How to make Instant Pot Coconut Yogurt (Paleo, Dairy-Free)

The cold start method simply uses ultra filtered milk and a couple tablespoons of plain yogurt . No boil yogurt can only be done with ultra filtered milk, such as Fairlife brand.

The other bonus of cold start yogurt is no straining! After the yogurt cooks for 8-10 hours, it is so thick a spoon can stand straight up in it!

  • Pour in cold ultra filtered milk, such as Fairlife into clean pot.
  • Whisk in 2 tablespoons plain yogurt starter.
  • Place lid on pressure cooker and press yogurt button. It will read 8:00 hours.
  • Let yogurt incubate for cook time.
  • When it is finished the yogurt may be eaten immediately. However, if you wish for the whey to separate, cover pot with plastic wrap and let sit for 4-8 hours in the refrigerator.
  • Spoon out whey liquid, if desired, for thicker yogurt. Store in an airtight container.
  • Although most organic milk brands are labeled ultra pasteurized, the results dont match up to Fairlife ultra filtered milk. This means Fairlife has more protein and less sugar.

    Therefore, after the incubation time, Fairlife cold start yogurt will be very thick, and theres no need to strain.

    Ultra pasteurized milk brands will result in thin and watery cold start yogurt. Although the yogurt may still be strained, you wont be left with much yogurt after the whey drains out.

    How To Make Vegan Yogurt In The Instant Pot

    There’s barely a recipe here, but the instructions are important to follow along carefully, so please do so for the best results.

    You will begin the process by soaking 2 cups of raw cashews or cashew pieces with 2 cups of filtered water for at least 30 minutes. I don’t care how high-powered your blender is, soaking the cashews makes a really smooth yogurt, so do it. Do not drain the water.

    Next put all of it in the blender and blitz into a really smooth, silky cream. Remove the cream to an oven-safe bowl that will fit inside the Instant Pot liner. I use a glass Pyrex bowl.

    Warm the yogurt in the microwave for 30 seconds. Stir, then warm for 30 more seconds. The yogurt will be slightly lukewarm, which will create a nice, cozy atmosphere for the bacteria to start growing.

    Stir in the powder from two probiotic capsules . I always use the PB8 vegetarian brand, which I buy online. It works great.

    You can also use a yogurt as your starter. Any vegan or non-vegan yogurt will do, but it has to have active live cultures so make sure you read the info on the container. A homemade probiotic yogurt is great too. Stir in the yogurt starter into the cashew cream instead of the probiotic capsule powder.

    Once the powder or starter has been stirred into the yogurt, place it inside the steel liner of the Instant Pot. Click the lid on, and press the “yogurt” function. Set the time to 12 hours for a tangier yogurt, or 10 hours for a less tangy version. I usually do 12 hours.

    Yes. If you have the Lux Instant Pot or another electric pressure cooker, it can still be done! Heres how:

  • Heat the milk on the stove or using saute function on Lux Instant Pot. Using a thermometer, heat milk until it reaches 180-185°F, whisking occasionally to distribute heat.
  • Once it has 180-185°F remove from heat or remove Instant Pot insert. Cool the milk to 110-115°F using one of the techniques described above.;
  • Whisk in 2 tablespoons plain yogurt starter.
  • Place insert with cooled 110-115°F milk back in instant pot, which should be turned off. Make sure the lid is secure and vent is closed. Wrap the WHOLE Instant Pot with a large towel to insulate and make sure milk stays at the correct temperature. Let sit for 8 hours or overnight.
  • When done, pour yogurt into a strainer lined with cheesecloth to thicken and remove some of the whey.
  • But What About The Jar Method:

    I have seen recipes floating around the internet that recommend you pour a can of coconut milk into a sanitized jar and mix it up with 2 non-dairy probiotic capsules and leave it for a day or two at room temperature.;

    Theoretically, this method could work if you keep your home very warm. BUT, Ive tried this method twice and both times it did not work. The first time, the probiotics simply did not grow and the second time, the mixture became rancid .

    I see three potential issues with this method. First, the potential for contamination, Second, probiotics need food in order to grow, and that food is sugar , and Third, the lack of temperature control yields high potential for failure .

    Im not telling you not to try this method, but based on my experience, it does not work. Regardless, I find the pressure cooker method to be easy, consistent, and goof-proof.;

    • STEP ONE: Pour cold milk in Instant Pot. You can use whole, 2%, or skim.
    • STEP TWO: Press yogurt button until boil shows on screen. After about 30 minutes it will start to be and the screen will switch to YOGT. After boiling is completely I usually double check the temperature with a thermometer. If it hasnt reached 180ºF yet, turn on SAUTE to heat and stir milk until it reaches the correct temperature.
    • STEP THREE: Now its time to bring the yogurt from 180ºF down to 110-115ºF . You can simply remove the Instant Pot insert and let it sit on the counter for about 45 minutes, stirring occasionally . Alternatively, place the insert into a bowl of ice water, stirring for about 5 minutes, or until temperature reaches 110-115ºF .
    • STEP FOUR: Add the yogurt starter
    • STEP FIVE: Whisk to combine milk with yogurt starter.
    • STEP SIX: Press yogurt button until timer reads 08:00 . Youll know when its done because it will be thick and gelatinous. If it isnt, process for another 1-3 hours.
    • STEP SEVEN: When yogurt is done fermenting pour into a strainer lined with a cheesecloth. Make sure there is a bowl underneath to catch the whey. Put in the fridge and strain for 2-3 hours for standard yogurt or 4-5 hours for greek yogurt.

    Ive been missing yogurt so much lately, and Carries post on coconut yogurt and ranch dressing got me the worst hankerin for it;that I just HAD to get in the kitchen and try to make it for myself. Since theres been some controversy over Aroy-D being totally free of guar gum or thickeners , I decided to try making it using Natural Value Coconut Cream. Ive used Natural Value coconut milk in the past for other things because it is;free from any gums or thickeners and Natural Value uses BPA-free cans.

    I also decided to use two capsules of Kirkman Pro-Bio Gold probiotics. Im pretty sure you could substitute any allergen-friendly probiotic, as long as it has about 20-22 CFUs of live cultures.

    I dont have this in the picture below, but after culturing the yogurt, I used Great Lakes Gelatin to thicken it up.The Instant Pot makes yogurt-making a breeze. You basically set it and forget it until the timer goes off. ;I personally do not boil the milk prior to culturing it. For typical yogurt-making using cows milk, that step is recommended to kill off any bacteria before culturing. In the case of using coconut milk, I consider it an unnecessary step. As my four-year-old likes to say EASY PEASY LEMON SQUEEZY! Its so much cuter when she says it

    Can I Use Any Other Non

    Soyou can trybut I dont recommend it. As I mentioned above, I tried making yogurt using a carton of coconut milk instead of canned coconut milk, and the result was super lackluster. I believe the same would result using a carton of almond milk, cashew milk, rice milk, etc.;

    Is it possible to make vegan yogurt using a different non-dairy milk? Absolutelybut if youre itching for almond milk yogurt, for instance, I would just buy it from the store. It requires a lot, a lot of love in order to get it to be remotely delicious.
