Ill be honest the first time I used my Instant Pot, I was overwhelmed and a bit scared. An Instant Pot can be intimidating for a new user. There are so many buttons and safety warnings.
However, I guarantee that once you get started, youll wonder what you ever did without your Instant Pot. I love mine so much that I now own two Instant Pots!

Lets Put This Thing Together
First, wash and dry the lid, gasket, and metal insert. Now youre ready.
On the back of the cooker, youll see a spot where the drip catcher goes. Slide it right in. Its made to remove easily, so you can empty it. Without the catcher, youd wind up with small puddles on your counter.
Pop the insert in the cooker. Now insert the power cord into the cookers socket. Plug it in. The digital display on the front should now read OFF. Your cooker is now in standby mode.
Slide the rubbery gasket ring under the lid there’s a bracket where it will snap into place. The gasket helps seal the pot, allowing it to come to pressure.
On the underside of the lid is also a small metal cage. It will be round or rectangular, depending on your Instant Pot model, and it helps keep the valve from getting clogged with bits of food. Its removable so you can clean it out if necessary, but you probably won’t need to do this very often.
Look for arrows on the top of the lid and side of the cooker. Line these up to get the lid on and off. The first dozen or so times you use your IP, this whole getting-the-lid-on-and-off will feel unnatural, because your cooker is new and so are you. Itll eventually become second nature. If the cooker is plugged in, it bleeps cheerfully when you open and close it.
Next to the steam release is the pressure indicator. This is a little metal cylinder that the steam pushes up its a manual indicator that the unit has attained pressure.
How To Naturally Release The Pressure
If a recipe calls for a natural release, youll do nothing when the cooking cycle is complete. For most recipes, it will take 10-15 minutes for the pressure to naturally leave the pot.
I like it when recipes tell you exactly how long to wait for the natural release. In all of my recipes in The Fresh & Healthy Instant Pot Cookbook, I tell you exactly how long to wait and when that time has passed you can move the steam release valve from Sealing to Venting to release any remaining pressure. That way youre not waiting around for an extra 30 minutes or more to eat your dinner!

Do I Need To Adjust My Recipes At Higher Altitude
The short answer is yes. Some Instant Pot models e.g. Ultra and MAX will allow you to set your altitude and the cooking times will be automatically adjusted for you. Otherwise, cooking should be adjusted 5% for every 1,000 feet above 2,000 ft. above sea level. So, for example, at 3,000 ft., you will increase cooking time by 5% and at 4,000 ft., you will increase cooking time by 10% and so forth. One of our team members has lived at many varying high elevations and personally, I have never run into altitude-related issues with my Duo model.
What To Check For Safety
Before you attempt to open a pressure cooker, you should stay aware of the pressure in the container. Never try to force open a cooker with pressure inside. At the top of the pressure cooker, look for a valve on the lid.
You should see a tiny metal pin, known as the float valve. When the pressure cooker reaches zero, the float valve will drop. You cant open the pressure cooker when the float valve is up. While next to impossible to open, itd be dangerous to try.
To open a jammed pressure cooker, pour cold water over it. In most cases, that releases the pressure valve to open the lid. If that doesnt work, take out the pressure valve and put the pressure cooker on the stove. Heat it on high. This releases the jammed lid.

Steaming Your Kitchen Cabinets
After months of using my Instant Pot I still find it annoying: Steam!! When the pressure is being released using a Quick Release method, you get a lot of very strong steam coming out of the Instant Pot. I mean, it looks like a steam train. Really! My toddler is always amused by it.
At first I kept my Instant Pot on the counter next to the stove in hopes that the vent would work but all the steam kept getting onto the wall cabinets and they started to get dirty. Now I keep it on my island in the middle of the kitchen. I know many people dont have islands and that means that all the steam will be releasing right onto your wall cabinets.
Its something to think about especially if you have a nice kitchen that you dont want to ruin. I dont think Id be using my Instant Pot as often as I do now if I didnt have an island in my kitchen.
Note: I do not ever keep my Instant Pot under the vent on the stove because I dont want to accidentally turn the burner on and ruin the appliance. Please dont do it either.

What Foods Are Best For A Pressure Cooker
Pressure cooking uses wet heat only. You gotta have liquid in the cookerthe steam creates the pressure. No liquid, no steam, no pressure.
Pressure cooking is for boiling, steaming, and braising. For example, you wouldnt cook French fries or make a crusty loaf of bread from start to finish by pressure cooking.
But anything boiled or steamed or simmered is ace in your Instant Pot.
Intermittent Pressure Release Method
Intermittent Pressure Release Method is a way to have the benefits of both the methods. For food such as soups, certain grains, pastas and noodles that are prone to foaming or spitting when you use a quick pressure release and tend to overcook using the natural pressure release method, you can use this amazing method.
In this process, you open and close the pressure release valve in short intervals. Hence the pressure escapes faster than a natural pressure release and foam is also prevented from coming out of the valve. If the foam is too much, close the valve. Wait for a minute or two and then again slide the valve to Venting again. Open and close the valve when needed.
Rice is particularly cooked well using this method.
Tips You dont need to turn off your Instant pot pressure cooker for a Quick or Natural pressure process release but I recommend not to do so. You can also set a timer for 10 minutes yourself to check on the natural process state.
Do not open the pressure cooker when there is still pressure inside. You might get seriously injured because of the steam or make a huge mess in your kitchen. Do not press the float valve yourself and try to open the lid of the cooker.

