I love making crispy smashed potatoes with these Instant Pot Boiled Potatoes. Simply add the cooked potatoes to a prepared baking sheet and use a glass to press and flatten them. Drizzle with melted butter, ghee, olive oil, or avocado oil. Sprinkle with fresh chopped garlic and sea salt. Broil for 5-10 minutes, then garnish with fresh parsley. Voila! The perfect, simple side dish.

I used yellow potatoes or yukon gold potatoes for making soft boiled or steamed potatoes in the instant pot pressure cooker.

I have used the same yellow yukon gold potatoes in this easy microwave baked potato recipe too, which is another easy way to cook them perfectly in the microwave oven!

Though potatoes are too delicious and a popular food, they are also starchy and calorie rich.

Instant Pot Mashed Potatoes:

Making mashed potatoes in the instant pot starts out just a simple and easy as if you were making mashed potatoes on the stove like my reader favorite Cream Cheese Mashed Potatoes.

You’ll start out with three pounds of potatoes.; This is about 6 medium potatoes total.; Go ahead and peel them.; I haven’t tried this recipe leaving the skin on the potatoes because we prefer ours without skin.

Next, simply slice the potatoes into large rounds.; For me, this came out to about 4-5 round slices per potato.; There is no reason to spend time cutting them into cubes.; You’ll then cover them completely in water which will be about 4-5 cups depending on what size of instant pot you’re using.; The picture below shows the potato rounds in my 8 quart instant pot.

After the potatoes are covered in the water you will add ½ teaspoon of salt.; This is just enough salt to flavor the potatoes while they cook without being overwhelming.

Then, that’s it for now!; Go ahead and place the lid on your instant pot.; Set the valve to sealed and cook on manual for 8 minutes.; Keep in mind that it will take about 8-10 minutes for the pot to come to pressure.

Once the timer goes off you can quick release the pressure from your pot.; You will need to drain the potatoes and then return them to the instant pot with the power off.

You can mash these up with a standard potato masher if you wish.; Or, you can mash then whip them with a hand-held mixer;which is what I love to do!

The cooking times for this recipe vary depending on the size of your potatoes. You can use any size of potatoes as long as you adjust accordingly!

  • Small Potatoes: If your potatoes are 6-8 ounces, youll want to cook them for 12 minutes and naturally release the steam for 10 minutes.
  • Medium Potatoes: Cook 8-10 ounce Russet potatoes for 15 minutes, and release the steam for about 13 minutes.

How To Make Baked Potatoes With Crispy Skin

If you like crispy skins on your baked potatoes, you can place them under the broiler after you cook the potatoes in the Instant Pot. This step is optional and I often skip it when Im short on time. It does add lots of flavor, though!

Place the cooked potatoes on a baking sheet. Rub the baked potatoes with olive oil and sprinkle them with salt before placing them under the broiler in your oven. Watch the potatoes closely so they do not burn. Mine took about 7 minutes to crisp under the broiler.

These Instant Pot Potatoes are the easiest, most hassle-free way to boil potatoes and get them perfect every time! Im talking about waxy, bite-sized potatoes like reds, new, or fingerlings; not larger starchy potatoes, like russets. Take it up a notch by tossing them in your favorite seasonings and baking them in the oven at a high temperature for a few minutes to get them crispy on the outside. Or use them as-is for meal prepping, potato salad, soup, or chili!

This pressure cooker method is much faster than the traditional way of baking them in the oven or even boiling on the stove. And because its a controlled environment, you can have perfect potatoes ready in a matter of minutes!

Recipe Tips For Instant Pot Boiled Potatoes:

  • Make sure to pierce each medium/large potato 5-6 times with a fork before cooking. This helps the potatoes release steam while cooking. Since baby potatoes cook in a shorter amount of time, this step is not necessary.
  • Because potatoes come in all different shapes and sizes, it is hard to test for doneness. For accuracy, you can use an instant-read thermometer. Simply insert the thermometer into the thickest part of the potato. The temperature should register around 208 degrees F.
  • If they are much over that temperature, the insides will still be fluffy, but you may see more cracks on the skin.
  • If they are under, simply place them back in the Instant Pot for another 1-2 minutes to finish cooking.
  • The Instant Pot cooks using steam, so the skin will be moist, not crisp. If you prefer a crisp skin, transfer the Instant Pot potatoes to a baking sheet and place under the broiler for 2-3 minutes.
  • Instant Pot Potatoes With Green Beans And Carrots

    If you would like to add more vegetables to this, you certainly can! I usually add carrots and green beans. But as the green beans cook quicker than the potatoes, I suggest cooking in the Instant Pot for 5 minutes instead of 7 on high pressure. If you dont mind the potatoes just a bit firmer, leave them as they are. If you want them to be soft, just cut them in halves.

