The trivet is a must in making these Instant pot pork loin chops to be sure they are cooked properly because it is used to elevate the meat off the bottom.

When you use the trivet the air and steam circulate above and below the meat for a more evenly cooked pork chop. Without the trivet, they can burn on the bottom of the pot.

Does Meat Need To Be Covered With Liquid In An Instant Pot

No, the pork loin chops do not have to be covered with liquid in the instant pot. The idea of making pork chops in the pressure cooker is that they cook with steam. If they are covered with liquid they will boil and thats not the result that we are looking for.

Thats why you only need 1 cup of liquid, which sits on the bottom of the pot underneath the trivet and the pork chops elevated above it.

How To Cook Pork Chops In The Instant Pot

For the best results, buy boneless pork chops that are at least 1 inch thick with a little bit of marbling, but not a large fat layer around the edges. A small amount of fat will get rendered well in the Instant Pot, but a thick layer really need to be seared to turn out well.

Season the pork chops with garlic powder, Italian seasoning, salt and pepper.

Heat the Instant Pot on saute mode until hot. Add 1 tbsp cooking oil. Place the pork chops into the pot and sear them for 2-3 minutes per side. Turn off saute mode and remove the chops from the inner pot.

Pour in a cup of water. Scrape up any brown bits from the bottom. If you skip this step, you might find your Instant Pot screaming at you with the Burn message.

Place the pork chops into the inner pot. You can stack them on top of each other, if there are too many for one layer.

Lock the lid and set the vent to sealing. Press the pressure cook button and set the timer to 8 minutes. When the time is up, allow a natural pressure release for 5 minutes, then release the remaining pressure.

What Is The Secret To Make Juicy Instant Pot Pork Chops

We have made this delicious recipe multiple times, and in our view, the secret starts with the meat. We recommend:

TRY NOT TO USE THIN CUT PORK CHOPS

  • Using thin cut pork chops can result in dry meat. Since the chops will be cooked under pressure, the meat tends to dry out if it is thin cut. Also, it might not have the best look to it.
  • The best alternative to cooking the thin cut pork chops would be cooking them on the stovetop.

USING BONELESS PORK CHOPS

  • If you prefer eating boneless pork chops, make sure to use thicker size cuts. Also, it will result in a tender and juicier meat.
  • Its important to note, that the meat is done when it reaches an internal temperature of 145 degrees F.

FOR THE BEST RESULTS USE THICKER, BONE-IN PORK CHOPS

  • This is what we usually use, and is what makes this dish so special and juicy.
  • Try to use bone-in pork chops, this results in a flavorful and tasty meal.
  • Similarly, the bone-in helps insulate the meat and keep the chops tender, juicy and very moist.

Key Steps For Instant Pot Pork Chops

  • Use thick, boneless loin chops. You could pretty much use any pork chops for this recipe, but boneless loin chops give you two advantages: The first is theres no bone to work around, and the second is that loin chops are generally more tender and quick-cooking than other pork chops.
  • Brown the chops first. Just because we cant have crispy pork chops in the Instant Pot doesnt mean that we cant get some caramelized flavors from them. Use the pots sauté setting to melt some butter and brown the chops two at a time.
  • Use the sauté function to brown the onions. While the pork chops rest, quickly brown some onions in the Instant Pot with the sauté function. You can technically caramelize onions under pressure, but that technique requires more time than we want to spend on a quick weeknight dinner.
  • Smother the chops for cooking. After the onions are golden, add some broth to the cooker and return the pork chops to the Instant Pot. Make sure the pork chops are coveredbefore sealing the cooker and setting it to 10 minutes of high pressure.
  • Finish the gravy with sour cream. After releasing the pressure from the Instant Pot , the gravy will still be quite hot and thin. Adding just a few tablespoons of sour cream to the gravy will cool it, which helps with thickening and also balances the very rich, meaty flavor of the onion gravy.
