How to Make Chicken Broth in an Instant Pot

If youre using raw bones that you picked up from a butcher, it is best to roast them before using them to make bone broth. To do so, spread them on a baking sheet and roast at 400 degrees F for 30 minutes.

If you have already roasted a whole chicken, you wont need to roast the bones since the carcass has already been cooked.

How To Store Bone Broth:

Once your broth has cooled fully, you can store it as you like. I like storing in wide mouth Mason jars. Itll keep in the fridge for 3 to 5 days, or in the freezer for 3-or-so months.

You can freeze bone broth in wide mouth mason jars , just be sure they are wide mouth and give the liquid ample room to expand when freezing . And be really careful to not let them bump into each other when frozen as glass seems extra fragile when cold. You can also use something like a Souper Cube which is silicone and freezes the broth in 1 cup chunks . I also love these reusable deli containers . You have lots of freezing options!

How gorgeous is this hot bone broth?

After your broth cools over night in the fridge. The fat will rise to the top. You can remove it, keep it in there, or remove it and use it. Its beef tallow that you have rendered! Isnt that neat. I use the fat to saute things in, you can do with it as you like.

Once your broth has cooled, then you can store it in the freezer. You can freeze in wide mouth mason jars , you can use fun little contraptions like silicone molds , or you can freeze it in deli containers.

Heres an example of the kind of bones that a butcher will give you for soup bones. They are normally large bones with a lot of marrow in them.

Time To Make Instant Pot Bone Broth

Heres how to make the broth:

Dump the leeks and carrots in the pressure cooker or Instant Pot , and toss in your bones .

Then, cover with water and add vinegar.

Add the fish sauce and toss in the dried shiitake mushrooms . Then, cover and lock the lid, and program to the Instant Pot to cook under high pressure for 30-50 minutes . If Im not in a rush, I set my Instant Pot on high pressure for 2 hoursthe broth only gets better with more time.

If youre using a stovetop pressure cooker, place the pot on a burner set on high heat. Once the indicator pops up showing that the contents of the pot have reached high pressure, immediately decrease the temperature to the lowest possible setting to maintain high pressure .

Set the timer for 30 minutes .

When the broth is done cooking in the Instant Pot or stovetop pressure cooker, let the pressure release naturally .

Remove the lid, skim of the scum , and strain the broth. Taste and adjust for seasoning. I keep it on the blander side if I will be cooking with it.

I dont parboil the bones to decrease the scum because Im lazy. Plus, there really isnt that much left after you strain it.

Faster and more flavorful than other methods. Really.

How To Use Chicken Bone Broth

Having homemade chicken broth in your freezer is one of lifes simple joys.

Its super easy to make and it is a great way to use up all those fresh herbs and vegetables you didnt get around to using.

Personally, I like to save the chicken bones in the freezer until I have enough to make a batch of my chicken bone broth recipe. Just put them in a gallon sized zipper bag and freeze until youre ready for them!

You can make homemade stock on the stovetop or in the slow cooker, which takes about 12-24 hours.

Or, you can use your Instant Pot to make homemade chicken stock in almost a third of the time.

Now, I realize I use stock and broth fairly interchangeably. So, whats the difference between stock, broth and the ever trendy bone broth?

Chicken stock is made with the bones, usually leftover, from the chicken and some vegetables. Most of meat has already been used and/or removed.

Chicken broth is usually made more from the meat of the chicken and vegetables.

My understanding of bone broth is that its a hybrid between chicken broth and chicken stock. The objective of bone broth is to extract the collagen and gelatin from the bones to add nutritional benefits.

  • Freeze broth in silicone muffin cups or ice cube trays
  • Once broth blocks are solid, remove them from the tray and store the blocks in a ziplock bag or other freezer-friendly sealed container in your freezer.
  • When youre ready to use, simply remove the amount you need and reheat on the stove or in the microwave, or throw frozen blocks directly in soups for a flavor boost.

Best Way To Use Bone Broth

I primarily use my Instant Pot to make broth for soups. Sometimes I make the soup in the Instant Pot, other times I revert to the traditional stove top method for soups. Getting the broth right is the hard part. Some of my favorite soups are Beet Borscht and Italian Minestrone.

Other people simply drink the broth by itself in a mug, the original cup of soup. I’ve even heard of people making bone broth popsicles . Like any stock, it can be used as a flavor enhancer. Freeze some in an ice cube tray to use in small amounts when cooking. Use it like you would regular soup stock, but with extra benefits.

How To Use This Instant Pot Chicken Broth Recipe

You can drink chicken bone broth in the late morning and afternoon, like a savory cup of tea. Your Instant Pot will yield about 2.5 to 3 quarts of broth.

It will keep in the fridge for up to 3 days. You can also swap it in for any recipe that calls for broth or stock.

  • In a 6-qt. Instant Pot, combine chicken, carrots, celery, onion, parsley, bay leaf, rosemary, salt, and peppercorns. Then, add cold water ! SEE PIC. 1
  • Lock the lid, turn the valve to sealing, and adjust the timer manually for 45 minutes or press the soup button and set the time.
  • When the cooking time comes to an end, do a quick release! SEE PIC. 2
  • Using a fine-mesh sieve, strain the chicken bone broth through and discard solids. SEE PIC. 3 Stir in apple cider vinegar! SEE PIC. 4 Let cool to room temp and chill in the fridge. After 24 hours, you will be able to scrape the fat layer formed on top with a slotted spoon. Or, skim rendered fat from the surface with a spoon and drink while still warm.
  • NOTE: If you prefer to make this chicken bone broth in the slow cooker or crock pot, add just 1 tsp of salt instead of 1 tbsp and cook on low for 10-12 hours, or up to 18 hours. If cooking in a large pot over low heat, it has to simmer for a long time .