What Is Natural Release On An Instant Pot
On the other end of the scale, there is a natural release for instant pots, this is the way that is most commonly used as it is slow, steady and much safer.
The natural release happens when you turn the black nozzle on the lid to venting, once it is as venting it will slowly depressurize naturally and will take anything from 10-15 minutes.
The natural way is safer, causes less mess with water spewing everywhere and easier. Once the pot has reached a certain level and has depressurized this will then trigger the metal tab to fall and click.
During the natural release you will see the screen turn to L000 this is the timer for how long the food has stopped cooking and the natural release has taken place. Different foods and recipes with require different release times so make sure to look out for that while you are releasing your instant pot
This timer will go up in minutes as time goes on, this does not indicate that the release is done, which can only be identified when the metal valve has dropped.
This will indicate it is ready to open, even once the instant pot is ready you should still take care when opening the lid for access steam.
Why Do Most Recipes Use Manual Settings Instead Of Smart Program Buttons
One size does not fit all in most scenarios. This is true of the smart one-touch buttons on the Instant Pot too. While some may come in handy down the line, you should learn more about specific recipes before you begin relying on them. Using Manual/Pressure Cook button and adjusting time and pressure level by yourself gives you more control. Having said that, you can also adjust time and pressure level once youve selected once of the Smart Program function.

What Is Natural Release
So what is natural release and when do you use natural release vs. quick release?
Natural Release means the natural way to release the pots pressure.
If the recipe calls for this option, you dont need to do much of anything. When your timer signals the cooking process has ended, just wait. The Instant Pot will gradually release pressure and steam as it cools. Natural release is good for foods that can continue cooking after the cycle is over and the heating element is off, such as a Instant Pot Ribs, chili or pulled pork.
The floating valve will start to lower as the pressure decreases letting you know when the lid is ready to open. The lid wont open until the pressure is low enough, just be sure not to force it open. You can also quick release the pressure before opening to make sure there is no pressure left built up.
Quick Release means the quick way to release the pots pressure.
If the recipe calls for this option, youll need to manually release the pressure by turning the venting knob on the Instant Pot . Quick release is appropriate for things you dont want to overcook like Instant Pot pork tenderloin or Instant Pot Mac and Cheese. It is perfect when you want to end the cooking process quickly.
When Is It Okay To Open The Lid
One of the biggest fears people have with the Instant Pot is getting burned, and thats a valid concern because the steam built up in the machine is ultra pressurized and it can burn you in an instant. The good part, though is that with a little precaution, you dont need to worry about this.
The Instant Pot has a float valve that shows when its under pressure. If the float valve is up, that means its not safe to open the pot. The vent is set to sealing and if you open the vent, that hot pressurized steam will start blowing out the top of the machine. Its that steam that can burn your arm, particularly if you open the valve with our hand in the way.
The best way to prevent getting burned is to know when its okay to open the pot.
Float valves on Instant Pots may be red or silver, depending on the model. Under pressure, it may rise above the level of the lid, or it may rise to be flush with the top of the lid. Normally, the silver float valve in my 6 quart LUX is below the lid level and pops up when it is pressed. As you use your Instant Pot, you will become more familiar with it.
As you can see in the photo above, my 6-quart DUO has a silver float valve that is at lid level when pressurized and drops down below the lid level when not under pressure. When the float valve is up, never attempt to open the lid.

How To Open A Jammed Pressure Cooker Lid
Having heard the nightmare stories about pressure cookers and their infamous reputation for explosions, you feel worried about opening a jammed pressure cooker. What if it isnt jammed and simply has contents under pressure?
How to open a jammed pressure cooker? To open a jammed pressure cooker, pour cold water over the pressure cooker. In most cases, that releases the pressure valve to open the lid. If that doesnt work, take out the pressure valve and put the pressure cooker on the stove. Heat it on high. This releases the jammed lid.

Wait For The Internal Pressure To Release
You may not have a jammed lid at all. The pressure cooker still has pressure within, which makes it impossible to open. Opening a cooker under pressure can send scalding hot water in every direction. It takes anywhere from 10 to 15 minutes for the pressure to naturally release.
As the pressure releases, the food continues to cook, which proves advantageous with selections like chili, pork, and ribs.

Your Food Wont Always Be Ready In An Instant
I think the most deceiving thing about the Instant Pot is the name. Just because you use your Instant Pot to cook a meal, doesnt mean it will be ready significantly faster than it would if you were to cook it on the stove. For example, Instant Pot steel cut oats cook in just a 4 minute cooking cycle, but you still have to wait about 8 to 10 minutes for the pot to come to pressure, and another 15 to 20 minutes for the pressure to release. That means it takes closer to 30 minutes for your oatmeal to be done.
The real advantage to cooking with your Instant Pot is that the process is almost completely hands-off, so it feels like you have more time on your hands. Instead of standing by the stove, watching to make sure nothing burns or boils over, you have your hands free to finish other tasks around your house. It makes you the ultimate multi-tasker, which is why so many people have fallen in love with it.
As an added bonus, cooking with your Instant Pot preserves more nutrients when compared to other methods of cooking! This is possibly due to the fact that it rarely reaches a temperature higher than 250ºF inside the pot, or that it cooks food faster, giving it less of an opportunity to lose nutrients.