    Keep in mind that the green beans will be quite tender, but still delicious!

    This is a great way to add more vegetables to your meals and goes so well with everything.

    How Long Does It Take To Boil Potatoes In An Instant Pot

    The greatest advantage of boiling potatoes in the Instant Pot is that you don’t have to set multiple timers or adjust the heat while cooking – the Instant Pot simply does all the work for you. But time variances occur depending on the type and size of your potatoes.

    The length of time it takes to cook potatoes in the Instant Pot is as follows:

    • Baby Potatoes : Baby potatoes that are around 1 inch long will take about 5 mins with a Quick Release , or Natural Pressure Release .
    • Yukon Gold or Red Potatoes : I consider medium potatoes to be about 2-2.5 inches long, which will take 6 minutes with QR or NPR. If your potatoes are really thick, then add another 1 minute to the cooking time.
    • Russet : For large potatoes, around 4-5.5 inches long, pressure cook for 10 mins with QR or NPR. If the potatoes are extra large and really thick, then cook them for 12 minutes.

    Note: These times result in a cooked through potato that will hold shape if sautéing, etc. For mashed potato consistency, add another 2 minutes.

While you are cooking your potatoes you can get the potato salad fixings cut up and the sauce made so as soon as the potatoes are done you just add the chopped veggies and mix in the sauce.

    For diced russet potatoes about 1 inch in size, pressure cook for 3 minutes when using a steamer basket. If you are cooking them in the main pot, just 1 minute on pressure cook mode will be enough.

    I tested this recipe starting at 12 minutes. The potatoes were cooked but too firm for my liking. When cooked for 14 minutes, they were soft and fluffy inside. I used medium size potatoes. If using small ones, 12 minutes should be enough. If using large potatoes, add 2 more minutes of cooking time.

    My Instant Pot took about 8 minutes to come to pressure.

    How To Make Perfect Instant Pot Baked Potatoes:

    Easy Instant Pot Mashed Potatoes

    Place the trivet that came with your pressure cooker inside of the pot and pour in 1 cup of water. Next, place the potatoes in, stacking if needed.

    Cook the potatoes on manual high mode for 15 minutes and then let the instant pot pressure release naturally until the metal pin has gone down. The cook time could vary a decent bit depending on the size of the potatoes. I found that 15 minutes was perfect for average sized, medium potatoes. Smaller potatoes may need just 13 minutes while larger ones could take about 17 minutes.

    And thats IT! Super easy, right?

    This is totally optional but I like to place mine on a baking tray, spray with cooking spray and sprinkle with sea salt, and then broil for just a few minutes to crisp up the skins a little bit. Its definitely not necessary but a step that I just personally like to take.

    Pressure Cooker Mashed Potatoes: Cooking Them

    When my friend makes mashed potatoes, she cooks the potatoes right in the milk. This sounds like such a good idea-until you get the unlucky batch of potatoes and milk that scorches on the bottom.

    Since I dont want my milk to burn and ruin the potatoes, I cook the potatoes in water, not milk. In fact, if we want to get all technical, Im pressure steaming them.

    Its so easy to do.;Pour water into the pressure cooker insert. Then put the steamer rack into the bottom of the pot. Place your peeled, cubed potatoes onto the rack. Its fine if a few of the potatoes fall through the rack into the water. Theres lots of things to worry about in life. This isnt one of them.

    Lock the lid in place. Close the steam release valve. Cook on high pressure for 8 minutes. When the times up, do a quick release. Poke a potato or two with a fork. It should be nice and soft. If its hard in the center, put the lid back on the pressure cooker and cook for an additional two minutes.

    Cooking advice tells us;to select a starchy potato for mashed potatoes. This is excellent advice. Starchy potatoes whip up into light and fluffy mashed potatoes. However, how do you know which potatoes are starchy? Most of the time, they dont put it on the bag or on a sign at the grocery store. For a long time, I couldnt remember if I needed Russet or white potatoes for mashed potatoes.

    It was Russet potatoes that I was after.

    Heres what I do now: I write down the name of the;potatoes I need on my grocery list;because the success of mashed potatoes starts right at the grocery store.

    For the lightest mashed potatoes, get Russets.

    Mashed potatoes made with Russets whip up fluffy and light. They arent the most flavorful potatoes. This usually isnt a problem because its easy to add all sorts of flavorful ingredients to mashed potatoes. .

    When I want light and flavorful mashed potatoes, I use a 50/50 blend of Russets and Yukon Gold;potatoes.;Sometimes its hard to find Yukon Gold potatoes. If your grocery store doesnt carry them, grab any type of yellow potato. They all work well.
