional stew recipes, its common for the uncooked stew meat to be dredged in flour and browned before adding the liquid.
DONT DO THIS IN YOUR PRESSURE COOKER!
Flouring the beef before cooking in the pressure cooker can lead to a thick, flour-y build up on the bottom of your cooking potresulting in a Burn notice and a ruined stew.