    Chicken Bone Broth Ingredients

    • Chicken Feet – 1 pound of chicken feet that have their skin removed. If the skin is still on, they will be a yellow color and you would need to remove that before you use them. Remove the skins by boiling them in water for about 10 minutes, allow them to cool and then peel and scrub that yellow skin off of the feet. Also, you don’t have to clip the nails off or do anything like that just make sure that the feet are clean.
    • Aromatics – carrots, celery and onions. Wash these, cut them into large pieces and just throw them in because we’re going to strain those later anyway. A red onion will give the bone broth a darker color than a white onion.
    • Seasonings – a couple of bay leaves and also a little salt and pepper. You can adjust the salt level after the bone broth is finished cooking.
    • Apple Cider Vinegar – helps to draw out more nutrients during the cooking process.

    How Long To Pressure Cook

    The minimum recommended time for pressure cooking bone broth is 2 hours, however 3 hours will yield a richer, more colored bone broth. This does not include the time for the pot to come to pressure. Add 30 minutes if you are using frozen bones.

    This is at high pressure.

    If your pot has a maximum pressure cooking time of 2 hours or less, it’s fine to do another cycle afterwards.

    Let the pot release pressure naturally before opening. The stock will be very hot, don’t attempt to strain it before it cools significantly.

    Use An Acid To Make Bone Broth

    I use apple cider vinegar in my bone broth recipe because the acid in the vinegar helps to release minerals and other nutrients from the bones. Dont worry, you cant taste the vinegar in the final product. This recipe is for beef bone broth. If you need chicken stock, see my post called How to Make Bone Broth from Chicken.

    How To Cook Chicken Broth In The Instant Pot:

    Its so easy to make chicken broth in the Instant Pot. You can even use frozen chicken! Since I make broth so often, I store 3-4 chicken drumsticks in my freezer, so I have it ready to make into broth anytime I need and dont even need to defrost it.

    Place all the ingredients for the broth into the Instant Pot inner chamber. Fill the pot with water up to the maximum capacity. Close the lid of the Instant Pot and set the valve to Sealing.

    Cook on Manual Mode on High Pressure for 35 minutes. Older Instant Pot models have the Manual button, but newer Instant Pot models just have the Pressure Level. Manual mode is the all purpose or default setting. If youre using frozen chicken, you dont have to add extra time, 35 minutes is more than enough, but if you add significantly more chicken, you can add a bit more time.

    You can manually release the pressure or allow it to naturally release. It doesnt really matter. If you do want to release the pressure yourself, keep in mind that its filled all the way to the top, so it may squirt out some broth, so release it gradually.

    Strain the broth through a fine mesh sieve lined with a cheesecloth or a paper towel. This will ensure that your broth is perfectly clear.

    How To Store Instant Pot Bone Broth:

    The best way to store bone broth is in a glass jar in the fridge or freezer. Since I drink bone broth every day, I prefer to store it in pint size jars. The broth will form a fat cap on the top of it, and it will last longer when that is intact. If you store it in a larger jar, you will break that fat cap and will need to use it within 2-3 days. With the fat cap intact, it can last up to two weeks in the fridge. It will last in the freezer for up to a year. Don’t fill the jars all the way before freezing, the broth needs room to expand as it freezes.

    Benefits Of Bone Broth

    • Bone broth is a nourishing warm beverage that you can sip or use in recipes to add more nutrients. When youre sick the healing properties of bone broth may make you feel better.
    • Bone broth is rich in gelatin, collagen, vitamins and minerals. Bone broth may have gut-healing properties and may fight inflammation and boost immunity.
    • This bone broth recipe doesnt make bone broth that gels, but it is still full of nutrition. To make bone broth that gels, you can add marrow bones and chicken feet . You can get these at many International markets. Also be sure to use bones from an organic chicken and use just enough water to cover the bones.

    How Much Water Should I Use:

    For the best results, cover the bones entirely with water so that they are fully submerged. You dont need to use much more water than that, as long as the bones are covered. I crush the bones down before adding water so that the broth turns out extra flavorful.

    You can adjust the amount of water you use based on preference and based on how much broth you would like. I find the ratio of 70 to 80 ounces of water to two chicken carcasses to be fabulous.

    Best Bones For Bone Broth

    • The best beef bones to use are knuckles, joints, feet, and marrow bones.
    • For added flavor incorporate meaty bones like oxtail, shank, and short ribs.
    • Chicken feet contain loads of gelatin and are less expensive than other gelatin-rich bones.
    • The bones of younger animals contain a lot of cartilage, as it is this cartilage that will eventually turn to bone as the animal ages. For this reason, veal bones are particularly prized for making stock.
    • If you cant get your hands on any marrow bones, 1-2 whole roasted chicken carcasses will also work. Keep in mind, however, that your broth will contain less collagen.

    What bones did I use in this recipe? For this Instant Pot Bone Broth recipe, I added a mix of collagen-rich beef bones as well as chicken feet. If youre unsure at all, ask your local butcher for the best broth bones and then request that he or she cut them in half.
