I made two batches. The second time I let it ferment for twice as long, about 18 hours. What I found is that the flavor is more tart and yogurt-like when you let it ferment longer. It also had a little bit of a grainy texture, but after some research I learned that the grainy texture is characteristic of coconut milk. If you want a sweeter tasting yogurt, I would also add more sweetener. I will definitely make it again, with minor adjustments. Its the best way to make vegan yogurt at home.

Why Does My Coconut Yogurt Separate

Check your yogurt after about 12 hours dont wait for the entire 15 hours. If you culture your yogurt for too long, it can cause it to separate or get lumps in it.

If you notice that your yogurt is lumpy, just strain it to remove the whey, then beat the solids in a bowl with a whisk. It shouldnt take too much work to make it smooth again.

A lot of people refrain from eating yogurt on a low carb diet. But, when you use coconut cream, you know its got to be very low in carbs.

Theres debate on the accuracy of carb count listed on yogurt anyway. So the carbs in yogurt are generally less than stated on the label.

Important Tips Before You Get Started

#1 Make sure you use clean jars, bowls , blender components , whisks, etc. We want them to be free of microbes that might interfere with the good guys we are trying to culture.

To get everything ready you can run it through the dishwasher with hot water OR you can pour boiling water into the jars/vessels you are planning on using and use hot, soapy water to clean everything else. I keep my extra clean jars in a particular spot in my kitchen so that I can grab them when needed.

#2 The maple syrup in this recipe is food for the good guys, so dont leave it out. Unlike dairy milk, which contains naturally-occurring sugars that feed friendly bacteria, coconut milk doesnt contain natural sugar. For that reason we need to add some to power our good guys.

Honey is not a good option because it can negatively impact microbial growth a property which is great wound healing but not making yogurt which is why maple syrup is recommended. Although some might remain in the final product , most will be used up during the fermentation process.

#3 If youre sensitive to dairy, make sure your probiotic powder is labeled dairy-free and/or vegan. A lot of probiotics have the same strains, but they come from different sources.

How To Make Instant Pot Cold Start Yogurt

The cold start method simply uses ultra filtered milk and a couple tablespoons of plain yogurt . No boil yogurt can only be done with ultra filtered milk, such as Fairlife brand.

The other bonus of cold start yogurt is no straining! After the yogurt cooks for 8-10 hours, it is so thick a spoon can stand straight up in it!

  • Pour in cold ultra filtered milk, such as Fairlife into clean pot.
  • Whisk in 2 tablespoons plain yogurt starter.
  • Place lid on pressure cooker and press yogurt button. It will read 8:00 hours.
  • Let yogurt incubate for cook time.
  • When it is finished the yogurt may be eaten immediately. However, if you wish for the whey to separate, cover pot with plastic wrap and let sit for 4-8 hours in the refrigerator.
  • Spoon out whey liquid, if desired, for thicker yogurt. Store in an airtight container.
  • Although most organic milk brands are labeled ultra pasteurized, the results dont match up to Fairlife ultra filtered milk. This means Fairlife has more protein and less sugar.

    Therefore, after the incubation time, Fairlife cold start yogurt will be very thick, and theres no need to strain.

    Ultra pasteurized milk brands will result in thin and watery cold start yogurt. Although the yogurt may still be strained, you wont be left with much yogurt after the whey drains out.

    What Is The Best Yogurt Starter To Use

    When I initially experimented with Instant Pot yogurt, I noticed I would occasionally get a grainy texture. The taste was still spot on, but the texture threw me off.

    Some research brought me to a great article explaining why my yogurt was grainy. When additives are in your commercial yogurt starters, such as pectin, inulin, cornstarch, and gelatin, it can yield a grainy yogurt.

    To avoid this do one of two things:

    • Read the labels when using a commercial yogurt as a starter. Only use one without additives, such as Fage .
    • Or, use your own starter from previously made homemade yogurt.

    When youre done making yogurt, freeze a couple tablespoons straight away for your next batch. You wont have to try to remember to save some before you finish all your yogurt. Plus, it will save you from buying commercial yogurt each time.

    Freezing homemade yogurt starter also insures the bacteria and cultures stay fresh and alive until you are ready to make yogurt again. Sounds kind of creepy, but its true.

