How To Cook The Best Beef Stew In The Instant Pot

Cooking great beef stew in the Instant Pot is a two step process.

  • First pressure cook the meat.
  • Second, add the vegetables and pressure cook a few more minutes.

The vegetables cook more quickly than the beef, so this two step process means that the meat is perfectly cooked without the veggies getting mushy.

Keep in mind that after pressure cooking the meat, you can leave the Instant Pot on the “Keep Warm” setting for up to 10 hours and continue with the recipe when you’re ready. The beef will become more tender the longer it sits.

How To Make Beef Stew In The Instant Pot

Cut your cooking time in half by opting to make this beef stew in an Instant Pot. Follow my easy recipe steps and have a hearty meal prepared in 1 hour!

Step 1: Heat the Oil and Brown the Beef

Set the Instant Pot to sauté and add the oil, allowing the oil to get hot before adding the meat. Once your meat is added to the hot oil, sauté for 5 minutes to brown the outside of the meat.

Step 2: Add Garlic and Onion

When the meat has browned, add in the minced garlic and diced onion. Sauté for another 3 minutes. The garlic onion adds incredible flavor to the meat and provides the foundation of the stews flavor profile.

Step 3: Add the Remaining Ingredients to the Instant Pot

Add the broth to the pot to deglaze the Instant Pot liner from anything that might have stuck during the browning of the meat and the sauteeing of the onions and garlic. If you dont deglaze the pot, you could end up with a BURN alert.

Once youve deglazed the bottom of the pot, add the cubed potatoes, carrots, tomato paste, and spices. Close the lid, seal the pressure valve and cook on high for 30 minutes.

Step 4: Natural Pressure Release

Once the 30 minutes of cooking are done, choose the natural release pressure which will decrease the pressure in the Instant Pot slowly.

What To Do If The Meat Isnt Tender Enough

The meat in Pressure Cooker Beef Stew should be cooked tender by the time the first 10-minute cook time ends. If you like a fork-tender beef, you may want to add a few extra minutes to the cook time.

I recommend tasting the beef to ensure its cooked as tender as you like it.

If your meat seems a little chewy after pressure cooking, return the lid and cook at High Pressure for another 3 to 5 minutes before adding the vegetables.

Do you ever give yourself kitchen challenges? Every now and again I impose a set of parameters on myself to see if I can bring a meal in at a certain cost, with a specified number of ingredients or within an allotted amount of time.

For the Dinner in Minutes column, I strive to find recipes that can be made in 30 minutes 45 minutes, max. That can be a challenge, especially when it comes to beef stew, a dish I crave when the temperature dips in autumn.

I was eager to dig into tender meat and just-softened vegetables all piled into a bowl with brown gravy and served with a warmed, crusty loaf.

The challenge: Even in a multicooker, just about every recipe I have tried came in at over an hour. Certain fundamental elements contributed to this: The meat must be browned, the vegetables must be chopped, the multicooker takes at least 10 minutes to come up to pressure, and the stew itself must cook under pressure for at least 25 minutes to bring the flavors together.

The only time-saving measure I could find that did not affect the flavor was to turn to convenience foods. I selected precut stew meat, baby new potatoes , baby carrots and frozen peas and pearl onions. I also relied on minced garlic and onion rather than fresh for the seasoning. Lets get cooking!

Set your Instant Pot to SAUTÉ and when the indicator reads HOT add a couple of tablespoons of vegetable oil. Add half of the beef cubes and season with 2 teaspoons of the seasoning mix. Cook, stirring occasionally, until the beef is nicely browned.

Use a slotted spoon to transfer the beef to a dish and repeat this process with the remaining beef and an additional 2 teaspoons of seasoning mix. There will be a little seasoning left and you want to reserve that for later.

Add a little more vegetable oil to the empty pot, if necessary, and add some diced onions, chopped celery, and minced garlic. Cook, stirring, until softened.

Add a few tablespoons of tomato paste and stir it well to combine. Tomato paste adds some oomph to the sauce.

Pour in some low-sodium beef broth, a little red wine , some Worcestershire sauce, the remaining seasoning mix, and a bay leaf.

Time to add the browned beef back to the liquid in the pot and give it a stir. Scatter the potatoes and carrots over the top and do NOT stir the mixture at this point. They should rest on top of the meat and liquid so that they will cook to fork-tender perfection. I use this same method in my Instant Pot Pot Roast and it works like a charm.

Secure the lid and set your Instant Pot to cook at HIGH pressure for 30 minutes.

Just slice the bread and pour the wine and dinner is served.

    One of the issues Ive found with countless other beef stew recipes is that the end result is bland. To ensure that homestyle flavor we all crave, Ive created a simple seasoning mix that I also use in my Classic Stovetop Beef Stew recipe.

    We do not want to depend on salt and pepper alone! In fact, adding a variety of other spices means you can be a bit conservative with the salt and only add more at the end if you feel it needs it.

    Tips For The Best Instant Pot Beef Stew:

    Generally I use beef stew meat for this recipe as its usually the most cost effective. However, you can use a chuck roast or rump roast and cut it into 1 inch pieces before placing it in the pressure cooker.

    Make sure that you dice the carrots and the potatoes into large pieces, if theyre diced too small, they will cook too quickly in the instant pot. I have also used sweet potatoes instead of Russet potatoes in this recipe and its delicious.

    I usually dont brown my stew meat for this beef stew recipe because Im pretty lazy in the kitchen. However, you can brown the stew meat on the sauté setting with 2 tsp of olive oil if you prefer. Then scrap off the brown bits, add the other ingredients and switch the instant pot to the pressure cooker setting.

    Generally, I use water for this beef stew recipe as the beef and other seasoning add a ton of flavor however, you can use beef broth or add a beef bouillon cube to the ingredients to add more beef flavor based on your preference.

    After the cook time, if the beef stew is too watery, switch the instant pot the sauté setting and allow for the excess liquid to cook off until the stew is the consistency that you prefer.

    Dont Flour Your Beef Before Cooking

    In traditional stew recipes, its common for the uncooked stew meat to be dredged in flour and browned before adding the liquid.

    DONT DO THIS IN YOUR PRESSURE COOKER!

    Flouring the beef before cooking in the pressure cooker can lead to a thick, flour-y build up on the bottom of your cooking potresulting in a Burn notice and a ruined stew.

  • What type of meat do I use for instant pot beef stew? We prefer using beef chuck since I find it produces the most tender beef but if you are in a pinch, you can use beef stew meat
  • What is the best pressure cooker for making beef stew? Be sure to use at least a 6 quart Instant Pot pressure cooker for this recipe.
  • Can I skip browning the meat before? While you can skip this step, I would definitely brown the beef in the Instant Pot prior to adding the other ingredients. Its an extra, more involved step but completely worth it for that caramelized and hearty depth and extra layer of flavor you get. On those days you are pressed for time, you are totally free to skip the browning if youd prefer an easy dump and go recipe.
  • What vegetables do you use in beef stew? Be sure to use a combination of aromatics like onions and garlic plus vegetables. I used carrots, celery potatoes and a sweet potato. Feel free to leave that out if youre not a sweet potato fan and you can also add some green peas or cauliflower if you like.
  • What other key ingredients do I need to make the best beef stew? Add some tomato paste, Worcestershire sauce, balsamic vinegar and a star anise for a punch of flavor. If you cant find a star anise or are not a fan, feel free to leave it out.
