Since the alcohol in this recipe is being used to deglaze, it does evaporate a lot. However, if you prefer the alcohol to be completely gone, cook it a little longer before adding the other liquids. You can also add less burbon.

I have also had readers who substituted the bourbon with wine , and even coffee.

These pressure cooker short ribs are braised in my own homemade beef and chicken stock, but you can braise them in a good quality beef stock instead too. These instant pot short ribs are cooked to perfection in a slightly sweet and slightly spicy base. I added cayenne pepper and paprika to give these short ribs a little spicy kick. I usually add up to 2 tsp of cayenne pepper . But Ive adjusted it to a milder level in this recipe. But feel free to adjust the level of spice to your liking.

How Do You Make Instant Pot Short Ribs

Start by turning your pressure cooker to saute mode, then brown the ribs. Remove the short ribs from the pot, then brown the vegetables. Add the red wine, and simmer until it has reduced by half. Add the rest of the sauce ingredients, then seal the pot. Cook on high pressure, then let the pressure release naturally. Remove the ribs from the pot, and skim any excess fat from the cooking liquid. Add cornstarch, then bring the liquid to a simmer. After the sauce has thickened, return the ribs to the pot and spoon the sauce over the top. Garnish with fresh herbs, then serve and enjoy!

Yes! Increase the pressure cooking time by 1-2 minutes if using bone-in ribs.

How Long To Cook Short Ribs In The Instant Pot

For 2-inch pieces: Cook at high pressure for 45 minutes. Allow the pressure to release naturally for 10 minutes , then quick release the remaining pressure.

For 4-inch pieces: Stack them on end, cover in sauce, and pressure cook on high for 70 minutes. Let the pressure naturally release for 10 minutes and then quick release the rest of the pressure.

I like to serve short ribs over a bed of Instant Pot mashed potatoes with carrots. Be sure to serve with the blended juices form the pot as well. If you want to make that into a gravy, you can do so my adding a slurry of cornstarch and water to it and allowing it to thicken. I like it more akin to a broth though, so I dont thicken mine.

Why Do Short Ribs Come Out Tough

There are a few reasons why short ribs can be tough, even after cooking.

  • Cooking at a temperature that is too high can make them tough. Short ribs should be cooked low and slow in order to break down the tough fibers, which makes the meat just about fall off the bone.
  • If you perform a quick release without slow release first in the Instant Pot, this can cause problems. The quick change in the temperature will shock the meat and can make it tough.
  • Cooking in an insufficient amount of liquid it should come halfway up the side of the ribs in the pot.

Soaking Or No Soaking

Prior to the cooking, some cooks soak their short ribs in cold water from 30 minutes to even overnight to remove traces of blood. They believed that without the soaking step, the beef could end up with a gamey smell. I dont recommend soaking, though. Heres why.

Its a common misconception that the red liquid that accumulates in package of meat is blood. Its not actually bloodits simply water and a type of meat protein called myoglobin that seeps out of the meat.

In olden days, this soaking practice was needed to make soup where the meat was not properly treated after the slaughtering. People brought freshly slaughtered meat home right away, and they had to let it soak to remove the blood that was trapped in every muscle tissue before cooking with it.

This practice was done by our great-grandmothers, and generations later we mindlessly follow that tradition. In the modern day slaughtering process, however, most blood is already removed from the meat before it is packaged for sale.

Therefore it is unnecessary to soak the meat in water beforehand. You can get the clean taste and absolutely no gamey smell as a result, WITHOUT soaking the ribs in the water, as long as you use fresh ribs out of the package that are not too old or expired.

Prepping The Beef Ribs

There are 2 different cuts of short ribs, English cut and flanken cut. The english cut is widely available, and is what you can see in my images of this post. I prefer the English cut because theyre meatier segments that are taken from one section of the rib as opposed to the fanklen style where you get thinner stips with multiple bone segments.

If you bought a plate/rack, go for English style cut by cutting in between the bones, so each piece has 1 bone.

To prep the beef, start by washing the short ribs from remaining blood and bone dust and pat dry using paper towels. You need the meat to be really dry as youll be searing it to give it a great color and flavor when its caramelized.

Remove the silverskin/membrane on the boney side with a towel . Trim any excess fat on the external surface/meaty side as the fat wont render down since this is not grilling or smoking, but you can leave a little bit if desired as you will sear the meat.

How To Make Red Wine Gravy

Instant Pot Short Ribs

Now we can work on the red wine gravy.

Take the pot with liquid and strain it through a fine-mesh strainer in to another mixing bowl or a smaller pot.

Then take that separated braised liquid and pour it back in the Instant Pot.

Set Instant Pot again to Sauté on high heat by pressing sauté button twice. Bring the liquid to boil and cook it for about 10 minutes to reduce and thicken up.

Now your delicious tender Instant Pot Braised Short Ribs are done!

How Do I Cook Beef Short Ribs In Instant Pot

  • Mix the first five ingredients .
  • Rub the spices on the outside of the beef short rib set aside.
  • Set your instant pot to sauté. Drizzle oil into instant pot.
  • Using tongs, lower short ribs into Instant Pot. Sear all sides.
  • Remove short ribs set aside. Add tomato paste, water, balsamic, Dijon mustard, cocoa, and garlic to the Instant Pot.
  • Mix until combined.
  • Add short ribs.
  • Place lid on Instant Pot and lock into place. Turn the settings to “Pressure Cooker”, and set the timer for 40 minutes.
  • Use the quick release when it’s done. Serve hot with additional sauce spooned over the top of the short ribs.