    How Is Coconut Yogurt Made

    Regular cows milk yogurt relies on bacteria to thicken the yogurt, give it a tangy flavor, and add some beneficial probiotics. Because coconut milk has a very different structure, we have to use other methods to turn it into creamy, spoonable yogurt: probiotic powder for the health benefits and flavor, and agar agar or tapioca starch for the thickener.

    Making Yogurt In The Instant Pot

    Using an Instant Pot makes this process easier when it comes to keeping a proper temperature for fermentation, but you can also use a simple glass jar in a warm area of your home for similar results. Im still in minimalist-mode after living in tiny apartment kitchens for so long in Los Angeles, so I aim to keep my kitchen appliances to a minimum.

    Thats why when I decided to finally take the plunge and buy the Instant Pot, I wanted to get the model with the yogurt-making function, so it could multitask. Using the yogurt function did NOT come intuitively to me, but I finally figured out a one-pot method that makes the yogurt-making process as easy as possible.

    One: Heat Up Coconut Milk

    It is important to mention that canned coconut milk has already been pasteurized, so there is no need to heat the milk to 180 degrees. We can follow a very similar process to Instant Pot Cold Start Yogurt when making coconut milk yogurt.

    However, we do need to heat the coconut milk up to about 110-115 degrees to dissolve the gelatin and agar agar. This step also helps the fat from the coconut milk to emulsify into the liquid.

    To heat the coconut milk up, hit the Yogurt function on your Instant Pot. Hit yogurt again until it reads boil. Pour in the coconut milk and gelatin or agar agar and whisk well to incorporate. Use a digital thermometer to watch the temperature of the yogurt. You want it to reach 110-115 degrees. Once that temperature has been reached, turn the Instant Pot OFF.

  • Fill a sterilized pint-sized canning jar with coconut milk.
  • Break open the probiotic capsules and carefully stir the contents into the coconut milk.
  • Place a lid on the jar to keep out condensation.
  • Add 1 cup of water to the Instant Pot bowl, and then place the stainless steel rack on the bottom of the bowl.
  • Place canning jar on the steam rack and lock the Instant Pot lid in place.

    Make sure you use fresh probiotics that have been properly refrigerated to maintain their potency.

    If you make 2-3 jars of yogurt at one time , you might want to remove the handles from the stainless steel steam rack that came with the Instant Pot . Otherwise the jars wont all fit on the rack with the handles in the way.

    Always, always use clean, sterilized canning jars. You dont want anything funky growing in your yogurt. Eww.

    Theres also the possibility of using no thickener if you want to use straight coconut cream to make your yogurt instead. I dont care for the taste or texture of the yogurts made with only coconut cream, as I think they taste too rich and fatty, but feel free to go that route if youd like to.

    As written, this coconut milk yogurt recipe produces a very thick result, similar to a Greek-style yogurt, thanks to the thickener and fat content of the full-fat coconut milk. The yogurt will be very thin and runny when its in the Instant Pot fermenting, but it will thicken up perfectly once you transfer it to the fridge to chill.

    Here Are A Few Other Things To Keep In Mind When Making Coconut Milk Yogurt In The Instant Pot:

  • Make sure you sanitize everything well before getting started. Usually a dishwasher can sanitize everything for you but otherwise you can use boiling water to sanitize the bowl of the Instant Pot and your whisk.
  • I could never get the boil function on the Instant Pot to actually make my coconut milk boil. Maybe its just my machine, but I thought Id share. I read that you want the coconut milk to reach 180-degrees Fahrenheit to make sure no bad bacteria develops, and when I used the boil function that is built into the Instant Pot, my coconut milk never reached higher than 150ºF. So, to get around that I realized I could simply use the Saute function instead! The saute function brought my coconut milk to a boil in just a few minutes, and the temperature on my thermometer shot past 180ºF once the milk reached a rolling boil. So, if you dont have a thermometer, I think its safe to assume that if your coconut milk reaches a rolling boil, it has safely reached that 180ºF mark.
  • The maple syrup called for in this recipe is required as food for the good bacteria to thrive on , but when you let it ferment the yogurt becomes very tart so dont worry about the sugar content in that maple syrup. If you want a sweet yogurt, youll need to add more sweetener after the fermenting process is complete.

The fat in the coconut milk definitely contributes to the classic creamy yogurt texture, so other non-dairy milks will most likely not produce ideal results. If you use the culinary milk to avoid using canned coconut milk, Id recommend adding 1/2 cup of water to the pot before boiling, as this coconut milk is thick and a bit grainy.
