The first step is to brown the chunks of beef directly in your Instant Pot using the sauté function. You may need to do this in two batches, but it should only take about 10 minutes or so, total. If youre in a hurry you can skip this step.

Next, return all the beef back to your pressure cooker and sprinkle with a little flour. Stir immediately to prevent the flour from burning.

    Start by seasoning the meat with salt and pepper. Then add the butter to your Instant Pot, press the saute button, let the butter melt, and add the meat. Brown the meat all the way around. When its done browning, plate it.

    Then add the carrots, onions, and seasonings to the Instant Pot. Saute until the onion is softened, about 3-4 minutes remember to keep on mixing, so it doesnt stick.

    We have used this cut in many ways. Why? It is SO cheap that it just tempts me at the store saying make me! every time I see it. I have learned a few things about it though.

    I am all about easy one pot meal ideas so lets just go with this one shall we? Even with the stop in the middle to break it up time it is done and ready to serve in a little over an hour. Any other method will take 4x that long so to me it is really a no brainer as to which I would choose over and over again.

    Whether you find this one sale and freeze it in a freezer bag, or buy meat in bulk like we do from local farmers and get it in paper the same directions apply. The pieces will be stuck together in a big clump either way. This means you will need to break it up after about 25 minutes so the inner pieces cook evenly and get soft too.

    Now, you can bring the yummy beef stew gravy to a simmer with the Saute More function.

    Breakdown the mushy potatoes and carrots with a wooden spoon, then stir to thicken the beef stew.

    *Pro Tip: The beef stew should be thick enough at this point. If necessary, you can thicken the gravy with flour or cornstarch + water mixture.

    Add frozen peas, sautéed mushrooms, and the optionally set-aside carrots, celery, and potatoes in the Instant Pot.

    • Olive oil. For beef stew, I like to cook the meat in a light olive oil canola oil also works.
    • Beef. You can use a chuck roast and cut it yourself, but I find its easiest to just buy stew meat already cut up and trimmed at the butcher counter.
    • Veggies. For our version of Instant Pot Beef Stew, we use the classics carrot, onion, celery, potatoes, and peas . You could also throw in some parsnips, green beans, or pearl onions if you want to up the veggie ratio.
    • Garlic. Not much to explain here! Garlic. Always lots of garlic.
    • Tomato paste. We love to use tomato paste in our beef stew because it helps to thicken the stew. It also has a really concentrated tomato flavor, so it adds a ton of flavor.
    • Tomato puree. You could use tomato puree or canned tomatoes here. My kiddos dont really like whole tomatoes, so I sneak them in this way. If you have canned diced tomatoes on hand, that works too!

    When it comes to pressure cooker beef stew, there is no better cut of meat than chuck. Buy a thick chuck pot roast and cut it into chunks. If you cant find chuck, regular stewing beef will work just fine!

    VEGETABLES

    This recipe contains the classics, potatoes, onions, carrots and celery. Peas are added in at the end .Not a fan of peas? No problem, add in some green beans instead!

    BROTH

    This is a rich brown-gravy type broth with flavor from fresh herbs and a bit of tomato paste. If desired a small can of diced tomatoes can be added for a tomato broth stew.

    There are a few ways to thicken a stew. I chose to use a slurry made from some of the broth in the stew, and corn starch. You whisk it together, then add it back into the stew bowl, and let it cook for a few more minutes to cook down and thicken. You have to give it some time to thicken.

    Another option is to add additional potatoes, and then scoop some of them out, and blend them up into a paste, then add them back in and let them act as a natural thickener. This is a great option if you dont or cant use corn starch as a thickener.