    This year we’re really trying to get better about making healthy high-protein meals at home.

    How To Make Pressure Cooker Short Ribs

    Honestly, at first glance, the ingredient list and instructions look a lot longer than some of my recipes. But read through it, measure things out ahead of time, and put some good music on. You can totally, 100%, definitely handle this!

    Begin by browning the meat. This is probably the most time consuming part but its a step you dont want to skip because it adds a ton of flavor. Get the pan good and hot and sear all sides of the short ribs. Get them nice and brown. It takes a bit of time because youll need to do the ribs in batches. Thankfully, you can do this right in the Instant Pot! Jack of all trades, this thing. And possibly, master of all trades, too.

    Once you have the ribs browned, place them on a plate. Next, place your onion, celery, and carrots into the hot Instant Pot. And garlic, of course. Once those are sautéed, add a nice dry red wine and scrape all those yummy brown bits off the bottom of the pot. Deglazing the pan will ensure you dont see that annoying burn warning on the Instant Pot but also adds great flavor to what will eventually be your gravy.

    When the wine has reduced a bit, you add even more flavor to the gravy and the ribs with beef broth, balsamic vinegar, Worcestershire sauce, brown sugar, bay leaf, thyme, and paprika.

    This is making me want to get in the kitchen and make these again right now!

    Now its time for the pressure cooker to work its magic.

    About These Instant Pot Short Ribs

    Typically, short ribs take hours and hours to cook. You want to slowly cook them so the meat becomes tender and will fall off the bone.

    Thankfully, the pressure cooker works great to achieve the same result in a much shorter time. Now, I agree that theres a time and a place to cook a pot of short ribs all day. Theres just something about the leisurely act of preparing a meal that you work on for hours and then theres that smell wafting through your house all day. Sometimes, thats exactly what you want.

    However, sometimes you want the same end result, in a fraction of the time.

    Enter the Instant Pot: tender, melt-in-your-mouth meat in a short amount of time. Its the same concept as Instant Pot Ribs, Instant Pot pulled pork, Instant Pot Pot Roast, and Instant Pot beef stew. Meals that are normally slow cooked are pressure cooked with the same delicious result.

    Its really kind of amazing.

    Even more amazing is that the potatoes cook AT THE SAME TIME. In the SAME POT.

    Sorry for yelling, but this is very exciting to me.

    I cant take total credit for this idea, its one I saw on Pressure Cook Recipes. Once you have the short ribs and all the other good stuff in the Instant Pot, you place a small bowl or cake pan on top of it all, and add your potatoes there. They cook in a similar manner to my Instant Pot mashed potatoes but at the same time as the short ribs!

    I feel like every time I make a new Instant Pot recipe, I fall in love with it a little more.

    Instant Pot Asian Beef Short Ribs

    Instant Pot Short Ribs

    Why do I place them on the rack instead of straight on the bottom of the instant pot liner? Well, I like to have the ribs cook without being boiled. I feel like boiling the ribs makes them lose a lot of their flavor. With the liquid underneath the ribs, they have a chance to maintain their meaty flavor.

    Place one cup of water underneath the ribs and pop the lid on. Cook the ribs on Manual High Pressure for 30 minutes with 10 minutes of Natural Pressure Release before opening the valve and letting the pressure release completely.

    Meanwhile youll want to mix together the delicious sweet and slightly spicy Asian-inspired sauce on the stove top.

    The sauce is a mixture of soy sauce, brown sugar, sesame oil, ginger, garlic and chili garlic sauce. Its simmered on the stove top and thickened with a little cornstarch before slathering the tender beef short ribs.

    Brush the ribs all over with the thickened sauce and pop under the broiler for a minute or two per side and youre done!

    Man oh man, these ribs were to die for! The whole house smelled amazing as they were cooking, and even my kids couldnt wait to eat them!

    The pressure cooker does all the hard work of making these ribs ultra tender in a fraction of the time.

    Youre going to be blown away!

    I finished them off with a sprinkle of sesame seeds and diced green onions. We serve these with a side of steamed white rice and a green vegetable.

    Our favorites are these Parmesan Roasted Brussels Sprouts, Broccoli or Asparagus.

    How To Make It

    To start, wash and pat dry the boneless short ribs and season them with salt and pepper from both sides.

    Set Instant Pot to Sauté on high heat by pressing sauté button twice.

    Now we are going to brown the meat! This is a very important part that you cannot miss! It will give the meat that beautiful crust outside and bring out the best flavor!

    I like to brown the meat in 2 batches not to overcrowd the pot. Brown it for about 4-5 minutes on each side until you get dark brown crust, then remove from the pot.

    After its done, add sliced onion and sauté them for about 8-10 minutes until they are translucent and have golden color.

    Add crushed garlic and tomato paste, stir and cook for a couple of minutes.

    Add red wine and cook for about 10 minutes. This is another important step! The wine needs to reduce in half and get more concentrated. It will help to give more aroma to the meat later while cooking together.

    When the wine is reduced, add beef broth and carrots.

    Put the browned meat back, so it will be halfway covered with liquid.

    Add some thyme and rosemary.

    Cover with a lid and cook on Stew high pressure for 40 minutes. Make sure that the venting knob is turned to Sealing!

    When it is done, let it naturally release the pressure for 15-20 minutes. Then switch the knob to venting position and release the steam. Make sure the steam is fully released and the valve is completely down before opening the pot!
