I dont always prep or cook in advance, but boy am I glad when I do. Its so nice to go into the fridge and find things that are easy assemble into a quick meal.

Like potatoes! A pressure cooker makes fast work of steaming a bunch of cubed potatoes, and I use them for all sorts of things all week long.

You might be thinking that its overkill to bring out the pressure cooker for a simple kitchen task like steaming vegetables, but it’s the way that works for me.

I like being able to load up the cooker, press a button, and walk away, rather than waiting around tending a pot on the stove. My Instant Pot also beeps ten times in a row when its done, and I can hear it from just about anywhere in my little apartment so I know when my food is ready.

Using the pressure cooker doesn’t always save you time with these types of kitchen prep tasks, but I think it does make them more convenient. I actually keep my Instant Pot on the counter at all times because I use it nearly every day!

How long do you bake baked potatoes? The annoying answer is until they are done! OK so it can be a well educated guess though. I usually bake a medium to large sized potato at 400 for about 40 minutes, with a flip of the potato half way through. That makes the skin nice and crispy all the way around each baked potato. Larger potatoes might take a bit longer.

You can tell when a baked potato is done by pricking it with a fork. It should go in easy and come out easy. If it doesnt do that, cook a bit longer. I like my potatoes to be super soft inside.

The short answer is yes, you can put aluminum foil in an instant pot.

So if youre wondering if you can wrap your potatoes in foil for the Instant Pot like you would if you were to put them into the oven, you can do that. However, I do not do that because it actually adds time to the cooking process when you do that. Its just a little bit harder for the moisture to reach the potatoes. Since the whole point of my cooking potatoes in the Instant Pot was to make them go faster, I like to shave off as much time as I can.

You really dont need the foil either, unless you just like how it looks or you plan to serve them in foil.

What Kind Of Potatoes Are Best For Potato Salad

I recommend using yellow or gold potatoes, such as Yukon golds, or red potatoes in this recipe. These varieties of potatoes hold their shape well and dont fall apart when you cook them. Since these potatoes have thin skin, you dont need to peel them before using.

I tested this Instant Pot potato salad recipe with Russet potatoes, and they did not work well. The potatoes fell apart after cooking and I ended up making mashed potatoes.

What To Do If Theyre Runny

If you accidentally used too much water and need to thicken your mashed potatoes, I recommend using a small amount of either potato starch or arrowroot powder rather than a wheat-based flour. These ingredients taste way better than cornstarch or wheat-based flour and keep your potatoes gluten free.

How To Make Baked Potatoes In Instant Pot

  • Prep potatoes: Give potatoes a good rinse and scrub, if necessary. Supermarket potatoes often are very well pre-washed and dont need much scrubbing. Prick them with a fork or knife about 8 times each.
  • Add cold water and trivet: Add 1 cup of cold water, so warm or hot water doesnt skew cooking time while pre-heating. And place trivet or steamer basket you want potatoes not to touch water to avoid soggy baked potatoes. Place up to 8 large potatoes and it is OK to pile up potatoes on top of each other.
  • Cook potatoes: I have tested numerous sizes of potatoes. The most important thing is to make sure potatoes are of similar size and then follow these cooking times: Small potatoes 15 minutes on High Pressure. Medium to large potatoes 20 minutes on High Pressure. For all sizes Quick or Natural Release.

  • 10 Potatoes High Pressure for 43 minutes + Natural Release for 10 minutes

  • 11 Potatoes High Pressure for 49 minutes + Natural Release for 10 minutes

*Note: If youre cooking a big batch or pot full of potatoes in Instant Pot, itll take a longer time to Get Up to Pressure, so youll need to reduce the pressure cooking time accordingly.

  • COLD Water is it necessary? Yes, it actually matters here. We dont need ice cold water, just cold tap water will do the trick. The water has to come to a boil, to create steam, which in turn creates the pressure. If its warm or hot water when you start, itll effect the overall cook time of the potatoes.
  • Do I Need to Use a Trivet? Yes, this is important to keep the potatoes out of the water, giving them an ideal texture and consistency when done.
  • Natural Release of Pressure Once the pressure cooker is done cooking, let the pressure naturally release for 10 minutes. Then simply flip the pressure valve open and release the remaining pressure.
  • Baked Potato Toppings Cut open your potatoes and fill with your favorite toppings like: butter, green onions, sour cream, cheese or chili.

  • To cook your potatoes in the Instant Pot digital pressure cooker, use the wire trivet that came with the IP. Add one cup of water to the stainless steel insert and arrange potatoes on the trivet.
  • Close lid and turn the valve to sealing position. Set timer to 14 minutes for medium potatoes. Make sure the IP is set to cook on high pressure.
  • When the time is up and the Instant Pot beeps, press cancel/off button and let it release the pressure naturally for about 4 minutes. The switch the valve to venting position and do a quick pressure release.
  • Use kitchen tongs to remove the potatoes from the pressure cooker and set on a platter. Done! Your potatoes are ready!

Its important to poke the potatoes with a fork. It allows the steam from the potatoes to escape during cooking.

Another YES here! Potatoes are dense and when baked theyre going to want to release some steam. Poking the holes in the potato will help the potatoes to release that steam without any accidental potato bombs going off.

  • Use a sturdy metal fork or knife to poke holes all over the potatoes.
  • I usually poke each potato 3 times on one side, flip and then poke 3 more holes.

*PRO TIP: Place the potato on a cutting board when poking, making sure your hand is not underneath so you dont poke yourself.

Since my goal is to always make the recipe easy without sacrificing the flavors, I am sharing my go-to easy poultry seasoning. I season the chicken thighs on the skin side first. All you need is: salt, black pepper, paprika and dried oregano. Thats it! Sprinkle and you are done. The skin side is the first one to be browned in the pot so place the thighs skin side down in a heated pot with oil and butter. Let it brown for 2 to 3 minutes. The addition of butter will give you the crispy, golden brown skin. The more browned the chicken is, the more flavor it and the gravy will have but watch it so it wont burn.

Next, flip it on the other side and let it cook for just a minute. Press cancel/off button. Remove the chicken onto a plate and add water to the IP. Scrape all the brown bits from the bottom of the IP insert. Place the trivet in the insert and arrange chicken thighs on the trivet. Now all you need to do is set the IP to cook for 12 minutes. Always check the internal temperature of the cooked meat. For chicken its at least 165 degrees F. I checked my chicken thighs and they all were around 200 degrees F.

The only equipment you’ll need when making baked potatoes in your electric pressure cooker is the trivet that comes with the Instant Pot. Alternatively, you can use your own metal steamer basket.

  • Clean the potatoes. Scrub the potatoes under cool running water and pat them dry.
  • Prick with a fork. Working your way around each potato, poke each one a few times with the tines of a fork to make small, shallow holes. This will help a little steam escape and keep the potatoes from bursting while cooking.
  • Prepare the Instant Pot. Add 1 to 1 1/2 cups of water to the inner pot of the cooker. Top with the metal trivet that comes with your Instant Pot or your own steamer basket. The water should come close to the bottom of the trivet without touching the potatoes.
  • Add the potatoes. Place one to four small cleaned and pricked potatoes on the trivet in a single layer.
  • Cook the potatoes. Lock the lid, turn the valve to sealing, and program the Instant Pot to cook at high pressure for 12 minutes. For medium potatoes and large potatoes , Manning recommends 15 minutes and 18 minutes, respectively.
